3 cups chicken broth
1-1/2 cups uncooked brown rice
2 cups chopped onions, divided
3 tablespoons soy sauce
2 tablespoons butter, melted
1/2 teaspoon dried thyme
4 cups fresh cauliflowerets
4 cups fresh broccoli florets
2 medium sweet red peppers, julienned
2 garlic cloves, minced
3 tablespoons olive oil
1 cup salted cashew halves
2 cups shredded cheddar cheese, optional

Steps:

  • In a greased 3-qt. baking dish, combine the broth, rice, 1 cup onion, soy sauce, butter and thyme. Cover and bake at 350° for 65-70 minutes or until rice is tender., Meanwhile, in a large skillet, saute the cauliflower, broccoli, peppers, garlic and remaining onion in oil until crisp-tender; spoon over rice mixture. , Cover and bake for 10 minutes. Uncover and sprinkle with cashews and cheese if desired. Bake 5-7 minutes longer or until cheese is melted.

1-1/2 cups uncooked brown rice
1 cup dry split peas
1 cup chopped fresh mushrooms
2 celery ribs, chopped
2 medium carrots, grated
1 medium onion, chopped
1 tablespoon canola oil
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 to 1 teaspoon salt
1/2 to 1 teaspoon dried thyme
1/2 to 1 teaspoon dried oregano
1/2 to 1 teaspoon pepper
1 cup shredded cheddar cheese

Steps:

  • In a large saucepan, bring water, rice and peas to a boil. Reduce heat; cover and simmer for 20-25 minutes or until tender. Drain and set aside., In a large skillet, saute the mushrooms, celery, carrots and onion in oil until vegetables are tender. Add garlic; cook 1 minute longer. 3 cups of dry/UNCOOKED instant brown rice, cooked according to package instructions
2 (10.5 oz each) containers of organic cream of mushroom soup
1 (10 oz) bag of frozen broccoli
1 (10 oz) bag of frozen peas
3 1/2 cups peeled and diced carrots
8 large cloves of garlic, minced
2 medium onions, diced
3/4 cup fresh parsley, chopped
2 1/2 cups parmesan cheese, freshly grated
2 cups sharp cheddar cheese, freshly grated
2 tablespoons olive oil
1 teaspoon sea salt
1 teaspoon cracked black pepper

Steps:

  • Measure 3 cups of dry instant rice and cook according to package instructions, set aside
  • Combine onion, garlic, carrots, olive oil, salt, and pepper in a large skillet
  • Sautee for 10 - 15 minutes on medium high heat, until carrots start to soften and onions become translucent
  • Add peas, broccoli, mushroom soup, 1 1/2 cups parmesan cheese, and 1 cup of sharp cheddar cheese to the skillet
  • Stir on medium heat until heated through, about 10 - 12 minutes
  • Add cooked rice and parsley to skillet and stir to combine
  • Transfer mixture to a 13 x 9 casserole dish
  • Top with remaining 1 cup of parmesan cheese and 1 cup of sharp cheddar cheese

Healthy Vegetarian Mexican Rice and Bean Casserole is easy to make and filled with cheesy goodness, along with brown rice and lots of veggies. This is an easy gluten free & vegetarian casserole for a weeknight dinner or your next party!

1 tablespoon Olive Oil
1.5 cup Red Onion (chopped )
1.5 cup Red Bell Peppers (chopped )
1.5 cup Green Bell Peppers (chopped )
2 Jalapeños (1 sliced + 1 diced, divided (adjust to taste))
2 cups Corn kernels (frozen)
1 can Black Beans (14oz, drained and rinsed)
1 can Diced Tomatoes (14oz, I used fire-roasted)
2 tablespoon Lime juice
4 cups Cooked Brown Rice
1 3/4 cup Cheddar Cheese (shredded)
1/4 cup Mexican blend cheese (shredded, for topping)
1/4 cup Cilantro (chopped )
1 teaspoon Garlic powder
2 teaspoon Ground Cumin (Jeera powder)
1 teaspoon Oregano
1 teaspoon Paprika
1/2 teaspoon Cayenne (adjust to taste )
1 teaspoon Salt (adjust to taste )

Steps:

  • Heat a large skillet with oil. Add onions, peppers and diced jalapeño. Sauté for about 4 minutes mins or until they start to brown sightly. Add the corn and saute for couple more minutes. Add the black beans, fire-roasted tomatoes, lime juice and then the spices. Stir to combine. Remove from heat. Taste and adjust salt.
  • Add the cooked brown rice and mix well. Then add 1 cup shredded cheddar cheese and mix it.
  • Preheat oven to 400º F. Grease the baking dish.
  • Transfer the rice and veggies mixture in the baking dish. Sprinkle the remaining cheddar cheese and Mexican blend cheese on the top.
  • Bake in the center of the oven for 12-15 minutes, until the cheese is bubbling.
  • (optional) Leave a few minutes under broil if desired until lightly golden.
  • Garnish with cilantro and sliced jalapeños. Cut into squares and serve!

1 teaspoon vegan margarine
4 cups cooked brown rice ((equals 2 cups uncooked))
3 cups broccoli florets
1 onion, finely chopped
1 cup vegan shredded cheese
fresh parsley, chopped
1 cup raw cashews
1 1/2 cups unsweetened almond or soy milk
1/2 cup nutritional yeast
1 tablespoon onion powder
2 small cloves of garlic
1 teaspoon salt
1 tablespoon corn starch
1 teaspoon white or yellow miso paste
1 teaspoon Dijon mustard

Steps:

  • Preheat your oven to 350 °F. Wash the broccoli and cut it into florets. Cook the broccoli either on the stovetop or in an Instant Pot (choose "0 minutes" on manual).
  • Grease a large baking dish with vegan margarine.
  • Heat some oil in a pan and sauté the chopped onion until it's translucent. This should take about 3 minutes.
  • Place all of the ingredients for the sauce into a high speed blender and process until smooth.
  • In a large bowl, combine the cooked rice, the cooked broccoli, the sautéed onion, and the sauce. Stir carefully.
  • Transfer to the prepared baking dish, add the shredded vegan cheese and bake for 15 minutes. Sprinkle with freshly chopped parsley and serve immediately. Enjoy!
