EASY VEGAN MEXICAN POSOLE



Easy Vegan Mexican Posole image

Comforting and flavorful, this Easy Vegan Mexican Posole soup is filled with delicious spices, nourishing veggies, hearty hominy, and protein-packed beans. Whole Food Plant Based, vegan, plant based, oil free, refined sugar free, gluten free, no highly processed ingredients.

1 cup yellow onions, fine dice
2 Tablespoons minced garlic
1 cup mild enchilada sauce *
1 - [ 4 oz. can ] mild green chilies *
1 cup vegetable broth *
1 ½ cups water (or broth)
1 teaspoon lime juice
¼ teaspoon baking soda *
1 teaspoon garlic powder
1 teaspoon onion powder
2 Tablespoons dried minced onions
¾ teaspoon cumin
½ teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon Mexican oregano *
½ teaspoon sea salt (+/-) *
1 bay leaf
1 - [ 15 oz. can ] hominy, drained and rinsed
1 - [ 15 oz. can ] pinto beans, drained and rinsed *
1 - [ 15 oz. can ] black beans, drained and rinsed *
Fresh chopped cilantro
Lime wedges
Sliced radishes
Sliced avocados
Tortilla chips

Steps:

  • Place the all the Spice/Herb Ingredients in a small bowl (except the bay leaf), mix well, set aside.
  • In a large ceramic/enamel lined Dutch oven or skillet (or similarly large stockpot/skillet) add the chopped onions, sauté over medium-high heat until the onions soften, approx. 7 to 9 minutes. Add a splash of water (or broth) if needed, if the onions start to burn.
  • Add the minced garlic, stir constantly for 1 minute. Then add the Spice/Herb mix, stir constantly to allow the spices to release their fragrance, approx. 1 minute, then add all the remaining Base Ingredients and the bay leaf, stir well to incorporate, increase the heat and bring to a boil, then immediately lower to a s Simmer for 3 minutes.
  • After 3 minutes, add the hominy, pinto beans and black beans. Simmer for 10 minutes to allow the flavors to develop.
  • Remove the bay leaf, served topped with freshly chopped cilantro, avocado slices and tortilla chips.

1 cup textured vegetable protein, chunks
3 cups water, boiling
2 onions, chopped
4 fresh garlic cloves, minced
1 tablespoon canola oil or 1 tablespoon olive oil
1 (4 ounce) can diced green chilies
2 (15 ounce) cans white hominy or 2 (15 ounce) cans yellow hominy
4 diced tomatoes (fresh or canned)
vegetarian chicken broth (I use Frontier brand powdered broth)
1 tablespoon chili powder (I use Frontier brand Fiesta Blend)
3 -5 stalks fresh cilantro, chopped
6 cups water (additional)
lime juice

Steps:

  • Add several tablespoons of powdered broth (to your taste) to boiling water.
  • Stir until dissolved.
  • Add Textured vegetable protein chunks.
  • Cover and remove from heat.
  • Let the chunks absorb the liquid while you prepare the rest of the soup.
  • In a large soup pot, saute onion until soft.
  • Add garlic and continue sauteing until fragrance is released.
  • Add chili powder to sauteed vegetables and mix well.
  • Add 6 cups of water and bring to a boil.
  • Stir in chilies, hominy and tomatoes.
  • Add Textured vegetable protein chunks and additional broth powder to taste.
  • Simmer for 10-20 minutes to blend flavors.
  • Add fresh cilantro to bowl (Some folks don't care for the taste).
  • Add a squirt of lime juice to taste.
  • Serve with corn chips or tortilla chips.

