- In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels. Drain, reserving 2 tablespoons drippings. Saute onion in drippings until tender. , In a very large bowl, combine the beans, pineapple, bacon and onion. Combine brown sugar and ketchup; stir into the bean mixture., Transfer to two greased 3-qt. or 13-in. x 9-in. baking dishes. Cover and bake at 350° for 20 minutes. Uncover; bake 25-35 minutes longer or until bubbly and beans reach desired thickness.

Steps:
- Place navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight.
- Drain navy beans and put into a pot with 5 cups water.
- Bring water to a boil; reduce heat and simmer until beans are tender, about 1 hour.
- Preheat oven to 250 degrees F (120 degrees C).
- Combine beans, onion, brown sugar, molasses, vinegar, mustard, garlic, nutmeg, and cinnamon in a 2-quart casserole dish with a lid; season with pepper. Place lid on dish.
- Bake in the preheated oven, 5 to 7 hours, stirring halfway through and adding water if mixture is too dry. Remove lid and bake until mixture has reduced to desired thickness, about 1 hour more.

VEGETARIAN BAKED BEANS WITH VEGETABLES
This is a great alternative to 'traditional' baked beans, in that it has a heavy load of vegetables and no meat. Of course, you can use real bacon, if you're not vegetarian. Mashing up some of the beans and returning them to the mix will help keep the beans from being too watery when finished. Serve with sour cream, if you like.

- Melt butter in a large saucepan over medium-high heat. Add onion, carrots, bell pepper, and garlic. Sprinkle lightly with salt and saute until onion is soft and translucent, about 5 minutes. Add tomatoes, barbeque sauce, molasses, bacon bits, rum, dill, and mustard and stir to combine. Reduce heat and simmer sauce 20 to 30 minutes.
- Preheat the oven to 325 degrees F (165 degrees C).
- Pour 1/4 cup beans into a bowl and mash. Pour remaining beans into a casserole dish. Mix mashed beans into the saucepan with the sauce and pour mixture over beans in the casserole dish. Cover with a lid or aluminum foil.
- Bake in the preheated oven for 2 1/2 hours. Uncover and bake 30 minutes more. Let cool for 20 minutes before serving.

BACON PINEAPPLE BAKED BEANS

- Preheat the oven to 350°F. In a large oven-safe skillet or dutch oven cook the bacon over medium-high heat on the cooktop until it just starts to crisp. Add the onions and cook until they are translucent - about 5 minutes.
- Reduce the heat to low and add the pork and beans, ketchup, dark brown sugar, drained pineapple, mustard, apple cider vinegar, salt, and pepper and mix well.
- Once combined, place uncovered in the oven and bake for 1 hour. Serve warm.

- Preheat oven to 350 degrees F. Spray the bottom of a 7" x 11" casserole dish or baking pan.
- In a large mixing bowl, combine the ketchup, brown sugar, mustard, and Worcestershire sauce. If you're adding liquid smoke, do so now.
- Stir the pineapple chunks and beans into the mixture.
- Pour the mixture into the casserole dish and bake for 1-1/2 hours.
- Serve hot.

- Rinse the beans and pick over them. Put them in the Instant Pot or other pressure cooker along with 6 cups water. Set cooker to cook at high pressure for 1 minute.
