1 (8 ounce) can artichoke hearts, drained and finely chopped
1 cup seasoned bread crumbs
2 eggs
2 tablespoons olive oil
2 tablespoons grated parmesan cheese
1 tablespoon lemon juice
2 garlic cloves, minced
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 350. In a medium bowl combine artichoke, bread crumbs, eggs, olive oil, 2 tablespoons Parmesan, lemon juice and garlic.
  • Form mixture into 24 small balls, 1 inch in diameter, and roll in remaining Parmesan cheese. Set on a lightly greased baking sheet.
  • Bake artichoke balls until eggs are set throughout and balls are heated through, about 10 minutes.

I love keeping frozen vegetables handy in the refrigerator. We were invited to a friend's house and came up with these to bring. I had all of the ingredients. Enjoy! I made these, packed them up, and they vanished. I totally forgot to take a photo of the finished balls. Next time!

1 (10 ounce) package frozen spinach, thawed
1 tablespoon olive oil
1 (10 ounce) package frozen artichoke hearts, thawed
1 teaspoon kosher salt
½ teaspoon ground black pepper
1 small shallot, chopped
1 clove garlic, chopped
2 large eggs
½ cup tapioca flour
¼ cup almond meal
2 teaspoons Italian seasoning
¼ teaspoon red pepper flakes

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Wrap thawed spinach in a paper towel and squeeze out water.
  • Heat olive oil in a skillet over medium heat. Add spinach and artichoke hearts; season with kosher salt and black pepper. Cook and stir until heated through, 3 to 4 minutes. Add shallot and garlic; cook until softened, about 5 minutes more. Remove from heat and allow to cool slightly, about 5 minutes.
  • Transfer spinach mixture to a food processor; pulse until broken down into small pieces. Add eggs and pulse 3 to 4 more times. Transfer mixture to a bowl.
  • Mix tapioca flour, almond meal, Italian seasoning, and red pepper flakes into the spinach mixture until well combined. Use an ice cream scoop to portion the mixture onto the prepared baking sheet.
  • Bake in the preheated oven until golden brown, 12 to 15 minutes.

3 tablespoons extra-virgin olive oil
3 shallots, minced
1 clove garlic, minced
1/2 teaspoon kosher salt
1 cup Arborio rice
1 cup dry white wine, such as pinot grigio
1 tablespoon soy sauce
1 cup unsalted vegetable broth
3/4 cup chopped (1/4-inch pieces) marinated artichoke hearts
1/4 cup fresh basil leaves, chopped
1 cup extra-virgin olive oil
1 cup vegetable oil
1/2 cup all-purpose flour
1/2 cup unsweetened almond milk
1 cup breadcrumbs
1 jar marinara sauce, warmed, for dipping, optional

Steps:

  • For the rice: Heat a 3 1/2-quart Dutch oven over medium-high heat. Add the olive oil, shallots, garlic and salt. Cook until soft and fragrant, stirring often, about 2 minutes. Add the rice and toast for 2 minutes, stirring constantly. Add the white wine and soy sauce and cook, stirring often, until the wine is almost entirely absorbed. Combine the vegetable broth and 1 cup water in a measuring cup. Add 1/2 cup of the broth mixture to the pot and cook, stirring, until almost completely absorbed, about 4 minutes. Continue adding the broth mixture, 1/2 cup at a time, stirring constantly and allowing each addition to be absorbed before adding the next. Cook until the rice is tender but not mushy, about 20 minutes in all. Stir in the artichokes. Remove the pot from the heat and let cool for 15 minutes. Stir in the basil and then spread the rice out on a baking sheet to cool completely, about 20 minutes.
  • For frying: In a heavy-bottomed saucepan or Dutch oven over medium heat, heat the olive oil and vegetable oil until they register 350 degrees F on a deep-fry thermometer.
  • Set up a breading station with the flour, almond milk and breadcrumbs in separate, shallow containers. Using a small ice cream scoop, scoop about 2 tablespoons of the cooled rice mixture into your hands and gently roll into a ball. Dredge the rice ball in the flour, then in the almond milk and finally in the breadcrumbs, packing them firmly. Repeat with the remaining rice.
  • In batches of 4 or 5, fry the rice balls until golden brown on the outside and warmed through, about 3 minutes. Drain on paper towels.
  • Serve with marinara for dipping, if desired.

2 can(s) artichoke hearts (in water)
1 + 1/4 c italian bread crumbs
4 oz parmesan cheese, grated
4 oz romano cheese, grated
4 clove garlic, minced
+/- 2 oz olive oil
4 hard boiled eggs (optional)
garlic powder to taste
onion powder to taste

Steps:

  • 1. Squeeze liquid from artichoke hearts.
  • 2. In food processor chop artichoke hearts, garlic, 1 cup bread crumbs, parmesan cheese, olive oil, optional boiled eggs, garlic powder and onion powder.
  • 3. Put mixture in refrigerator to chill.
  • 4. Combine Romano & remaining breadcrumbs.
  • 5. Roll to completely coat in Romano & breadcrumbs.
  • 6. When mixture is cold, roll into small balls. If you have a melon baller this makes the perfect size.
  • 7. These can be served cold or if you prefer them hot then bake them in 350* F oven until balls start to brown.
  • 8. *Note: Balls can be frozen before rolling in bread crumb mixture.

