Steps:
- In a large saute pan, heat the olive oil over medium-high heat. Add the onions, season with salt and cook 2 to 3 minutes, stirring to avoid any burning. Add the zucchini, herbes de Provence, and salt, and pepper, to taste and cook an additional 5 minutes, using a wooden spoon or spatula to keep the vegetables from overbrowning. Reduce the heat to low, add a little more oil if needed and let cook for 20 to 30 minutes, stirring occasionally. Once it's done, you can turn off the heat and let it sit there on the stove top or just let it cook some more over very low heat; the dish is very flexible.

- Place the cashews in a bowl and cover them with water. Soak for at least 1 hour (or the very least, 30 minutes if you have a high speed blender). For preparation in advance, you can soak the cashews overnight, which is even better.
- Drain the cashews. Add the cashews, broth or water, and salt to a blender, then blend on high for 1 minute. Stop and scrape, then add additional liquid if necessary to come to a creamy consistency. Blend for several minutes until creamy and smooth. (Store in a sealed container in the refrigerator for up to 1 week or in the freezer for several months.)

- Tahini + lemon juice + garlic. For this Mediterranean-inspired recipe, blend together 1/2 cup tahini, the juice of two small lemons, and one to two cloves of garlic in a high-speed blender or food processor.
- Olive oil + balsamic vinegar + red wine vinegar. To whip up this Italian inspired sauce (which tastes just divine on zucchini, tomatoes, pasta, and more), Beckerman says to combine two tablespoons of olive oil, two tablespoons of balsamic, and two tablespoons of red wine vinegar with a nice crank of black pepper.
- Peanut butter + coconut aminos + Fresh ginger. My one true love in life is peanut sauce, and this one from Jenkins is almost too good. Blend together 1/2 cup of creamy peanut butter, three to four tablespoons of coconut aminos, and a one-inch nob of fresh, peeled ginger.
- olive oil + avocado oil + apple cider vinegar. Ready for a Greek-inspired dressing to zest up your grain bowls? Beckerman's got you. This recipe combines 1/4 cup of olive oil, two tablespoons of avocado oil, and three tablespoons of apple cider vinegar with one teaspoon of honey, one teaspoon of finely chopped garlic, 1/2 teaspoon of turmeric, and a pinch of salt and pepper.
- Roasted red peppers + almonds + lemon juice. "Add this sauce to everything! I love it on grain bowls, pizza, wraps, grilled veggies, and grilled chicken, and drizzled into hummus," says Jenkins. "

- Basic Stir-Fry Sauce. The first sauce everyone needs to have in their repertoire is a basic stir-fry sauce. Whether you are making a big veggie stir-fry or just sautéing up some green beans, this is a good go-to Chinese sauce.
- Spicy Orange Sauce. This is the sauce I use to make a vegan version of the Chinese dish Orange Chicken. It works well with tofu, tempeh or any vegan chicken.
- Mango Pineapple Hoisin Sauce. This sauce combines fresh juice with sweet Chinese barbecue sauce and spicy hot sauce. You can use whatever fruit juices you like but they should be balanced so choose one sweet fruit like mango and one more acidic fruit like pineapple.
- Sweet and Sour Sauce. I typically find most sweet and sour sauces too cloying. My version of Sweet and Sour Sauce is a perfect blend of savory and sweet.
- Citrus Sauce. This sauce is a combination of bright, sweet citrus and hot Caribbean flavors. It is perfect with tofu, tempeh, and seitan or served or any vegetable or rice.
- Thai Curry Coconut Sauce. It doesn’t take a ton of ingredients to make a quick curry sauce if you start with curry paste. It comes in red, green or yellow curry flavors and contains all the specialty ingredients such as lemongrass and chiles.
- Spicy Peanut Sauce. Peanut butter is such a perfect food. You can eat it for breakfast, lunch, dinner and snacks. It’s also wonderful as a saute sauce that is easy to make.
- Balsamic Dijon Pan Sauce. Pan sauces are the easiest to make. Anytime you saute something, you have the opportunity to make a pan sauce. Whatever you cooked usually leaves little brown bits in the pan; this is called the fond.
- Lemon-Olive Pan Sauce. I love Moroccan flavors: the heat of cumin, the brightness of coriander, the spice of cinnamon and the tangy salt of olives. This sauce only takes a few minutes to cook but the flavors are rich and deep.
- Savory Vegan Diane Sauce. This sauce comes from a classic, American dish called Steak Diane, which is steak that is served with a pan sauce of butter, mushrooms, mustard, shallots, cream, truffles and Worcestershire sauce.

- Green Goddess. That classic creamy, herby dressing is fantastic with the charred flavors from the grill.
- Shallot Vinaigrette. You can’t go wrong with this simple French-style vinaigrette. Mustard keeps it emulsified so you can spoon it over veggies like a sauce.
- Walnut Dressing. Nuts make the texture of a lemony dressing pleasantly chunky so it’s easy to dollop over grilled vegetables. Related: More Grilling Ideas.
- Fonduta. Essentially just a fancy word for cheese sauce, fonduta is a crowd-pleasing sauce that will make your friends love you and get your kids to eat their vegetables.
- Pesto. The best way to use up the basil in your garden before the first frost? Make huge batches of pesto. Serve some with grilled veggies right away and freeze the rest.
- Aioli. You can toss vegetables with this Provencal-style garlicky mayo before they go on the grill and/or serve it alongside after.
- Yogurt sauce. Whether you whisk yogurt with scallions and lime or cilantro, lemon and cumin, a creamy, tangy sauce is a cooling accompaniments to spice-rubbed vegetables.
- Chile Butter. Melt dollops of butter, infused with smoky-sweet grilled chiles over hot grilled veggies.
- Romesco. Another way to use those grilled chiles and peppers: Blend them with almonds and other seasonings for green or red versions of this Spanish sauce.
- Nuoc Cham. That ever-versatile sweet-sour-salty-hot Vietnamese sauce is good on almost everything savory, including grilled vegetables. Kristin Donnelly is a former Food & Wine editor and author of the forthcoming The Modern Potluck (Clarkson Potter, 2016) and the blog Eat Better, Drink Better.
