Marinade for Chicken, Pork or Beef image

This recipe comes from my Uncle Tommy. He used this recipe to marinate chicken kabobs and served them over yellow rice. One tip he gave me was to put a little of the marinade in a dish with the onion halves and microwave for a minute or two. It softend them up before putting on the skewers with the rest of the meat and veggies.

1/2 cup lemon juice
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1 teaspoon dry mustard
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon coarse black pepper
1/2 cup vinegar
1 teaspoon dried parsley
1 teaspoon sugar
1/8 teaspoon dried basil
1/3 cup oil

Steps:

  • Mix the first 11 ingredients. Whisk in the oil.
  • Marinate meat for several hours.
  • Grill meat in the manner you desire.

This is a great BBQ Marinade or for oven roasts/. I have used it as a flavor add on in the crockpot with pork.and with beef. I haven't tried it with chicken but I think it would work. Marinade at least 2 hours

1 carrot, peeled,coarsely chopped
1 onion, peeled,cut in quarters
1 stalk celery, coarsely chopped
6 peppercorns, crushed
12 ounces tomato juice
1 tablespoon vinegar
1 teaspoon sugar
3 cloves garlic, halved
1 bay leaf
1 sprig parsley
1 sprig fresh thyme

Steps:

  • Put all the ingredients into a food processor and with the metal blade process until very smooth.
  • Pour into a pot and bring to a boil, simmer for 20 minutes.
  • Cool and refrigerate until you want to use it.

1 cup white wine
2 tablespoons extra virgin olive oil

Steps:

  • Mix all ingredients well. Can add to a shaker bottle and shake well.
  • Add vegetables and marinate 1 hour.
  • Add chicken and marinate at least 12 hours.

V'S GRILLING MARINADE



V's Grilling Marinade image

This marinade works well with beef, chicken, pork, and portobello mushrooms. I like to use sirloin tips or a flank steak sliced on the bias and cook it to medium-rare. The tea adds a touch of smoky flavor. I substitute orange juice if I don't have pineapple juice. I don't always add the sherry, but I use it when I have it.

¼ cup boiling water
½ teaspoon lapsang souchong tea leaves
2 tablespoons brown sugar
¾ cup pineapple juice
½ cup tamari (dark soy sauce)
½ cup canola oil
1 (1 1/2 inch) piece fresh ginger root, peeled and chopped
2 cloves garlic, minced
2 tablespoons sherry
1 tablespoon honey

Steps:

  • Pour boiling water over tea leaves in a mug and steep for 3 minutes; strain and discard tea leaves. Dissolve brown sugar into the tea and set aside to cool.
  • Combine pineapple juice, tamari, canola oil, ginger, garlic, sherry, and honey in a jar; add tea mixture. Seal jar and shake until the oil emulsifies into the marinade.
