Steps:
- In a skillet that has a tight fitting cover, heat olive oil over medium high.
- Add onion, peppers, garlic, ground beef, dry mustard, chili powder, salt and pepper. Sauté until ground beef is no longer pink, breaking up beef as you cook.
- Add rice and cook for two minutes letting rice absorb liquid.
- Add tomato paste and cook for one minute.
- Add canned tomatoes with juice, water and Worcestershire sauce. Stir, cover and simmer for 20 minutes covered.
- After 20 minutes, remove lid and fluff the mixture then serve. If the mixture is too wet, cook for another few minutes with lid off.
- If you are using the cheese, sprinkle on top for last few minutes of cooking time with lid on.

- To begin making the Vegetarian Potato Hash, first get all the ingredients chopped and ready and keep them by the side.
- Heat 2 tablespoons of oil in a non stick skillet on low heat. Add the onions, the vegetables, sprinkle some salt and cook, stirring occasionally, until golden. You can optionally sprinkle some water, cover the pan and cook until the potatoes are cooked through.
- Once cooked, transfer the cooked vegetables to a plate.
- In the same pan add another tablespoon of oil, add the diced potatoes and cook. Stir occasionally and cook for about 13 minutes or until they form a golden crust.
- Meanwhile in a small bowl, mix the ketchup, soy sauce, water, Italian seasoning, minced thyme and stir well.
- Add the cooked mixed vegetables to the skillet along with potatoes. stir in the ketchup mixture and cook, stirring frequently. Cook for about 5 to 7 minutes or until the flavors blend in and the hash has browned nicely. Once done the Vegetarian Potato Hash is ready to be served.
- Serve the Vegetarian Potato Hash warm with Egg White Omelette with Spinach and Muskmelon (Kharbuj) Juice for breakfast.
VEGETARIAN TEXAS HASH
In response to my friends who have chosen to be vegetarian, I took this recipe that I grew up with and modified it to be vegetarian and be full of flavour. It's slightly more work than the meat version, but I think it turned out to be worth the extra effort.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart (8 inch round) casserole dish.
- In a medium saucepan, bring 1 cup of water to a boil. Stir in instant rice, cover and remove from heat. Let sit for 5 minutes.
- In a medium skillet over high heat, brown ground beef with onions and green pepper. Stir in diced tomatoes, tomato sauce and chili powder. Simmer for 20 minutes.
- Stir cooked rice into the beef mixture. Mix in the corn, salt and pepper.
- Pour the mixture into prepared casserole dish. Cut the American cheese slices in half and place over the top.
- Bake in preheated oven for 15 to 20 minutes or until cheese is melted and bubbly.