2 dried New Mexico chiles, stemmed and seeded
2 dried ancho peppers, stemmed and seeded
1 cup textured vegetable protein (textured vegetable protein 240 cal or dry cup)
1 1/2 cups boiling water
4 1/2 cups onions, chopped (about 2 large onions, yellow or white)
4 minced garlic cloves
1 1/2 cups green bell peppers, chopped (about 1 whole pepper, red is good too)
1 (29 ounce) can hominy, drained & rinsed
1 (14 1/2 ounce) can diced tomatoes
4 cups vegetable broth (or vegetarian "chicken" broth)
1 tablespoon olive oil
2 teaspoons dried oregano
1/4 teaspoon ground cumin
1/8 teaspoon ground coriander
1 teaspoon salt
1/3 cup orange juice
chopped green onion
chopped cilantro
chopped avocado
shredded iceberg lettuce
hot sauce

Steps:

  • Put chile peppers in a small bowl; cover with boiling water, and let stand while you chop other vegetables.
  • In small saucepan, bring TVP and 1 1/2 cups of broth to a boil; turn off heat and let TVP soak up liquid while prepping other veggies.
  • Saute onions 5-7 minutes, then add garlic and bell pepper. Continue to saute until onions are soft (another 5-7 minutes).
  • While onions saute, transfer chiles and soaking liquid to a blender; blend until smooth.
  • When onions are soft, add hominy, tomatoes, blended chiles, 2 1/2 cups broth, TVP, oregano, cumin, coriander, and salt.
  • Simmer over medium heat 30 minutes to let flavors blend. (Can simmer longer if needed. Add extra broth or water if you like a thinner stew.).
  • Stir in OJ and serve garnished with chopped green onions, radishes, cilantro, avocado, shredded lettuce, and/or hot sauce.

INSTANT POT® VEGETARIAN POZOLE



Instant Pot® Vegetarian Pozole image

Pozole used to take me hours to make and something I could only do on the weekends when time allowed. Red pozole is traditionally made with pork but I've never loved it, so I came up with a vegetarian version and in my Instant Pot® so that I could have it any day of the week. Don't forget the toppings! I suggest cubed avocado, sliced radish, shredded cabbage, and lime wedges.

1 tablespoon olive oil
1 large white onion, chopped
4 dried guajillo chiles, stemmed
1 tablespoon minced garlic
1 teaspoon ground cumin
1 teaspoon dried Mexican oregano
4 cups vegetable broth
2 (15.5 ounce) cans pinto beans, rinsed and drained
2 (15.5 ounce) cans golden hominy, rinsed and drained
1 (10 ounce) can red enchilada sauce (such as Las Palmas®)
½ cup chopped cilantro
2 tablespoons lime juice

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add olive oil, onion, and guajillo chiles. Cook for 3 minutes. Add garlic, cumin, and oregano; cook for 2 minutes. Cancel Saute function.
  • Pour broth, pinto beans, hominy, and enchilada sauce into the pot. Stir to combine. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 20 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Discard the guajillo chiles. Stir in cilantro and lime juice.

  • Bring a small pot of water to a boil, while we wait for that we can deseed and devein the chiles. You can use scissors to cut open the chilies to remove the hard stems, seeds and veins. Once the water has boiled, place the deseeded chiles, the onion and garlic into the pot. Allow to simmer under low heat until the chiles have rehydrated and the onion and garlic have softened.
  • Once softened, carefully place boiled ingredients into the blender, then add about half a cup of the boiling broth, or plain water. Blend until you have a smooth, thickish sauce — if needed add more of the boiling broth to help achieve the smooth consistency. Strain the sauce now or do so in the next step. Set aside.
  • In a large soup pot, and over medium heat, drizzle in 2 Tablespoons of olive oil, then add the mushrooms and sauté for about 8 minutes or until soft. Next, place a colander over the pot and carefully strain the chile sauce into it. Then add 1 teaspoon of coarse sea salt and stir, then add 1 teaspoon of Mexican oregano and stir. Next we add the hominy and mix until well combined. Lastly pour in the vegetable broth and bay leaves, stir until well combined.
  • Turn the heat to medium-low, cover the pot and simmer for about 30 to 45 minutes or until the hominy is very tender. After about 30 minutes, taste the pozole to see if it can use more salt or a little more oregano — but don’t overdo it on the oregano because if there’s too much, it can turn the pozole sour.
