Peach Salad Recipe With Walnut Dressing image

This beautiful peach salad recipe puts those juicy ripe peaches of summer in the spotlight and is easy to prep ahead. Just add the deliciously rich, nutty walnut dressing before serving.

Number Of Ingredients 13

2 -3 ripe peaches, sliced or cut in chunks (no need to remove skin)
1 cup shredded celeriac ((about 1/2 celeriac peeled and shredded with box grater))
4 radishes, sliced
6 cups lettuce greens Note 1
Garnish and other add-in ideas: chopped/sliced avocado, feta or goat cheese, pomegranate seeds, 1/2 cup cooked quinoa, herbs, etc.
3/4 cup -1 cup walnuts Note 2
1 teaspoon lemon zest (from 1 small lemon or 1/2 large))
1 tablespoon white balsamic vinegar Note 3
1 clove garlic, minced
1 teaspoon maple syrup
salt and pepper to taste ((I used about 1/2 tsp kosher salt and 1/4 tsp pepper))
Optional: 1-2 tsp of chopped thyme or chives
1/2 cup olive oil

Steps:

  • TOAST WALNUTS: Do this first. While nuts are toasting, do your chopping and cutting. Heat oven or toaster oven to 350F. Place walnuts in pan. Roast for 8-11 minutes until fragrant. Let cool.
  • ASSEMBLE SALAD: Place greens on a platter or wide mouthed bowl. Scatter peaches and radishes on top and any other garnish/fillings you're using.
  • MAKE WALNUT DRESSING: Add all walnut dressing ingredients to food processor. Pulse until walnuts are coarsely chopped. If you don't have a processor, chop walnuts, add other ingredients except oil, then whisk in oil until well blended. Drizzle dressing over peach salad.

Heather's Special Walnut Oil Salad Dressing image

I rarely use bottled salad dressings, as I tend to prefer homemade versions much more. This is my hands down favorite. It is easy to throw together and is so flavorful. This only makes enough for a few dinner salads - only make as much as you need for one meal, as this only keeps maybe a day. Walnut oil and shallots are the two key ingredients here - you can sub any sweet onion for the shallots, but the walnut oil is what gives this its unique flavor. I may vary what types of lettuces and veggies go into a dinner salad, but if I am using this dressing, I always add some crumbled mild feta cheese to the veggies. Walnut oil can be found in bigger grocery store with other flavored oils or in gourmet markets. Walnut oil needs to be kept in the fridge as it spoils quickly at room temp (but lasts ages in the fridge). People have been asking for this one for a while, and yesterday I finally made this with a pen & paper by my side to carefully measure out the ingredients. This will very lightly dress 4 small dinner salads or 2 much larger ones. Enjoy! NOTE: Walnut oil is an extra virgin olive oil infused with the flavor of walnut and has a unique nutty flavor. You may use other nut flavored oils with good results (like hazelnut or macadamia), but just be sure the oil is infused with nut flavor. Something like peanut oil will not work as a substitute for the walnut oil.

1 tablespoon seasoned rice wine vinegar or 1 tablespoon sherry wine vinegar
1 1/2 teaspoons fresh lemon juice
1 -2 teaspoon minced shallots or 1 -2 teaspoon other sweet onion, approximately
1 teaspoon sugar
salt, to taste (about 4 shakes)
fresh ground black pepper, to taste (about 10 grinds)
2 tablespoons canola oil (not olive) or 2 tablespoons other plain flavored oil (not olive)
2 teaspoons walnut flavored olive oil (or other nut flavored infused oil)
mixed lettuce greens
assorted fresh vegetable, of choice
plain mild feta cheese, crumbled

Steps:

  • Mix all dressing ingredients together (except feta and other salad ingredients) in a mini food processor (or using an immersion stick blender) until creamy in appearance.
  • Drizzle over salad- this doesn't make lots, but is very flavorful; a little goes a long way.
  • Once the salad is dressed, crumble the feta over the salad.

2 teaspoons Cognac
1/4 teaspoon red pepper flakes
1/4 cup red wine vinegar
Kosher salt and freshly ground black pepper
4 tablespoons extra-virgin olive oil
1 cup arugula
3 cups vegetable tops, trimmed of stems, coarsely chopped
1 tablespoon honey
1/4 cup finely grated Pecorino cheese

Steps:

  • Make the dressing: Place the walnuts inside a ziptop bag. Use a rolling pin to lightly crush the walnuts into smaller pieces inside the bag. In a large bowl, whisk the walnuts, Cognac, pepper flakes and red wine vinegar with a generous pinch salt. Slowly whisk in the olive oil. Taste for seasoning.
  • Make the salad: Pour the dressing over the greens and toss to coat. Drizzle honey in the bottom of a serving bowl. Add the greens. Sprinkle cheese over the top. Serve immediately.

  • Now, there are two ways to serve the salad. You can layer and spread the sauce on the bottom of the bowl, which is what I did. Mix the salad ingredients and add over the sauce. This way, when you scoop the salad to serve, you will mix it with the dressing right at the table. Alternatively, mix the salad and serve the dressing on the side or/and drizzle some over the top.
  • Finally, drizzle everything with a little olive oil and lemon juice, and sprinkle with a little sea salt and pepper.
