Vegetarian Tom Yum Soup image

This vegetarian and vegan version of Tom Yum soup is easy to make. Filled with Thai ingredients, the hot and sour soup is a healthy choice for any meal.

5 to 6 cups vegetable stock (good-quality)
1 to 2 stalks lemongrass (minced)
3 whole makrut lime leaves
1 to 2 red chilies (sliced)
4 cloves garlic (minced)
1 thumb-size piece galangal (or ginger; sliced into thin matchsticks)
1 cup fresh mushrooms (such as shiitake; sliced)
2 cups baby bok choy (leaves separated or chopped if large)
1 cup cherry tomatoes
Optional: 1/2 can coconut milk (good-quality)
1 teaspoon brown sugar
3 to 4 tablespoons soy sauce
1 tablespoon freshly squeezed lime juice
1 to 2 cups soft tofu (cubed)
Garnish: 1/2 cup fresh basil (roughly chopped)
Garnish: 1/3 cup fresh cilantro leaves (roughly chopped)

Steps:

  • Gather the ingredients.
  • Pour the stock into a soup pot. Add the prepared lemongrass, plus the lime leaves, chili, garlic, and galangal or ginger. Bring to a boil and continue boiling for 5 minutes, or until the broth is very fragrant.
  • Add the mushrooms. Reduce the heat to medium and simmer for 5 to 8 minutes, or until the mushrooms are soft.
  • Add the bok choy and cherry tomatoes. Gently simmer 1 to 2 more minutes (the bok choy should remain on the crisp side).
  • Reduce the heat to low and add the coconut milk (if using), sugar, soy sauce, and lime juice. Add the soft tofu and gently stir. Taste-test and adjust as needed.
  • To serve, ladle soup into bowls and sprinkle with fresh basil and coriander. Serve and enjoy.

1 Tbsp coconut oil ((if avoiding oil, sub twice the amount in water))
1 stalk lemongrass, cut in half then halved lengthwise
1/2 medium yellow onion ((thinly sliced))
1 ½ Tbsp fresh minced ginger
2 Thai red chili peppers ((or 1 serrano pepper // minced))
1½ cups thinly sliced shiitake mushrooms
4 cloves garlic ((minced))
3 Tbsp green curry paste ((or store-bought - we like Thai Kitchen brand))
6 cups vegetable broth ((or store-bought - we like Imagine brand))
1/2 cup light coconut milk
2 medium limes ((peeled and juiced // ~ 1/4 cup lime juice as recipe is written))
1 15-oz can diced tomatoes ((drained))
2-3 Tbsp coconut aminos ((or sub tamari, but start with less as it's saltier))
1-2 Tbsp coconut sugar ((or maple syrup))
Zucchini noodles, kelp noodles, or rice noodles
Baked Peanut Tofu
Sriracha
Fresh Cilantro

Steps:

  • Heat a large pot or Dutch oven over medium heat. Once hot, add oil or water.
  • Add lemongrass (optional) and onion and sauté for 5 minutes, stirring occasionally. The onions should become translucent and soft and slightly browned.
  • Add fresh ginger, chili peppers, shiitake mushrooms, garlic, and curry paste (which is added to substitute for fresh makrut lime leaf and lemongrass) and stir. Sauté for 4-5 minutes, stirring occasionally.
  • Add vegetable broth, coconut milk, a few slices of lime peel, diced (drained) tomatoes, coconut aminos, and coconut sugar and stir to combine. Bring back to a boil, then reduce heat to a simmer, cover, and cook for 10-15 minutes.
  • Add the lime juice and stir. Simmer for a few more minutes. Then taste and adjust flavor as needed, adding more lime for acidity, coconut sugar for sweetness, coconut aminos (or salt) for saltiness / depth of flavor, or coconut milk for creaminess.
  • Optional: Remove lemongrass and lime peel before serving using a slotted spoon or fork (or just eat around it).
  • Serve as is, or over zucchini noodles, kelp noodles, or cooked rice noodles. You could also serve it over white rice or brown rice. Garnish with fresh cilantro for a pop of color (optional).
  • Store leftovers covered in the refrigerator up to 4-5 days, or in the freezer up to 1 month. Reheat on the stovetop, covered, until warmed through.

This is my favorite soup. I've tried it many ways and this is my absolute favorite. It is adapted from "Thai Vegetarian Cooking" by Vatcharin Bhumichitr. I always put too many things in it but this recipe is restrained and beautiful. Serves 4 as an appetizer or 2 as a meal.

1/2 cup coconut milk
3 cups vegetable stock
1 stalk lemongrass, chopped
1 inch fresh gingerroot or 1 inch galangal
3 kaffir lime leaves
1 cup cauliflower
2 tablespoons light soy sauce
1 teaspoon sugar (optional, i don't add it) (optional)
4 small chilies, crushed (or more)
2 tablespoons lemon juice
cilantro

Steps:

  • Heat the coconut milk with lemongrass, galangal, kaffir lime leaves, soy, chilis, sugar and stock.
  • Simmer with the lid on the pot ten minutes and strain.
  • Put strained soup base into.
  • Simmer until cauliflower is al dente.
  • Remove from heat and lemon juice.
  • Stir once, place in bowls and garnish with cilantro.
  • (optional) pour a teaspoon of sesame chili oil on top for more kick.
  • *I am lucky enough to have a kaffir tree but if you cannot find kaffir leaves use lemon leaves (meyer lemon works well) or lime zest as a last resort.
  • **Cauliflower is used in the book and works wonderfully with this soup but i like to mix it up and use mushrooms, tofu, tomatoes, water chestnuts, bell peppers, and even vermicelli noodles.

After searching a while for a vegetarian Thai soup, I thought up this one. It's like a cross between hot & sour soup, and tom ka soup!

6 cups vegetable broth (or vegetarian chicken flavoured)
10 -15 shiitake mushrooms, thinly sliced
1 (12 ounce) package tofu, sliced into small cubes
1 (4 ounce) can water chestnuts, sliced
4 tablespoons soy sauce
2 teaspoons hot sauce
2 tablespoons vinegar
3 garlic cloves, minced
3/4 cup light coconut milk
1 tablespoon lime juice
5 -6 green onions, chopped

Steps:

  • Bring broth to a boil in a large pot.
  • Add all ingredients except green onions.
  • Reduce heat to low, and simmer for at least 20 minutes.
  • Add onions and allow to cook for 3 more minutes.
