Vegetarian Shepherd's Pie ♡ saucy mushrooms, carrots, and peas topped with creamy mashed potatoes. Real food meets comfort food!

2 tablespoons olive oil
3 shallots, minced (or some onions and garlic)
16 ounces fresh mushrooms, sliced
6 carrots, peeled and chopped (about 2 cups)
fresh herbs to taste (I used 1 sprig of rosemary, thyme, and a bay leaf)
2 tablespoons tomato paste
2 tablespoons flour
1/2 cup red wine
1-2 cups veggie broth
1 teaspoon salt (more or less to taste)
2 cups frozen peas
6 Yukon gold potatoes (about 2 pounds)
1/2 cup full fat Greek yogurt
1/4 cup butter or olive oil
salt to taste

Steps:

  • Make the mashed potatoes: Peel the potatoes. Boil them until fork tender (you want them to mash easily). Drain, mash, and mix in yogurt and butter. Season to taste. (You can also use the Instant Pot method which is quick and easy! That's what I do.)
  • In a large oven-safe pot, heat the oil over medium heat. Add shallots and sauté until fragrant. Add mushrooms, carrots, and whole herbs (you will pull the herbs out later). Sauté until carrots are softened.
  • Add tomato paste and flour to the pot and stir. Pour in the red wine (sizzzzle) and scrape all the browned bits off the bottom of the pan. Let the wine cook out for a minute or two. Slowly add the broth, stirring it in until a gravy starts to form. Season with salt. Simmer over low heat to get it thickened even further.
  • Remove the herbs. Stir in the peas, spread the mashed potatoes on top (brush with butter to be extra awesome), and bake for 15 minutes at 350. I finished mine on the broil setting for a few minutes to get it nice and brown on top.

2 tablespoons extra-virgin olive oil
1 large onion, finely diced
2 carrots, peeled and thinly sliced
2 celery stalks, thinly sliced
10 ounces cremini mushrooms, trimmed and sliced
1 tablespoon tomato paste
1 tablespoon vegetarian Worcestershire sauce, such as Annie's Naturals
1 dried bay leaf
1 cup French green lentils, picked over
Kosher salt and freshly ground pepper
1 cup frozen peas
2 pounds Yukon Gold potatoes, scrubbed and cut into 1 1/2-inch pieces
4 cloves garlic
4 tablespoons unsalted butter
1/2 cup whole milk, warmed

Steps:

  • Heat oil in a medium pot over medium. Add onion, carrots, and celery and cook, stirring, until tender, 6 to 8 minutes. Add mushrooms and cook, stirring, until tender, 8 to 10 minutes. Add tomato paste and cook, stirring, 1 minute. Add Worcestershire, bay leaf, 4 cups water, and lentils; season with salt and pepper. Bring to a boil, then reduce to a simmer and cook until lentils are tender, 30 to 35 minutes. Stir in peas; remove from heat and season with salt and pepper.
  • Preheat oven to 400 degrees. Place potatoes and garlic in a medium saucepan; cover with 2 inches of cold water. Season generously with salt; bring to a boil, then reduce to a simmer and cook until a knife pierces potatoes easily, 10 to 12 minutes. Drain; return potatoes and garlic to pot. Add butter and milk; mash with a fork or potato masher until smooth. Season with salt and pepper.
  • Transfer lentil mixture to a 2-quart baking dish. Dollop with mashed potatoes; spread evenly to edges. Transfer to a baking sheet; bake until golden and bubbling around edges, about 15 minutes. Let stand 20 minutes; serve.

Left-over mashed potatoes make this simple, filling crock pot dish a breeze to put together in the morning (and have a tasty meal at dinner). I've included the original recipe -- which was just thrown together through experimenting with the classic ingredients -- and two variations.

3 -4 cups leftover mashed potatoes
1 1/2-2 lbs ground beef
2 garlic cloves, minced
1 large onion, chopped finely
1/2 cup celery, chopped
1 -2 carrot, shredded
1/2 cup corn (fresh, frozen or canned)
1/2 cup sweet peas (fresh, frozen or canned)
1 (6 ounce) can tomato paste
6 ounces water
1 teaspoon sea salt
1/4 teaspoon black pepper
1/4 teaspoon paprika (sprinkle on top of mashed potatoes for garnish)
chopped fresh parsley, for garnish
nonstick cooking spray

Steps:

  • Brown the meat with the onion, garlic, celery and carrots until ground beef is no longer pink; drain any fat.
  • Mix corn, sweet peas, salt, black pepper, tomato paste and water (fill up the 6 oz tomato paste can for measurement) into the meat mixture; stir well.
  • Spray the inside of the crockpot with non-stick cooking spray; pour meat mixture into the bottom of crockpot; press into the bottom of the crockpot so it is dense and even.
  • Spread leftover mashed potatoes (evenly) over the meat mixture.
  • Sprinkle the mashed potatoes with paprika (optional, for garnish).
  • Cook on low 6 hours (high 3 hours); then, remove the lid for 30 minutes to allow the potatoes to brown.
  • Sprinkle pie with fresh, chopped parsley (optional, for garnish).
  • VARIATION 1: CHEESY SHEPHERD'S PIE--Add 2 cups of shredded cheddar cheese to the pie by pressing the cheese over the meat mixture, and then layering the mashed potatoes on top of the cheese; Cook same length, same way.
  • VARIATION 2: RUNZA/CABBAGE SHEPHERD'S PIE--Substitute shredded cabbage (2 cups) for the peas and corn; cook same length, same way.

