This super-delicious and incredibly easy recipe has become one of my absolute favorites. I pass it on to everyone I know, and they all rave about it too!

2 cups coarsely chopped zucchini
1 ½ cups coarsely chopped onions
1 red bell pepper, coarsely chopped
1 pound extra lean ground turkey
½ cup uncooked couscous
1 egg
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
½ cup barbecue sauce, or as needed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray 20 muffin cups with cooking spray.
  • Place zucchini, onions, and red bell pepper into a food processor, and pulse several times until finely chopped but not liquefied. Place the vegetables into a bowl, and mix in ground turkey, couscous, egg, Worcestershire sauce, and Dijon mustard until thoroughly combined. Fill each prepared muffin cup about 3/4 full. Top each cup with about 1 teaspoon of barbecue sauce.
  • Bake in the preheated oven until juices run clear, about 25 minutes. Internal temperature of a muffin measured by an instant-read meat thermometer should be at least 160 degrees F (70 degrees C). Let stand 5 minutes before serving.

1 cup chopped onion
1 cup shredded carrots
1/2 cup chopped celery
1 tablespoon canola oil
1-1/2 cups crushed saltines (about 45 crackers)
3/4 cup ketchup, divided
1/4 cup minced fresh parsley
1 egg, lightly beaten
4 teaspoons ground mustard, divided
2 teaspoons salt
2 teaspoons minced garlic
1 teaspoon pepper
2-1/2 pounds lean ground turkey
2 tablespoons brown sugar

Steps:

  • In a large skillet, saute the onion, carrots and celery in oil until tender. In a large bowl, combine the onion mixture, cracker crumbs, 1/2 cup ketchup, parsley, egg, 2 teaspoons mustard, salt, garlic and pepper. Crumble turkey over mixture and mix well. , Shape into a loaf. Place in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 1 hour. , In a small bowl, combine the brown sugar and remaining ketchup and mustard until smooth. Spoon over meat loaf. Bake 10-20 minutes longer or until meat is no longer pink and a thermometer reads 160°; drain. Let stand for 10 minutes before slicing.

The oatmeal and chili sauce were inspired by another recipe I found on RecipeZaar, but I added an assortment of vegetables to add color, texture, flavor, and nutrition. I like to use the Uncle Sam oatmeal because it contains flax seeds and wheat flakes along with the oats, but you can use any rolled oats or instant plain oatmeal you have on hand.

1 lb ground turkey breast
1 (1 1/4 ounce) packet instant plain oatmeal
1/4 cup skim milk
1 teaspoon olive oil
1 small onion, chopped
2 garlic cloves, minced
1/2 cup shredded zucchini, excess water squeezed out
1/2 cup shredded carrot
3 button mushrooms, chopped
1/2 cup fresh spinach, chopped, excess water squeezed out
1 tablespoon Worcestershire sauce
1/4 cup chili sauce
salt and pepper

Steps:

  • Preheat oven to 350°.
  • Empty packet of oatmeal into a small bowl and add milk. Set aside.
  • Heat olive oil in a small sauté pan. Add onion and garlic and sauté until soft.
  • Add rest of the vegetables and cook until soft and some of the liquid has evaporated.
  • In a mixing bowl, mix ground turkey, oatmeal mixture, chili sauce, Worcestershire sauce and sauteed veggies until well combined. Form into a loaf shape and place in a greased loaf pan or on a greased cookie sheet.
  • Bake at 350°F until internal temperature reaches 140°F Raise oven temperature to 450°F and bake until internal temperature reaches 180°, and the outside of the loaf forms a nice crust.

Deliciously Moist Healthy Turkey Meatloaf has lots of hidden sauteed mixed vegetables and "Meaty" Mushrooms. A family favorite.

1 medium onion, finely diced
2 carrots, peeled and finely diced
6 cloves garlic, crushed
1/4 cup fresh thyme
1 cup shiitake mushrooms, finely diced
2 1/2 teaspoons sea salt
2 tablespoons extra virgin olive oil
1/2 cup gluten-free oats
1/2 cup unsweetened store-bought or homemade hemp milk (see notes below for homemade hemp milk)
2 tablespoons organic Worcestershire
2 teaspoons Dijon mustard
1/2 cup organic ketchup
1 organic egg, such as Vital Farms
1 pound organic ground turkey
DRESSING: Combine 1 cup organic ketchup and 4 tablespoons worcestershire

Steps:

