Time 1h35m

Yield 4

Number Of Ingredients 14

500 g butternut squash
olive oil
1 clove of garlic
6 cm piece of ginger
80 g broccoli
1 teaspoon red miso paste
1 tablespoon rice wine vinegar
24 x 10cm square wonton wrappers
½ a fresh red chilli
2 spring onions
2 tablespoons sesame seeds
low-salt soy sauce
English mustard
1 lime

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Quarter the squash, deseed and toss with 1 tablespoon of oil and a pinch of sea salt and black pepper, then roast on a tray for 1 hour, or until soft and golden. Leave to cool.
  • Peel the garlic and 2cm of the ginger, then whiz in a food processor with the broccoli, miso and vinegar until fine. Pulse in the squash, then season to taste.
  • One by one, lightly wet the edges of the wonton wrappers with your finger, add 1 heaped teaspoon of filling to the middle of each, and pinch together to seal (don't stress if they tear every now and again), placing them in a large oiled nonstick frying pan as you go.
  • Put the pan over a high heat, then pour over 150ml of water and cover. Let it steam until the water has completely evaporated, then uncover and allow to fry, removing as soon as the bottoms are golden and crisp.
  • Meanwhile, peel the remaining ginger, finely grate with the chilli, and place in a small dipping bowl. Trim and finely shred the spring onions, toast the sesame seeds, then serve with soy, mustard and lime wedges.

VEGETABLE DUMPLINGS

Vegetable Dumplings image

The Polish have pierogi, the Japanese have gyoza: Many of the world's cultures have some version of dumplings, whether they're filled with meat, cheese or vegetables, and baked, steamed, fried or boiled. This recipe is adapted from the children's cookbook "Around the World: Delicious Dishes from Across the Globe," from the American Girl cookbook series, and was inspired by the dumplings you might get at your local Chinese takeout spot. They're not necessarily authentic, but they are delicious, and folding and frying them is a fun weekend project for kids of all ages. You can use round or square wonton wrappers for this project, but don't forget the sauce: It's what makes these dumplings great.

Time 1h

Yield About 24 dumplings

Number Of Ingredients 16

1/4 cup low-sodium soy sauce
1 tablespoon rice vinegar
1 teaspoon packed light brown sugar
1/2 teaspoon peeled and grated fresh ginger
1/4 teaspoon toasted sesame oil (optional)
2 scallions, thinly sliced
2 teaspoons low-sodium soy sauce
2 teaspoons hoisin sauce
1 teaspoon peeled and grated fresh ginger
6 teaspoons canola oil, plus more as needed
1 cup finely shredded green cabbage
1/2 cup finely chopped cremini mushrooms
1/3 cup peeled and shredded carrot
Pinch of salt
Cornstarch, for dusting
24 wonton wrappers

Steps:

