PARTY RIBBON SANDWICHES
Lovely layered sandwiches showcase three fabulous fillings and two kinds of bread.

Steps:
- Place all shrimp filling ingredients in food processor. Cover; process 3 to 5 seconds or until mixture is creamy. Remove from food processor; set aside.
- Place all turkey filling ingredients except celery in food processor. Cover; process 3 to 5 seconds or until mixture is creamy. Stir in celery. Remove from food processor; set aside.
- Place all cheese and olive filling ingredients except olives in food processor. Cover; process 3 to 5 seconds or until mixture is creamy. Stir in olives.
- To assemble ribbon sandwiches, place one slice white bread on cutting board. Spread 5 tablespoons cheese and olive filling over white bread. Top with 1 slice wheat bread; spread with 1/4 cup turkey filling. Top with 1 slice white bread; spread with 1/4 cup shrimp filling. Top with 1 slice wheat bread. Repeat process 3 more times to make a total of 4 sandwich stacks. Wrap each in plastic wrap; refrigerate at least 4 hours but no longer than 24 hours.
- Just before serving, cut each sandwich stack in half lengthwise and then crosswise into 4 slices.

- Gather the ingredients. Shred the veggies. Strain the yogurt. Prep the green spread in your mixer. You could trim the edges of the bread if you like or use the whole slice bread.
- Take two separate bowls and mix half the yogurt with carrots and purple cabbage respectively. Add salt and black pepper.
- Take four slices for one whole sandwich. Spread a layer of carrots on one. Purple cabbage on the second and the green chutney on the third. If you are adding herbs to your sandwich add them at this point.
- Stack the slices one above the other and then cut the sandwich diagonally to give you two sandwiches from one whole sandwich. This will yield you 6 half size sandwiches. If you want the sandwiches to be smaller you could cut the sandwich one more time diagonally to get four smaller bite size sandwiches. This will yield you 12 mini bite size sandwiches.
- Serve in a platter or plate. Relish these delicious bites.

Steps:
- Combine grated carrots, chopped green bell pepper, minced onion, chopped cucumber, and chopped celery in a bowl. Mix well.
- Combine softened cream cheese, salt, lemon juice, and mayonnaise in a separate bowl and beat until fluffy. Fold vegetable mixture into cream cheese mixture and mix well.
- Cover and refrigerate at least 1 hour before spreading.

VEGETABLE PARTY SANDWICHES
This is my sister's recipe which she makes for parties and holiday events. The sandwiches are always a popular food item! In Spring of 2007, this recipe was featured in two North Carolina newspapers by the famous Food Editor, Helen Moore. Plan ahead because the vegetable mixture needs to be refrigerated 25 hours for the flavors to blend well. The recipe yields 112 party-size, quartered sandwiches. Preparation time, not refrigeration time, is stated.

Steps:
- Dissolve gelatin in water according to directions.
- In a large bowl, mix dissolved gelatin with carrots, celery, cucumber, onion, lemon juice and mayonnaise. Refrigerate for 25 hours.
- When ready to make sandwiches, if mixture is too jelled to spread well, add 1/3 to 1/2 cup more mayonnaise.
- Using an electric knife, trim crusts from bread edges. Spread vegetable mixture on bread and make 28 sandwiches. Cut into quarters.
- Layer cut sandwiches in a large plastic container with damp paper towels between layers until serving time.