  • Preheat the oven to 375 degrees. Line a large baking pan with parchment paper.
  • Combine the onions, carrots, garlic and thyme in the bowl of a food processor. Process until minced but be sure to stop before the mixture turns into a paste. Transfer onion-carrot mixture to a bowl.
  • Add the mushrooms to the the food processor. Process until just minced. Set mushrooms aside.
  • Heat the oil in a large skillet over medium heat. Add the onion-carrot mixture and cook for about 6 minutes, or until onions begin to soften. Add the minced mushrooms to the skillet, season with 1/2 teaspoon of salt and cook for about 5 or 6 minutes, or until both the onions and shiitakes are soft. Set the sauteed vegetable mixture aside in a large mixing bowl to cool.
  • In a small bowl, combine the oats, hemp milk, Worcestershire, Dijon mustard, 2 tablespoons of the ketchup, egg and remaining 2 teaspoons of salt and whisk.
  • Remove turkey meatloaf from the oven and let it rest for at least 15 minutes before serving.

This impressive-looking turkey meatloaf is flavored with herbs and a layer of juicy tomatoes and zucchini. As well as the presentation, the baking method caught my attention. It's baked in a water bath to retain the moisture of the ground turkey. The recipe calls for all fresh herbs but dried could certainly be substitute at a ratio of 1 tablespoon fresh = 1 teaspoon dried.

Steps:

  • Preheat oven to 375ºF and line a non-stick loaf pan with parchment paper.
  • Place the onion, garlic, turkey and herbs in a bowl. Mix together with your hands then add the egg white to bind.
  • Press 1/2 of mixture into preapred pan. Arrange sliced zucchini and tomatoes over meat. Top with the rest of the turkey and press down firmly.
  • Cover with kitchen foil and place in a roasting pan. Pour in enough hot water to come halfway up the sides of the loaf pan.
  • Bake for 1-1 1/4 hours, removing foil during the last 20 minutes. Test by inserting a skewer in the center of loaf; juices should run clear. The loaf will also shrink away from the sides when done.
  • Remove from pan and transfer to a warm platter. Serve with warmed tomato sauce if desired.

1 onion, peeled and finely diced
2 garlic cloves, finely minced
2 celery stalks, finely diced
1 red bell pepper, finely diced
1 teaspoon salt
¼ teaspoon black pepper
¼ tsp dried thyme
1 lb ground turkey
1 egg
3 Tbsp bread crumbs or passover crumbs
¼ cup barbeque sauce

Steps:

  • Preheat oven to 400 degrees. Grease a 9x13 pan or a loaf pan and set aside.
  • In a large pan over medium-low heat, saute the onions, garlic, celery, red pepper, salt, pepper and thyme in oil until soft and translucent, about 10-20 minutes. Stir occasionally so the mixture doesn't burn. Set aside to cool.
  • Combine the vegetable mixture with the ground turkey, egg and crumbs. Mix to combine.
  • Place the mixture in the prepared pan and pour the barbecue sauce over it.
  • Bake at 400 degrees for 30-40 minutes for a flatter pan like a 9x13, and about an hour for a loaf pan.
  • Remove from oven and serve immediately.

  • Preheat the oven to 425 degrees. Heat the oil in a large saute pan over high heat. Add the zucchini, bell peppers, garlic paste and 1/4 teaspoon red pepper flakes. Season with salt and pepper and cook until the vegetables are almost soft, about 5 minutes. Set aside to cool.
  • Whisk the egg and fresh herbs in a large bowl. Add the turkey, panko, grated cheese, 1/2 cup ketchup, 2 tablespoons balsamic vinegar and the cooled vegetables; mix until just combined.

  • Heat oil in a small pan and cook the onion until light golden brown. Pour in the tomatoes and cook for 2 minutes until heated through

  • Wash and peel the vegetable and remove the kapia pepper seeds. Cut the onion into not too thin slices and do the same with the carrots that we cut coarsely and the peppers into cubes. Deboned the meat, then cut it into pieces, not very large, so that it can be ground more easily.
  • Start with the onion that we put in hot oil to fry, fry for a minute, stirring, then add the vegetables. Add two tablespoons of lard, season with salt, freshly ground pepper and sweet paprika powder. Mix and let everything cook for about five minutes, then put the meat. Put two tablespoons of sweet pepper paste, add a little water and let it boil until the vegetables are done about twenty minutes.
  • Transfer everything to a larger bowl where we can grind everything with a blender. Add about 50 g of butter and two whole eggs, to bind better. Add the Dijon mustard, the breadcrumbs and a teaspoon of marjoram. Taste and if you want you can add more salt and pepper. Mix well until you get a uniform paste that we are going to put in the oven.
  • Prepare a baking form for the oven which I previously greased well with butter. Pour all our composition in this form, and smooth it with a spatula, then put four cubes of butter on top. Put the bowl in the hot oven at 180 degrees and let it bake for about 30 minutes until it gets a nice golden colour. Let it cool completely.