  • Make the dipping sauce: In a small bowl, whisk the soy sauce, vinegar, brown sugar, ginger and sesame oil (if using) until the sugar dissolves. Cover and set aside.
  • Make the filling for the dumplings: In another small bowl, stir together the scallions, soy sauce, hoisin sauce and ginger. Add 2 teaspoons canola oil to a large nonstick frying pan. Turn the heat to medium and warm up the oil for 2 minutes. Carefully add the cabbage, mushrooms and carrot and sprinkle with a pinch of salt. Cook, stirring often, until the vegetables are slightly softened, about 3 minutes. Add the scallion mixture and stir to combine. Transfer the dumpling filling to a medium bowl and let cool to room temperature. Wipe out the pan or clean it if necessary.
  • Once the filling has cooled, assemble the dumplings: Put 1 cup water in a medium bowl. Sprinkle a large rimmed baking sheet with 2 to 3 tablespoons cornstarch, using your fingers to evenly distribute it.
  • Lay 1 wonton wrapper on a clean work surface. Spoon 1 teaspoon of the dumpling filling in the center of the wrapper. Dip your fingers in the water and lightly moisten the edges of the wrapper. Fold the wrapper in half (if using squares, fold the wrapper in half diagonally to form a triangle) and press the edges together to seal. Place the dumpling on the prepared baking sheet. Repeat with additional wrappers and the remaining filling until you've used up all the filling. (At this point, you can freeze some of the dumplings in a single layer on the baking sheet. Once they are frozen, transfer them to a resealable plastic bag and freeze for up to 3 months. Don't thaw them before cooking, but add a few minutes to the cooking time.)
  • Cook the dumplings: Brush the same frying pan with 2 teaspoons canola oil, set the pan over medium heat and warm up the oil for 2 minutes. Adding one dumpling at a time but working quickly, dust off excess cornstarch and add as many dumplings as will comfortably fit in a single layer in the pan (don't crowd them or they won't cook evenly). Let cook (no stirring!) until browned on the bottom, 2 to 3 minutes. Using tongs, gently flip the dumplings. Carefully pour about 1/2 cup water into the pan (it will bubble up and steam!). Cover and cook until the water is mostly absorbed, about 4 minutes.
  • Transfer the dumplings to a serving platter and cover lightly with aluminum foil to keep warm. Repeat to cook the remaining dumplings, brushing the pan with 2 teaspoons canola oil before each batch.
  • Serve dumplings warm, with the dipping sauce.

VEGETARIAN STEAMED DUMPLINGS

Vegetarian Steamed Dumplings image

Provided by Alton Brown

Categories     appetizer

Time 1h2m

Yield 35 to 40 dumplings

Number Of Ingredients 16

1/2 pound firm tofu
1/2 cup coarsely grated carrots
1/2 cup shredded Napa cabbage
2 tablespoons finely chopped red pepper
2 tablespoons finely chopped scallions
2 teaspoons finely minced fresh ginger
1 tablespoon chopped cilantro leaves
1 tablespoon soy sauce
1 tablespoon hoisin sauce
2 teaspoons sesame oil
1 egg, lightly beaten
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Bowl of water, plus additional water for steamer
35 to 40 small wonton wrappers
Non-stick vegetable spray, for the steamer

Steps:

  • Preheat the oven to 200 degrees F.
  • Cut the tofu in half horizontally and lay between layers of paper towels. Place on a plate, top with another plate, and place a weight on top (a 14-ounce can of vegetables works well). Let stand 20 minutes. After 20 minutes, cut the tofu into 1/4-inch cubes and place in a large mixing bowl. Add the carrots, cabbage, red pepper, scallions, ginger, cilantro, soy sauce, hoisin, sesame oil, egg, salt, and pepper. Lightly stir to combine.
  • To form the dumplings, remove 1 wonton wrapper from the package, covering the others with a damp cloth. Brush the edges of the wrapper lightly with water. Place 1/2 rounded teaspoon of the tofu mixture in the center of the wrapper. Shape as desired. Set on a sheet pan and cover with a damp cloth. Repeat procedure until all of the filling is gone.
  • Using a steaming apparatus of your choice, bring 1/4 to 1/2-inch of water to a simmer over medium heat. Spray the steamer's surface lightly with the non-stick vegetable spray to prevent sticking. Place as many dumplings as will fit into a steamer, without touching each other. Cover and steam for 10 to 12 minutes over medium heat. Remove the dumplings from the steamer to a heatproof platter and place in oven to keep warm. Repeat until all dumplings are cooked.

