- Heat oven to 375 degrees. Coat a 9x13 baking pan with cooking spray.
- In a skillet, cook onion in olive oil over medium high heat until translucent. Add in ground beef and cook until browned. If there is a lot of fat from the ground beef, pour it off at this time.
- Add in the flour and cook for one minute, stirring.
- Add in ketchup, broth, Worcestershire, salt and pepper and veggies. Cook for 5 minutes.
- Spread mixture in bottom of 9x13 baking pan.
- In a medium bowl, mix potatoes, cheese and butter.
- Spread potato mixture over beef/veggie mixure.
- Bake 45 minutes or until hash browns are golden brown.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
- Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

- Preheat the oven at 350.
- Spray a 9x13 casserole with cooking spray. Spread out frozen hash browns and spray the top of the hash browns with cooking spray as well.
- Bake for 25 minutes.
- While the hash browns are baking, saute the pepper and onion in a little oil and season to taste. Add the ham during the last few minutes of cooking. Let cool.
- Whisk the eggs with the sour cream, milk, salt and pepper.
- Add the vegetables and ham mixture to the eggs with 1/3 of the cheese.
- Spread a 1/3 of the cheese over the hash browns.
- Pour the egg/vegetable/ham/cheese mixture on top.
- Spread the rest of the cheese on top of the casserole.
- Bake uncovered for 30 minutes.

- In a large skillet over medium heat, heat 1 tablespoon of oil. Add the mushrooms and sauté them for 4 minutes or until they start to brown. Add a small pinch of salt along withe onions and garlic and let cook for 2 minutes. Remove to a plate. Add the second tablespoon of oil, if needed, and sauté the peppers for 1 minute. Add in the baby spinach and allow it to wilt, remove from heat, set aside.
- Generously spray a 9x13 baking dish with nonstick cooking spray. Lay the shredded potatoes in the bottom of the dish and press to make sure they are spread out evenly. Add the veggies (both the mushrooms and the pepper mixtures) over the potatoes, set aside.

- Preheat oven to 350 degrees then spray an 11x17" baking dish (or 2 medium-size baking dishes) with nonstick spray and set aside.
- Heat 1 Tablespoon oil in a very large skillet over heat that's just a touch above medium. Add mushrooms then saute until they have released their liquid and the liquid has cooked off. Season with salt and pepper then continue to saute until the mushrooms are golden brown and tender. Scoop into a bowl then set aside.
- Heat remaining Tablespoon oil in skillet then add peppers and onions. Season with salt and pepper then saute until crisp tender, adding an extra drizzle of extra virgin olive oil and/or turning the heat down slightly if the vegetables begin to burn. Spread vegetables onto a plate to cool slightly.
- In a HUGE bowl, whisk together eggs, milk, salt, and pepper (I usually use ~3/4 teaspoon salt). Add hash browns and 8oz of each cheese to the bowl then stir to combine. Add sauteed vegetables then stir to combine. Pour mixture into prepared baking dish then sprinkle the top with remaining shredded cheese and cover with a piece of nonstick sprayed foil. Bake for 50-60 minutes, or until the center is set, then remove foil and bake for an additional 2-3 minutes or until cheese is fully melted. If you are using two smaller baking dishes, start checking for doneness around 40 minutes. Let casserole sit for 10 minutes before slicing and serving.
