- Cook onion in oil in Dutch oven over medium heat, stirring occasionally, until crisp-tender.
- Stir in pasta, broth, mustard, vegetables and beans. Heat to boiling, stirring occasionally.
- Stir together Bisquick mix, cornmeal, oregano and basil. Stir in milk just until dry ingredients are moistened.
- Drop dough by tablespoonfuls onto boiling stew; reduce heat to low. Cook uncovered 10 minutes. Cover and cook 10 minutes longer.

- Heat oil in a large casserole dish. Add shallots and cook for 5-6 mins until starting to soften and brown. Add leeks for 2 mins, then stir in swede, parsnips and carrots.
- Pour in barley and wine, cook until wine has reduced by half. Add stock, bay, thyme, parsley and seasoning. Cover pan, bring to the boil, then simmer for 45 mins until barley and veg are tender. Stir occasionally to stop it catching.
- Meanwhile, make the dumplings. Heat oven to 200C/180C fan/gas 6. Rub flour and butter together to form breadcrumbs. Add remaining ingredients and mix well. Sprinkle over 2 tbsp water, mix to form a soft dough. Divide into six and roll into balls. Dot on top of stew and transfer to oven. Cook, uncovered, for 20-25 mins until dumplings are golden.

- 1. Heat the oil in a large pot and fry the onion until soft. Add the carrots, celery and potato. Let sweat over a gentle heat for about 5 minutes. Add the rest of the ingredients, bring to the boil and then simmer for about 20 minutes.
- 2. Meanwhile, prepare the dumplings. Rub the butter into the flour until it resembles breadcrumbs. Add the herb, salt and pepper and mix with the egg, adding enough water to form a sticky dough.
- 3. Using a wet spoon drop tablespoons of the dough on top of the simmering stew. Place the cover on the pot and leave for about 10 minutes.Remove a dumpling, if when you cut into it its fluffy and "bready", it's done!! Remove them all at the one time, just like bread, they'll get soggy if you leave them too long.
WINTRY BEEF VEGETABLE STEW WITH FLUFFY HERB DUMPLINGS
Here's our family favorite recipe for a great hearty and satisfying beef stew, that I make each year throughout the cold weather season. Plentiful with tender chunks of beef and a nice variety of vegetables, and the fluffiest most delicious herb dumplings, ever! Perfect for a cold autumn or winter's day. Serve this stew piping hot with a buttered baguette and a good cider, ale, or wine. Enjoy! Note: As with all good stews, this stew is even better reheated the next day, after flavors have had a chance to meld. Stew leftovers freeze and reheat beautifully, and would make a delicious cottage or shepherd's pie.

Steps:
- Cook and stir beef in shortening in heavy 8-10 quart stock pot, until beef is well browned. (Note: If too much liquid builds up to prevent adequate browning, pour off excess liquid into a bowl and reserve. Continue to brown the beef and when well browned, add the reserved liquid back into the pot.).
- Add 5 cups hot water, 1/2 teaspoon salt and the black pepper.
- Heat to boiling; reduce heat.
- Cover and simmer until beef is almost tender, 45 minutes to 1 hour.
- Stir in potato, turnip, rutabaga, carrots, green pepper, green beans (if using), celery, onion, bouquet sauce, the bouillon cube and bay leaves.
- Cover and simmer until vegetables are tender (but do not overcook), stirring once, about 25 minutes.
- Prepare dough (see below) for Dumplings; set aside.
- Using a fork, blend together 1 cup cold water and the 4 tablespoons flour in a small mixing bowl; stir gradually into stew.
- Heat to boiling, stirring constantly.
- Boil and stir 1 minute; reduce heat.
- Do ahead tip: After boiling and stirring 1 minute, stew can be covered and refrigerated no longer than 48 hours. To serve, heat to boiling over medium-high heat. Continue as directed.
- DUMPLINGS:.
- In a large bowl, cut shortening into combined flour, baking powder, salt, parsley and herbs until mixture resembles fine crumbs.
- Stir in milk.
- Drop by heaping tablespoons onto hot meat or vegetables in boiling stew (do not drop directly into liquid).
- Cook uncovered 15 minutes.
- Cover and cook about 15 minutes longer. Cut a dumpling in half to test for doneness; you want them done but not dry!
- Serve stew piping hot, with a buttered baguette and a glass of cider, ale, or wine. As with all good stews, this stew is even better reheated the next day, after flavors have had a chance to meld. Stew leftovers freeze and reheat beautifully, and would make a delicious cottage or shepherd's pie.

