Crustless Quiche - Ham and Cheese image

Recipe video above. Tastes like Quiche Lorraine, minus the carbs and a load of prep time. Buy pre chopped ham and pre shredded cheese, and you'll get this in the oven in 5 minutes flat! 5 large eggs ((~50 - 55g / 2oz each))
1 cup cream (, heavy/thickened (halve if subbing milk, Note 1))
1/4 tsp salt ((Note 2))
1/2 tsp black pepper
100g/ 3.5 oz ham (, diced)
1 cup shredded cheese ((anything that melts except mozzarella, Note 3))
1 green onion (, sliced)

Steps:

  • Preheat oven to 180°C/350°F. Grease with butter or spray a 22.5cm / 9" pie dish (Note 4)
  • Whisk eggs, cream, salt and pepper.
  • Scatter most of the ham, cheese and green onion in the pie pan.
  • Pour in egg mixture. Top with remaining ham, cheese and green onion.
  • Bake 35 minutes until golden on top and centre barely wiggles. Don't overcook, it will lose custardy-ness.
  • Remove from oven, rest 5 minutes and watch it deflate!
  • Cut then serve with a simple side salad, or stuff into soft rolls, or wrap into burritos (then pan fry to crisp!)

3/4 cup zucchini
1/4 cup onion
1 cup shredded cheddar cheese (we use white cheddar)
1/4 cup (or less) of diced tomatoes
6 eggs
1 cup milk (we use whole or at least 2 percent)
1/2 cup chopped/cubed ham
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon mustard powder

Steps:

  • Preheat oven to 350 F. Grease the sides and bottom of a pie dish (we used a 10 inch) Add the sliced zucchini, onion, tomato, ham, tomato and cheese to the plate and mix to evenly distribute. Stir together remaining ingredients until blended and pour over plate. Bake for approximately 25-30 minutes or until knife inserted in center comes out clean.

1 tablespoon minced fresh basil
1/4 teaspoon salt

Steps:

  • In a large bowl, combine the egg, hash browns and Parmesan cheese. Press onto the bottom and up the sides of a greased 9-in. pie plate. Bake at 400° for 15 minutes or until crust is set and edges begin to brown., Meanwhile, in a large skillet, saute zucchini and red pepper in butter for 5 minutes or until crisp-tender. Stir in the ham, basil, salt and pepper. Remove from the heat; cool slightly. , In a large bowl, beat eggs and milk; add zucchini mixture. Stir in cheese. Pour into crust. Bake for 15-20 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting.

1 tablespoon olive oil
½ cup sliced onion
½ cup chopped green bell pepper
½ cup mushrooms, sliced
½ cup chopped zucchini
1 large tomato, sliced
2 tablespoons all-purpose flour
2 teaspoons dried basil
3 eggs, beaten
½ cup milk
½ teaspoon salt
¼ teaspoon ground black pepper
1 ½ cups shredded Colby-Monterey Jack cheese, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake pie crust in preheated oven until firm, about 8 minutes. Remove crust from oven and set aside. Reduce oven heat to 350 degrees F (175 degrees C).
  • Heat olive oil in a large skillet over medium heat. Cook and stir onion, green bell pepper, mushrooms, and zucchini in hot oil until soft, 5 to 7 minutes. Remove vegetables from skillet and set aside.
  • Sprinkle tomato slices with flour and basil; cook in the skillet for 1 minute per side.
  • Whisk eggs, milk, salt, and pepper together in a small bowl.

The best easy quiche recipe packed with spinach, ham, and cheese, or any other fillings you prefer! Great for breakfast, brunch, or dinner.

10 ounces frozen chopped spinach (thawed)
1 refrigerated pie crust
5 large eggs
3/4 cup milk ((I used 1%; or use whole milk or a combo of milk and cream for more richness))
3/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon hot sauce (such as Tabasco (optional))
1 cup diced cooked ham
3/4 cup 1/4-inch-diced melty cheese (such as Gruyere or white cheddar* (about 3 ounces))
2 green onions (finely chopped)

Steps:

  • Preheat the oven to 375 degrees F. If your frozen spinach is not already thawed, thaw it in the microwave per the directions. Place the spinach in a colander and squeeze out as much liquid as possible. Set aside.
  • Blind Bake the Crust (If your crust comes pre-formed in a disposable pan). Place the pie dish on a baking sheet and bake for 3 minutes. Remove it from the oven, prick it all over with the tines of a fork, then return to the oven and bake until light golden, about 10 minutes more. Reduce the oven temperature to 350 degrees F. See notes if you use a pie dough sheet or make your own dough.**
  • Prepare the Filling: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, nutmeg, and Tabasco.
  • Squeeze and blot more water out of the spinach (you want it as dry as possible), then scatter it evenly over the bottom of the blind-baked crust. Sprinkle the ham, cheese, and onion over the top of the spinach.
  • Carefully pour the egg mixture over the top.
  • Bake the Quiche: Bake the quiche on the baking sheet, until a knife inserted 1 inch from the edge of the crust comes out clean and the center is set, about 40 to 50 minutes. If at any point the crust begins to brown more than you would like, protect it with foil or a pie crust shield. Let the baked quiche rest for 5 to 10 minutes, then slice and serve.

This Vegetable Quiche is the perfect vegetarian quiche recipe for breakfast, brunch, lunch or dinner. It's loaded with fresh veggies, sautéed to perfection and baked into a flakey crust along with a velvety custard and plenty of Swiss cheese.

1 9" Pie Crust (pre-made refrigerated roll and bake)
1 1/4 cup Shredded Swiss Cheese (Cheddar Cheese works great too)
5-6 cups Assorted Vegetables (cut into 1/2" chunks (Broccoli, mushrooms, red pepper, asparagus, and spinach))
6 large Eggs
1 cup Milk
1 cup Heavy Cream
1/2 tsp Salt
1/4 tsp Pepper
1 pinch Nutmeg
1 tsp Dijon Mustard (optional)
1/8 tsp Cayenne Pepper
1/2 large Avocado (optional- for topping)
1/2 large Tomato (optional- for topping)

Steps:

  • Preheat oven to 350 degrees.
  • Roll out pie dough to about ¼" thick and press into a 9" pie plate. If using a premade pie crust, remove it from the refrigerator about an hour before you make your quiche so that it warms up to room temperature. Roll out the pie crust as directed on the packaging and arrange in a 9" pie plate.
  • Place in the freezer for a few minutes, just until it is no longer super soft, then pull out and line the inside with aluminum foil. Fill with pie weights or dried beans and bake in a preheated 350 degree oven for about 15 minutes. Remove from the oven, carefully remove the foil and set aside.
  • In a saute pan over medium-high heat, cook vegetables until tender, or between 5-10 minutes, depending on the veggies. Season with salt and pepper as desired, then add to the prepared pie crust. Sprinkle the top of the veggies with half of the shredded cheese.
  • In a medium-sized mixing bowl, whisk together the eggs, milk, cream, salt, pepper, nutmeg, mustard, and cayenne. Mix until well combined, then pour over the veggies and top with the remaining cheese.
  • Bake the quiche in a preheated 350 degree oven for about 30-40 minutes, or until the egg mixture is set in the middle. You can test by gently shaking the pan just a little to see if the middle of the quiche is still runny. If you still aren't sure, insert a toothpick or knife into the center and it should come out clean.
  • Once baked, remove from the oven and allow to cool for at least 5 minutes before slicing and serving with sliced avocados and tomatoes. Enjoy!
