MIXED VEGETABLE BAKE

1 lb medium red potatoes, (about 4), cut into 1/8-inch slices
1 large onion, cut in half and into 1/4-inch slices
2 medium carrots, peeled, cut into 1/4-inch slices
1/4 cup extra-virgin olive oil
2 teaspoons finely chopped garlic
1 teaspoon dried thyme leaves
1 teaspoon dried tarragon leaves
1/2 teaspoon salt
1/2 teaspoon pepper
1 medium red bell pepper, cut into 1/4-inch slices
1 medium zucchini, cut into 1/4-inch slices

Steps:

  • Heat oven to 400°F. Spray bottom of 13x9-inch (3-quart) baking dish with cooking spray.
  • Place potatoes, onion and carrots in baking dish; toss with half each of the oil, garlic, thyme, tarragon, salt and pepper. Bake 10 minutes.
  • Meanwhile, in medium bowl, toss bell pepper and zucchini with remaining oil and seasonings. Stir into mixture in baking dish. Bake 30 to 35 minutes longer or until vegetables are tender; stirring halfway through bake time.

I found this recipe handwritten in my grandmother's well-worn cookbook. I've made it many times, and my four grandchildren love it (they think it's just a moist chocolate cake). It's especially appropriate for this contest because our state is known as the beet-growing capital.

4 ounces semisweet chocolate, chopped
1 cup butter, softened, divided
1-1/2 cups packed dark brown sugar
3 eggs
2 cups pureed cooked beets
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
Confectioners' sugar

Steps:

  • In a microwave, melt chocolate and 1/4 cup butter; stir until smooth. Cool slightly. Meanwhile, in a large bowl, cream the remaining butter and brown sugar until light and fluffy. Beat in eggs., In a small bowl, combine the chocolate mixture, beets and vanilla. , Beat into creamed mixture (mixture will appear separated). Combine flour, baking soda and salt; gradually add to creamed mixture. , Pour into a greased and floured 10-in. fluted tube pan. Bake at 375° for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely. Before serving, dust with confectioners' sugar.

1/2 cup breadcrumbs, fresh, brown
1/3 cup sharp cheddar cheese, coarsely grated
2 tablespoons fresh chives, chopped
2 tablespoons fresh parsley, chopped
2 garlic cloves, minced
1/2 teaspoon salt, to taste
1/4 teaspoon ground pepper, to taste
11 ounces potatoes, peeled
11 ounces parsnips, peeled
1 large turnip, peeled
11 ounces sweet potatoes, peeled
11 ounces rutabagas, peeled
2 eggs
1 1/4 cups vegetable stock
1/2 cup light cream

Steps:

  • Preheat oven to 375 degrees F & lightly butter a deep cake pan 8 inches in diameter, then line the bottom of the pan with parchment paper.
  • In a large bowl mix together the breadcrumbs, cheese, herbs & garlic, then season to taste with salt & pepper, before sprinkling half of this crumb mixture over the bottom of the prepared pan.
  • Slice all vegetables as thinly as possible, which is best done with a mandoline or in a food processor with a thin cutting disc.
  • The vegetables are to be layered in the prepared pan ~ lightly seasoning with the crumb mixture every couple of layers ~ starting with half of the potatoes, then half of the parsnips, then half of the turnip, then half of the sweet potato & finally half of the rutabaga.
  • At this point sprinkle a little more than half of the remaining breadcrumb mixture over everything, then start the entire process again, finally topping the last layer with the remaining crumb mixture.
  • Whisk together the eggs, vegetable stock & cream then season lightly.
  • Pour this mixture evenly over the layered vegetables & cover with aluminum foil, pinching around the edges to seal.
  • Bake for 1 hour, then remove the foil & bake another 30 minutes.
  • Preheat the broiler to high, then turn the cake onto a heatproof plate. Remove & discard the parchment paper lining before placing the cake under the broiler for 4 or 5 minutes or until it is crisp & golden.
  • Let it cool just slightly, then cut into wedges & serve.

2 medium eggplant
5 tablespoons olive oil
1 pound spinach, wash and remove stems
1 large onion, peeled and sliced thin
6 garlic cloves, peeled and smashed
1 medium fennel, core removed and sliced thin
2 bay leaves
1/4 teaspoon each of dried or fresh chopped thyme and oregano
6 large ripe tomatoes, large dice
10 basil leaves, washed and sliced thin
Salt and pepper to taste

Steps:

  • Remove stems and peel eggplants. Slice each lengthwise 1/4 inch thick. Lay out on a baking tray, slightly overlapping each other. Drizzle 2 tablespoons olive oil over them and season with salt and pepper. Bake at 400 degrees for 10 to 12 minutes, until fairly soft. Bring 2 ounces lightly salted water and 1 tablespoon olive oil to boil. Add spinach and stir for 2 minutes. Remove from heat and drain. Later squeeze out all water. Heat 1 tablespoon olive oil in a medium sized pot, add onion, garlic, fennel, bay leaves, thyme, and oregano. Saute a few minutes then add fresh tomatoes and basil and season to taste. Simmer uncovered for 15 minutes and strain tomato compote, reserve juices. In a lightly oiled baking dish cover the bottom with half of the eggplant, slightly overlapped, then all of the spinach. Add the tomato compote. Cover with the remaining half of the eggplant. Drizzle 1 tablespoon olive oil and bake at 350 degrees for 20 minutes. Serve hot. Top with reduced juices of tomato compote