VEGETARIAN WONTON SOUP RECIPE

Vegetarian Wonton Soup Recipe image

The Vegetarian Wonton Soup Recipe is one of the easiest soups to make when you have the dumplings/wontons also known as momos ready. The wonton soup gets its full-bodied flavor from the vegetable stock. But if you don't have vegetable stock you can always spice up the soup base with quick ingredients. In this recipe, I will show you how you can make the soup base as well. Serve Vegetable Wonton Soup along with Cantonese Style Vegetarian Chowmein for a filling weeknight dinner. Other recipes that you can try are: Light And Creamy Broccoli Soup Recipe Vegetable Clear Soup with Lemon Grass Recipe Vegetarian Pumpkin and Chickpea Soup Recipe

Provided by Archana Doshi

Time 50m

Yield Makes: 2 Servings

Number Of Ingredients 8

8-10 Momos , only filled and shaped, not steamed
1 clove Garlic , finely chopped
1 inch Ginger , grated
1 or 2 Green Chillies , finely chopped
2 to 3 Spring Onion (Bulb & Greens) , finely chopped with leaves
1 teaspoon Light soy sauce
1/2 teaspoon Sesame (Gingelly) Oil
1 teaspoon Rice Vinegar

Steps:

  • To begin making the Vegetable Wonton Soup, first get the momos ready. Do not steam them, as we will be cooking it in the soup base. Keep the filled.
  • Keep the filled non-steamed momos covered with a damp muslin cloth until we make the soup broth.
  • To begin making the soup broth, heat the sesame oil in a wide saucepan. Add the onions, ginger, garlic and green chillies and saute for a few seconds.
  • Next add in 3 cups of water, salt, vinegar, soy sauce. Give the broth a simmer for about 10 minutes so all the flavours from the ginger, garlic and onions get into the soup broth. Give the soup broth a taste and check for salt and spice levels and adjust to suit your taste.
  • Once the soup broth has simmered for about 10 minutes, we will add the non-steamed wontons/momos to the broth. Gradually add all of them and increase the heat of the soup. Bring the soup to a boil and allow the wontons to cook in the broth for about 5 minutes. You will notice the wontons come floating to the top.
  • At this stage turn off the heat. Spoon the Vegetarian Wonton Soup in a bowl and serve it with Cantonese Style Vegetarian Chowmein for a filling weeknight dinner.

VEGETABLE DUMPLINGS

Vegetable Dumplings image

These vegetable dumplings are some of the best we've ever tried. The recipe is made with simple ingredients, and you'll never have to order takeout again.

Provided by Sarah

Categories     Dim Sum

Time 3h20m

Number Of Ingredients 15

3 1/2 cups all purpose flour ((450g))
1 cup tepid water ((plus 2 tablespoons))
3 tablespoons oil ((plus ¼ cup))
1 tablespoon ginger ((minced))
1 large onion ((chopped))
2 cups shiitake mushrooms ((chopped))
1 1/2 cups cabbage ((finely shredded))
1 1/2 cups carrot ((finely shredded))
1 cup garlic chives ((Chinese chives, finely chopped))
1/2 teaspoon white pepper
2 teaspoons sesame oil
3 tablespoons Shaoxing wine ((or dry sherry))
2 tablespoon soy sauce
1 teaspoon sugar
salt ((to taste))

Steps:

  • Start by making the dough for the dumpling wrappers. Put the flour in a large mixing bowl. Gradually add the water to the flour and knead into a smooth dough. This process should take about 10 minutes. Cover with a damp cloth and let the dough rest for an hour.
  • In the meantime, make the filling. In a wok or large skillet over medium high heat, add 3 tablespoons oil and add the ginger. Cook for 30 seconds, until fragrant. Add the onions and stir-fry until translucent.
  • Add the chopped mushrooms and stir-fry for another 3-5 minutes, until the mushrooms are tender and any liquid released by the mushrooms has cooked off.
  • Add the cabbage and carrots and stir-fry for another 2 minutes, until the veggies are tender and all the liquid released has been cooked off. Transfer the vegetable mixture to a large mixing bowl and allow to cool.
  • To the bowl, add the chopped chives, white pepper, sesame oil, shaoxing wine, soy sauce, and sugar. Season with salt to taste (though the soy sauce will usually add enough salt to the filling), and stir in the last 1/4 cup of oil.
  • To assemble the dumplings, cut the dough into small tablespoon-sized pieces. Roll each out into a circle, and pleat the dumplings (see this post for step-by-step photos on how to fold a dumpling). Continue assembling until you've run out of filling and/or dough.
  • To cook the dumplings, steam them or pan-fry them. To steam, put the dumplings in a steamer lined with a bamboo mat, cabbage leaf, or cheese cloth, and steam for 15-20 minutes.
  • To pan-fry, heat 2 tablespoons oil in a non-stick pan over medium high heat. Place the dumplings in the pan and allow to fry for 2 minutes. Pour a thin layer of water into the pan, cover, and reduce heat to medium-low. Allow dumplings to steam until the water has evaporated. Remove the cover, increase heat to medium-high and allow to fry for a few more minutes, until the bottoms of the dumplings are golden brown and crisp.
  • Serve with our favorite dumpling sauce!