1½ pounds boneless beef chuck roast, trimmed and cut into 1-inch cubes
3 cloves garlic, minced
4 medium carrots, peeled and cut into ¼" slices
8 ounces white mushrooms, roughly chopped
1½ cups frozen corn, thawed
¾ cup beef broth
6 tablespoons tomato paste
2 teaspoons Worcestershire sauce
1 teaspoon dried oregano
3 tablespoons all-purpose flour
1½ cups frozen peas, thawed
Salt and freshly ground black pepper, to taste
For the mashed potatoes
2½ pounds russet potatoes, peeled and cut into 2-inch pieces
1 teaspoon salt
1 cup milk, warmed
6 tablespoons butter, melted
1½ cups (6 ounces) shredded cheddar cheese
Salt and freshly ground black pepper, to taste

Steps:

  • Place the beef, garlic, carrots, mushrooms and corn in the bottom of your slow cooker.
  • In a medium bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, and oregano.
  • Pour the broth mixture over the contents of the slow cooker and stir to combine.
  • Cover the slow cooker and cook on low for 7 to 9 hours, or on high for 3½ to 4½ hours, until the beef is tender.
  • To make the mashed potatoes, place the potatoes in a large saucepan and cover them with 2 inches of water. Bring the potatoes to a boil over high heat and stir in the salt. Reduce the heat and simmer until the potatoes are tender when stabbed with a fork (start checking them at 15 minutes).
  • Drain the potatoes and return them to the pot. Add the milk, butter, salt and pepper to taste. Gently mash the potatoes with a potato masher.
  • Use a large spoon to skim any fat from the surface of the beef and veggie mixture in the slow cooker.
  • In a small bowl, mix the flour and 6 tablespoons water until smooth, then slowly stir the mixture into the slow cooker.
  • Add the peas. Adjust the seasonings to taste with salt and pepper.
  • Mix the cheddar into the mashed potatoes and spread in an even layer over the top of the beef and vegetables.
  • Cover the slow cooker and cook on high for 15-30 minutes, until the gravy has thickened and the mashed potatoes are heated through.

  • Preheat oven to 425°. Place garlic on a double thickness of heavy-duty foil. Drizzle with oil. Wrap foil around garlic. Bake 15-20 minutes. Comfort food is as close as your slow cooker (or crock pot). And, this Slow Cooker Vegetarian Pot Pie is easy to make and the whole family will love it.

1 large onion
3 tablespoons olive oil
1 ½ teaspoons kosher salt
½ teaspoon freshly ground black pepper
3 medium Yukon gold potatoes
6 medium carrots
3 cups vegetable broth
1 tablespoon unsalted butter
½ cup unbleached all-purpose flour
1 ½ cups whole milk
1 teaspoon dried thyme
2 teaspoons garlic powder
¼ cup dry white wine
3/4 cup frozen peas thawed

Steps:

  • Finely chop the onion. Add chopped onions, oil, salt, and pepper to the bowl of a large slow cooker, cover, and turn of high while you prepare the rest of the veggies.
  • Chop the potatoes into ½-inch dice. Make sure they are all fairly uniform in size so they cook at about the same rate.
  • Peel and chop carrots into ¼-inch thick slices.
  • Add chopped potatoes, carrots, and broth to the slow cooker. Cover and turn to low. Cook on low for 6 to 8 hours.
  • After filling has cooked for 6-8 hours, and veggies are tender.
  • In a microwave safe bowl, melt butter in the microwave, about 30 seconds. Stir the ½ cup of flour into the butter, and mix the 1 ½ cups milk, dried thyme, garlic powder, and wine into flour. Stir with a whisk until most of the lumps have dissolved. Don't worry if you have some left, they will disappear into the pot pie.
  • Stir the milk-flour mixture into the veggies in the slow cooker, fully mixing it in.
  • If making the dumpling biscuits start making them in here.
  • Stir the thawed peas into the pot pie filling, (remove one of the biscuits from the top if necessary to get at the filling). Taste the filling for salt and pepper.
  • Serve the pot pie while hot. Garnish with additional fresh thyme if desired.

I had this at a friend's potluck dinner, and she gave me the recipe. It's definitely a comfort food on a cold winter night. The only downside is that it takes a while to prepare, but it's well worth the effort.

