2 jars (6-1/2 ounces each) marinated artichoke hearts
1 loaf (1 pound) frozen bread dough, thawed
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
2 cups shredded Monterey Jack cheese, divided
1/4 pound thinly sliced deli ham, julienned
1 cup halved cherry tomatoes
1 cup chopped ripe olives
1/4 cup crumbled feta cheese

Steps:

  • Drain artichokes, reserving marinade. Chop artichokes; set aside. On a floured surface, roll bread dough into a 15-in. circle. Transfer to a greased 14-in. pizza pan; build up edges slightly. Brush the dough lightly with reserved marinade., Combine the basil, oregano and thyme; sprinkle over marinade. Sprinkle with 1 cup Monterey Jack cheese, ham, artichokes, tomatoes, olives and feta cheese. Sprinkle with remaining Monterey Jack cheese. , Bake at 400° for 20-25 minutes or until crust and cheese are lightly browned.

This is a wonderful pizza! I got this recipe from the Alive magazine that I pick up at the health food store. Use whatever kind of crust you like. I make my own out of 1/2 whole wheat and 1/2 white flour. That gives you the goodness of whole wheat....but a lighter crust than using all whole wheat. I have added fresh spinach to the recipe...and it works wonderfully. For the best flavour, slightly blacken the grilled eggplant. My pic is not very good....but will post another when I make again. Enjoy!

1 unbaked pizza crust
1 -2 tablespoon cornmeal
1/4 cup ready-made bruschetta, flavour up to you
1 -1 1/2 cup fresh Baby Spinach
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
2 artichoke hearts, cooked, canned and thinly sliced
6 sun-dried tomatoes packed in oil, thinly sliced
1 small eggplant, thinly sliced and grilled
3 ounces mozzarella cheese, grated
1 ounce asiago cheese, grated

Steps:

  • Preheat oven to 450 degrees.
  • Shape and stretch dough into a 12" circle.
  • Sprinkle the counter with cornmeal. Place circle of dough on top of cornmeal; press down lightly; transfer to pizza pan.
  • Spread bruschetta evenly over top. Sprinkle with basil and oregano.
  • Evenly scatter spinach, artichoke hearts, sun-dried tomatoes, eggplant and both cheeses over top.
  • Bake for 12 - 15 minutes.

  • Prep the dough: Let dough come to room temperature. Lightly flour a cutting board or flat workstation, gently stretch with your hands and roll out into a 12 inch pizza round. Be patient with the dough, it will want to shrink back (this is because of the gluten) but keep going you’ll get it to stay in place soon enough. Place dough on a good size piece of parchment paper, this is the easiest way to transfer the dough.
  • Par-bake dough: Once oven is ready, place dough on baking sheet and bake on the center rack for 7 – 10 minutes.
  • Layer pizza: Carefully remove pizza dough from the oven and layer starting with the sauce, then the tomato slices, artichokes, olives, chickpeas and finally the red onion. Give a good sprinkle of red pepper flakes and mineral salt.

  • Thaw the store bought pizza dough in fridge or prepare from scratch. Roll it out and place it on a round non-stick pizza pan.