DUMPLING NOODLE SOUP

Dumpling Noodle Soup image

Keep a package or two of frozen dumplings in your freezer for this warming weeknight meal. This recipe is loosely inspired by wonton noodle soup, but replaces homemade wontons with store-bought frozen dumplings for a quick alternative. The soup base, which comes together in just 10 minutes, is surprisingly rich and full-bodied, thanks to the trio of ginger, garlic and turmeric. Miso paste brings extra savoriness, but you could substitute soy sauce or tamari. Scale up on veggies if you like; carrots, peas, snow peas or mushrooms would be excellent additions. Any type of frozen dumpling works in this dish, making it easy to adapt for vegan, vegetarian or meat-loving diners.

Provided by Hetty McKinnon

Categories     weeknight, soups and stews, main course

Time 25m

Yield 4 servings

Number Of Ingredients 12

Kosher salt (Diamond Crystal)
6 ounces thin dried wheat, egg or rice noodles
1 tablespoon sesame oil
1 (2-inch) piece ginger, grated
2 garlic cloves, peeled and grated
1 teaspoon ground turmeric
6 cups vegetable stock
2 tablespoon white miso paste
16 ounces frozen dumplings (not thawed)
4 baby bok choy (about 12 ounces), trimmed and each cut into 4 pieces through the stem
1 small head broccoli (about 9 ounces), cut into bite-size florets
Handful of cilantro or chopped scallions, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the noodles and cook according to package instructions, until the noodles are just tender. Drain, rinse with cold water and drain well again. Divide them among four serving bowls.
  • Place the same large pot over medium heat, and add sesame oil, ginger, and garlic. Stir and cook for 30 seconds, until aromatic. Add turmeric, and stir for 15 seconds, until fragrant.
  • Pour the vegetable stock into the pot, then season with 1 teaspoon of salt. Cover and cook for 8 to 10 minutes on medium heat, to allow flavors to meld.
  • Remove the lid and add the miso paste, stirring constantly until it is dissolved. Taste, and season with more salt, if needed.
  • Increase the heat to medium-high, and carefully drop the dumplings into the broth. When they float to the top, add the baby bok choy and broccoli, and cook for about 2 minutes, just until the broccoli is crisp-tender.
  • Ladle the broth, dumplings, baby bok choy and broccoli into the four bowls over the noodles. To serve, top with cilantro or chopped scallions.

  • Place the dry tvp in a bowl. In a small bowl combine the miso paste and the soy sauce. Stir well to dissolve the miso paste then add the vegetable stock. Pour this marinade over the tvp and set aside to rehydrate, stirring from time to time - about 15 minutes.
  • Place the shredded cabbage in a separate bowl with the salt and mix well. Set aside to allow the moisture to draw out - about 10 minutes.
  • Once the tvp is rehydrated, transfer it to a strainer and use your hands to squeeze out as much liquid as possible. The dryer it is, the better it will stick together.
  • Transfer the tvp to a food processor and add the ginger, garlic and cornstarch. Process until you have fine crumbles. It won’t make a paste but processing it this way makes it stick together better. You should be able to squeeze a bit of it together into a small ball.