5 russet potatoes, peeled and cut into thirds
4 tablespoons butter, divided
1 ½ teaspoons salt
ground black pepper to taste
2 cups milk
3 cups water
½ cup kasha (toasted buckwheat groats)
⅔ cup bulgur
2 cups chopped onion
2 cloves garlic, minced
2 carrots, diced
2 cups fresh sliced mushrooms
1 ½ tablespoons all-purpose flour
1 cup whole corn kernels, blanched
3 tablespoons chopped fresh parsley

Steps:

  • Gently boil potatoes in a large pot of water for 20 minutes, or until tender. Drain, and return to the pot. Mash potatoes with 2 tablespoons butter, 3/4 teaspoon salt, and 1/2 cup milk until fairly smooth. Set aside.
  • While potatoes are cooking, bring 1 1/2 cups water and 1/2 teaspoon salt to a boil. Stir in kasha. Reduce heat, and simmer, uncovered, for 15 minutes. Add 1 1/2 cups more water, and bring to a boil. Add bulgur, cover, and remove from heat. Let stand for 10 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 10-inch pie pan or casserole dish.
  • In a large saucepan, melt the remaining 2 tablespoons of butter over medium heat. Add onions, garlic, and carrots; saute until the onions soften. Add mushrooms; cook and stir for 3 to 4 minutes. Sprinkle flour over vegetables; stir constantly for 2 minutes, or until flour starts to brown. Pour remaining 1 1/2 cups milk over the vegetables, and increase heat to high. Whisk until sauce is smooth. Reduce heat, and simmer for 5 minutes. Stir in corn, 1/4 teaspoon salt, and black pepper to taste.
  • Combine vegetable mixture and kasha in a large bowl. Transfer to prepared pan and smooth with a spatula. Spread mashed potatoes over top, leaving an uneven surface.
  • Bake in preheated oven for 30 minutes. Garnish with the chopped parsley, and serve.

1/2 cup diced onion
4 cloves minced garlic
5-6 sprigs fresh thyme (leaves removed)
1/4 cup flour
2 cups chicken broth
1/4 cup cornstarch
1/4 cup heavy cream
salt and pepper to taste
1 frozen puff pastry sheet (thawed)
2 tablespoons butter

Steps:

  • Clean and chop veggies as needed and add to slow cooker along with onion and garlic
  • Toss with flour to coat well
  • Slowly stir in broth until well blended with flour
  • Cover and cook on high for 3-4 hours or low for 6-8
  • Whisk cornstarch with 1/4 cup water until smooth then stir into the veggie mixure
  • Stir in cream, cover, and return slow cooker to high heat for about 15 minutes or until mixture thickens slightly
  • Transfer to a 9x13 baking dish and top with thawed puff pastry sheet (cut to fit if necessary)
  • Melt 2 tablespoons of butter and brush over top of pastry
  • Bake at 400 degrees for about 10 minutes or until pastry is golden and fluffy

Next time you buy sweet potatoes, buy a few extra to make this delicious low fat vegetarian supper. If you prefer a "meat" dish just omit the bulgar and salt, and saute 1 pound of ground beef and add it to crock pot adding it to the crock pot before adding the vegetables to the crock pot. This recipe requires a greased 5 quart (or larger) slow cooker When I made this I only used two parsnips instead of the 4 as in the instructions but huge sweet potatoes. We served this with sourdough bread and I topped mine with low-fat sour cream. I also think this would be a great veggie side dish (skipping the bulgur) to accompany chicken. 4 sweet potatoes, peeled and sliced
1 tablespoon butter

1 cup bulgur (see note in description if you prefer a meat-lovers shepherd pie)
2 cups boiling water
1 tablespoon olive oil
2 onions, chopped
4 -5 carrots, peeled and sliced
4 -5 parsnips, peeled and sliced
4 garlic cloves, minced
2 teaspoons rosemary (or 1 tablespoon fresh rosemary minced)
1 teaspoon salt
1/2 teaspoon pepper
8 ounces cremini mushrooms (or 8 ounce regular mushrooms, quartered)
1 tablespoon flour
1 cup vegetable broth
1/4 cup tomato paste
1 cup swiss cheese (optional)

Steps:

  • To make the topping: in a pot of boiling water, cook sweet potatoes until tender (20-30 minutes). Drain; mash potatoes, stir in butter and season with salt and pepper. Set aside.
  • To make the pie: in a bowl combine bulgur and boiling water; set aside for 20 minutes or until water is absorbed. Set aside.
  • Over medium heat, heat oil in a skillet for 30 seconds or so.
  • Add vegetables (onions - parsnips) and cook, stirring until vegetables are softened (6-10 minutes).
  • Stir in garlic, rosemary, salt and pepper, continuing to cook stirring for another minute or so.
  • Stir in mushrooms, tossing to coat.
  • Stir in flour and cook stirring for another minute or so.
  • Stir in broth and tomato paste. Bring mixture to a boil and then transfer to slow cooker.
  • Add bulgur and stir in well.
  • Spread sweet potato topping over mixture.
  • Place a tea towel folded in half over top of stoneware to absorb excess moisture. (I used a paper towel but a tea towel would probably work so much better.).
  • Cover and cook on low for 7-8 hours or on High for 3-4 hours or until vegetables are tender.
  • Sprinkle with Swiss cheese if using, and cover and cook on high for another 15 minutes or until cheese is melted.