A colleague would make these to bring to work more than 20 years ago; I loved them then and still do now. This is a great appetizer for a garlic and artichoke lover.

1 can progresso artichoke heart
1 1/2 cups Italian breadcrumbs, divided
2 eggs, well beaten
6 tablespoons grated parmesan cheese, divided
2 tablespoons olive oil
4 -5 cloves garlic, minced

Steps:

  • Drain artichoke hearts saving juice for later.
  • Mash hearts in a small bows using a fork or your fingers.
  • Add 1 c of bread crumbs, 2Tbsp Parmesan cheese, and 2 Tbsp of the artichoke juice to the mashed hearts.
  • Mix well.
  • Add beaten eggs to mixture.
  • Mixture should have the consistency of a stuffing.
  • If mixture is too dry, add more artichoke juice to the desired consistency.
  • Set aside.
  • In large skillet, heat olive oil over medium heat.
  • Add minced garlic and saute for 1 or 2 minutes.
  • Add artichoke mixture to the skillet and cook with garlic for 10 minutes, stirring occasionally.
  • After cooking, remove from skillet to another bowl, cover, and refrigerate.
  • Chill for 30 minutes.
  • While mixture is chilling, prepare 4 tablespoons of Parmesan cheese and 1/2 c of bread crumbs in a small bowl.
  • After mixture is chilled and firm, remove from refrigerator and form into small balls.
  • Roll balls in the cheese/bread crumb mixture.
  • Refrigerate balls until ready to serve.
  • (I personally like them at room temperature for at least 5 minutes before eating.).

1/2 teaspoon kosher salt
1 cup Arborio rice
1 cup dry white wine (such as pinot grigio)
1 tablespoon soy sauce
1 cup unsalted vegetable broth
1 cup water
3/4 cup chopped marinated artichoke hearts (cut into 1/4 inch pieces)
1/4 cup basil leaves (chopped)
1 jar marinara (optional, for dipping)
1 cup extra virgin olive oil
1 cup vegetable oil
½ cup flour
½ cup unsweetened almond milk
1 cup bread crumbs

Steps:

  • As seen on: Giada in Italy, Episode 2. Italian Cocktail Party.
  • Heat a 3 1/2 quart Dutch oven over medium high heat. Add the olive oil, shallots, garlic and salt. Cook for about 2 minutes, stirring often until soft and fragrant. Add the rice and toast, stirring constantly to coat in the oil, for about 2 additional minutes. Add the white wine and soy sauce and cook, stirring often, until the wine is almost entirely absorbed. Combine the vegetable broth and water in a measuring cup. Add 3/4 cup of the broth mixture and stir until almost completely absorbed, about 4 minutes. Continue adding the broth, 1/2 cup at a time, stirring constantly and allowing each addition of stock to absorb before adding the next. Cook until the rice is tender but not mushy, about 20 minutes. Stir in the artichokes. Remove the pot from the heat and allow the mixture to cool for 15 minutes. Stir in the basil and spread on a sheet tray to cool completely. Another 20 minutes.
  • Heat the oils in a heavy bottomed sauce pan or Dutch oven over medium heat until a deep fry thermometer reaches 350 degrees F.

Using a small ice cream scoop, scoop about 2 tablespoons of the cooled rice mixture into your hands and gently roll into a ball.   • Remove artichokes from the oil and allow the excess oil to drain on a piece of kitchen towel. Chop into small chunks once drained of excess oil.
  • Cook the pasta just short of al dente (I used spaghettini, which takes 6 minutes, I cooked it for 5) in a small amount of water (to make the water starchy). Save 120 ml / ½ cup of pasta cooking water just before you drain your pasta.
  • Heat up the olive oil in a large frying pan. Once the oil is warm, add finely chopped garlic - it should sizzle gently once it hits the pan. Sauté garlic on a low heat, stirring often. Do not let the garlic brown as it will make your pasta taste bitter, you only want it to soften and flavour the oil.
  • Once the garlic is softened and fragrant, add in plant milk, nutritional yeast, lemon zest and juice, and a pinch of salt - stirring everything together so that you get a light emulsion that will coat your pasta. Allow it to bubble for a few seconds, adding a touch of pasta cooking water if the sauce is too thick. I used up just over 60 ml / ¼ cup of pasta cooking water in total, but use your judgement - exactly how much is needed depends on your evaporation rate.