VEGETABLE STEW WITH DUMPLINGS (VEGETARIAN)
This is a very different vegetable stew just packed with flavor - and is one of my family's most requested and one of my very favorites. It is based on a recipe from one of my favorite cookbooks, "Tis the Season - A Very Vegetarian Christmas", by Nanette Blanchard. Although this comes from a Christmas cookbook, I like to serve this all year long, although it is especially comforting in the fall and winter months when it's cold. The original recipe calls for a puff pastry crust, which could make quite an elegant meal fit for company. However, I like to serve it with dumplings, so it's more everyday for my family. I'm sure it would be equally delicious without the dumplings - although my family would be upset if I didn't include them (the dumplings are usually fought over in my house). I've included just a basic dumpling recipe, but if you have one of your own, by all means please use it! You could also use some refrigerated biscuit dough if you have it on hand. This is something we might eat on a Sunday evening at our house, although the stew actually comes together quite quickly. I hope you enjoy it as much as my family does.

- In a large dutch oven, saute the onion in olive oil over med. heat for approximately 5 mins or until tender.
- Add garlic and saute just until fragrant (approx. 1 min) - be careful not to burn.
- Add flour and stir unil mixed.
- Add apple cider or sherry vinegar, light brown sugar, and dijon mustard.
- Stir until combined.
- Slowly stir in broth.
- Add cinnamon, chopped carrots, and chopped potatoes.
- Bring to a boil, reduce the heat, and simmer until thickened and vegetables are tender (approx. 45 mins).
- Add frozen peas and frozen corn and cook an additional 10 mins or until cooked through.
- Taste and season with salt and pepper if desired. (Can be served at this point if not using the dumplings).
- If making the Dumplings -
- Combine Bisquick and skim milk (and fresh herbs if desired) in mixing bowl and stir until combined and soft dough forms.
- Drop by rounded teaspoons into hot stew.
- Cover and cook until done (approx. 10 mins).
- You may need to turn your dumplings in order to cook evenly about 1/2 way through - especially if they are large.
VEGETABLE AND PEARL BARLEY STEW WITH HERBY DUMPLINGS (VEGAN)
Winter vegetable and pearl barley stew with herby dumplings - a hearty, healthy and filling vegan vegetable stew topped with fluffy, herby dumplings. The perfect meal to warm you up on chilly days.

- Heat the olive oil and dairy free margarine in a large, oven-proof casserole pan or saucepan. Add the onion, leek and celery and fry gently for about 10 minutes until soft and translucent.
- Add the crushed garlic and fry for thirty seconds then stir in the flour.
- Stir in the dry white wine (if using) a little at a time; don't add it all in one go or you will end up with a lumpy sauce. Once you have incorporated all of the wine, gradually stir in the stock.
- Add the pearl barley along with the thyme, bay leaves and rosemary. Bring up to the boil; allow to boil rapidly for 10 minutes, stirring occasionally.
- Turn down to a gentle simmer then add the carrots, parsnips, potato and swede.
- Cover the pot and simmer gently for 30-40 minutes until the pearl barley and vegetables are soft. Stir the stew regularly to prevent it from catching on the bottom. Top it up with a little extra stock if needed but bear in mind that this stew is meant to be quite thick.
- While the stew is cooking preheat the oven to 200C/400F/gas mark 6 and prepare the dumplings.
- Mix together the self-raising flour, salt and dried herbs in a large bowl. Add the cold dairy free margarine and rub it in using your fingertips until the mixture resembles fine breadcrumbs. Gradually stir in enough cold water to bring the mixture together into a ball.
- Once the vegetables and pearl barley are tender, remove the pan from the heat. Remove the thyme and rosemary sprigs (if using fresh herbs) and the bay leaves. Season generously to taste with salt and pepper.
- Roll the dough into balls about the size of a golf ball and dot them all over the top of the stew. Place the uncovered pan in the oven and bake for about 20-25 minutes until the dumplings are golden.
- The stew is best eaten fresh, but leftovers will keep in the fridge for up to 5 days (the stew will thicken as it sits).

- Begin by making the stew. Coat the bottom of a large pot with 2 tablespoons of oil and place it over medium heat. When the oil is hot, add the mushrooms in an even layer.
