EASY VEGETABLE KABOBS



Easy Vegetable Kabobs image

Tried these out this weekend and we thought they were fantastic. Good to go along with any grilled meat.

Number Of Ingredients 7

8 small mushroom caps
2 small zucchini, cut into 8 slices
1 medium yellow bell pepper, cut into 1/2 to 3/4 inch pieces
1 small red onion, cut into 1 1/2 inch pieces
1/2 cup butter or 1/2 cup margarine, melted
1 tablespoon chopped fresh basil
1 teaspoon garlic powder

Steps:

  • Thread vegetables onto 12-inch skewers.
  • In a small bowl, mix together the butter, basil, and garlic powder; reserve 1/4 cup butter mixture and set aside.
  • Grease the grill rack very well.
  • Place skewers on grill rack.
  • Grill, covered, over medium-high heat 20-25 minutes or until vegetables are tender, turn and baste with remaining butter mixture every 5 minutes.
  • Serve with reserved butter mixture.

8 wooden or bamboo skewers
2 zucchinis, cut into 1-inch slices
2 yellow squash, cut into 1-inch slices
½ pound whole fresh mushrooms
1 red onion, cut into chunks
12 cherry tomatoes
1 fresh pineapple, cut into chunks
1 red bell pepper, cut into chunks
⅓ cup olive oil
1 ½ teaspoons dried basil
¾ teaspoon dried oregano
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Soak skewers in water for 10 to 20 minutes.
  • Preheat grill for medium heat and lightly oil the grate. Alternately thread zucchini slices, yellow squash slices, mushrooms, onion, tomatoes, pineapple, and bell pepper onto the skewers.
  • Whisk olive oil, basil, oregano, salt, and black pepper in a bowl; brush mixture over vegetables.
  • Cook skewers on preheated grill until vegetables are tender, turning and basting vegetables with olive oil mixture occasionally, 10 to 15 minutes.

Sizzling with flavor and low on fat! They can be made ahead and refrigerated or just make and grill right away. The new potatoes put a spin on your run-of-the-mill kabob.

8 whole mushrooms
8 small red potatoes, halved and then quartered
16 cherry tomatoes
1 bell pepper, quartered (any color)
1/2 red onion, quartered
1/3 cup Italian salad dressing

Steps:

  • You may also experiment with other food times such as chucks of garlic bread, Brussels sprouts, etc.
  • Place potatoes in a saucepan in just enough water to cover them.
  • Bring to a boil, reduce heat, cover and cook 5-10 minutes or just until slightly tender; drain.
  • Thread veggies onto four skewers and brush with salad dressing.
  • For enhanced flavor, allow to soak in dressing for 30 minutes or so before grilling.
  • Place kabobs upon heated gas grill or on charcoal grill about 5 inches from medium coals.
  • Cover grill and cook 8-10 minutes or until veggies are tender and slightly browned, periodically brushing with additional salad dressing and turning occasionally.
