EASY VEGETARIAN SPINACH LASAGNA
It's easy, it's cheesy, and it's vegetarian!

- Preheat oven to 400 degrees F (200 degrees C). Spray a 1 1/2-quart casserole dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add spinach, cover, and steam until tender, 2 to 6 minutes. Drain spinach.
- Mix spinach, ricotta cheese, 1/2 cup mozzarella cheese, egg, nutmeg, basil, salt, and black pepper in a bowl until thoroughly combined.
- Spread 1/4 cup pasta sauce on the bottom of the prepared casserole dish; top with 3 lasagna noodles, 1/2 of the ricotta mixture, and 1/4 cup pasta sauce. Repeat layers of 3 more noodles, 1/2 cup ricotta mixture, and 1/4 cup pasta sauce. End with remaining 3 lasagna noodles and 1/4 cup pasta sauce. Sprinkle 1/2 cup mozzarella cheese and Parmesan cheese on top. Cover casserole with aluminum foil.
- Bake in the preheated oven for 25 minutes. Uncover casserole and continue baking until lasagna is bubbling and lightly browned, about 25 more minutes. Let lasagna stand 5 minutes before serving.

VEGETARIAN SAUSAGE, CHEESE & EGG CASSEROLE
This is a Morningstar Farms recipe. Both my husband and I love their veggie breakfast sausage and will definitely try this recipe - it sounds delicious! Mozzarella, or any other cheese of your choice, may be substituted for cheddar. Egg Substitute (2 cups) may also be substituted for whole eggs for a healthier version.

Steps:
- In large bowl, beat together eggs, cottage cheese, milk, oregano, garlic powder, salt and pepper.
- Squeeze excess moisture from spinach. Stir spinach, Cheddar cheese, patties and onions into egg mixture. Pour into 9 x 13 x 2 inch baking dish, coated with cooking spray. Bake at 325 degrees F for 35 to 40 minutes, or until set. Let stand 10 minutes before serving.
- Cut into squares to serve. Garnish with cherry tomatoes and parsley, if desired.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cook black-eye peas in a pressure cooker for 12 minutes.
- Heat oil in a large saucepan over medium high heat. Saute onion with spinach, tomatoes, salt and fennel for 15 minutes.
- Combine beans with spinach mixture in a 2 quart casserole dish.
- Bake in preheated oven for 15 minutes.

This casserole is a simple, easy to prepare, one-dish, meatless meal. Great for brunches. Be sure to drain the spinach really well. For non veggies, you can easily substitute ground breakfast sausage or crumbled bacon if you prefer.

- Thoroughly mix all ingredients.
- Pour mixture into a greased 9 inch pie plate (I have also used a square casserole dish as well).
- Bake at 350 for about 40 minutes or until center is set.
- Once out of the oven, I usually let it sit for 5 or 10 minutes.
- To serve, either cut into wedges, or squares, depending on what type of dish you used.

- Heat oven to 325ºF. Place spinach in a large colander and set it in the sink. Grease a 9×13-inch pan lightly with butter or with nonstick spray.
- In a medium skillet over medium-high heat, heat the oil till it shimmers. Cook the sausage till it browns and is nearly cooked through, about 5 minutes. Break it up with a spoon or a spatula as it cooks. Spoon the sausage over the spinach in the colander in the sink. Return the skillet to the stovetop, add a little bit more oil to the pan if necessary, and set it over medium heat. Add the onions. Season with salt. Cook the onions till they begin to caramelize, 7 to 10 minutes. Spoon the onions over the sausage and toss with a spatula or large spoon to gently wilt the spinach. Transfer the spinach-sausage mixture to the prepared pan. Spread the cheese over top.
- Break the eggs into a large bowl, season with 1 to 1.5 teaspoons salt (when I am using Morton’s kosher salt, I use 1 teaspoon; when I use Diamond Crystal, I use 1.5 teaspoons) and fresh cracked pepper to taste. Add the half and half, and beat with a whisk until the mixture is well blended. Pour the eggs into the pan. Season with more pepper to taste. (Note: You can strategically pull leaves of the spinach from the custard so they are at the very top, where they will stay during the baking process — this is purely for visual effect.) Transfer pan to the oven and bake for 25-40 minutes, rotating the pan halfway through. Start checking at 25 minutes, then every 5 minutes thereafter till it’s done — depending on your oven and the material of the pan you are using, it may take more or less time to cook.
