3 tablespoons butter
1 large onion, chopped
1 1/2 pounds white-skinned potatoes, peeled, cut into 1/2-inch pieces (about 3 2/3 cups)
1 8- to 9-ounce turnip, peeled, cut into 1/2-inch pieces
1 large carrot, peeled, cut into 1/2-inch pieces
1 1/2-ounce package dried porcini mushrooms*
1 1/2 teaspoons dried thyme
3/4 teaspoon ground cumin
1/2 teaspoon ground black pepper
1 14 1/2-ounce can vegetable broth
1 cup water
1 cup whipping cream
8 ounces fresh shiitake mushrooms, stemmed, caps diced
1 cup frozen peas
1/4 cup chopped fresh chives
1 tablespoon all purpose flour
Biscuit topping
2 cups all purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup chopped fresh chives
6 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
2 large eggs
1/2 cup whole milk
*Dried porcinis are available at Italian markets and many supermarkets.

Steps:

  • For filling:
  • Melt 2 tablespoons butter in heavy large pot over medium-high heat. Add onion and sauté until deep golden, about 7 minutes. Add next 7 in-gredients and stir 1 minute. Add broth and 1 cup water; bring to boil. Reduce heat, cover and simmer until vegetables are almost tender, about 10 minutes. Stir in cream, shiitake mushrooms, peas and chives. Season to taste with salt. Bring mixture to simmer. Mix remaining 1 tablespoon butter and flour in small bowl to blend. Stir into vegetable mixture; simmer until mixture thickens slightly, about 5 minutes. Divide vegetable mixture among six 2-cup soufflé or baking dishes; set aside. (Can be prepared 1 1/2 hours ahead. Let stand at room temperature.)
  • For biscuit topping:
  • Preheat oven to 425°F. Sift flour, baking powder and salt into bowl. Stir in chives. Add butter; rub in with fingertips until mixture re-sembles coarse meal. Add eggs and milk and stir until soft moist dough forms.
  • Turn dough out onto generously floured surface. Knead gently just to combine. Divide dough into 6 equal pieces; pat out each piece to 31/2-inch round. Place 1 dough round atop vegetable filling in each dish (some filling will show around edges). Place dishes on large baking sheet. Bake until topping is golden and vegetable mixture is heated through, about 18 minutes. Let stand 5 minutes. Serve hot.

3 tablespoons cornstarch
1 ½ cups vegetable broth
1 tablespoon hot sauce ((I like Cholula))
2 tablespoons olive oil
1 onion (large, rough chopped)
1 garlic (clove, minced)
2 stalks celery (sliced)
2 carrots (medium, peeled and sliced)
2 cups butternut squash (cut into ½ inch pieces)
2 cups cauliflower florets
12 ounces mushrooms (sliced)
14.5 ounce diced tomatoes (canned, low salt)
2 teaspoons fresh thyme leaves ((or 1 teaspoon dried) plus extra springs for garnish)
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon fresh ground black pepper
1 ½ teaspoons granulated sugar
2 teaspoons fresh thyme (or 1 teaspoon dried)
8 tablespoons unsalted butter (sliced thin)
1 cup shredded cheddar cheese (plus extra for topping biscuits after baking)
1 cup whole milk (plus extra for brushing on top of biscuits before baking)

Steps:

  • Preheat oven to 350°F.
  • In a two cup measuring cup, whisk together the vegetable broth, cornstarch and hot sauce. Set aside.
  • Heat the olive oil in a large overproof skillet or Dutch oven over medium heat. Add the onions and sauté for 5 minutes. Add the garlic and cook, stirring constantly for 1 minute or until fragrant. Add the celery, carrots, butternut squash and cauliflower. Cook for 5 minutes stirring frequently. Add the mushrooms and tomatoes and stir to combine.
  • Whisk the cornstarch and broth mixture again and add to the skillet. Stir in 2 teaspoons fresh thyme.
  • Cover the skillet with an oven proof lid or aluminum foil, and carefully transfer to the oven. Bake for 30 minutes.
  • While the vegetables are in the oven prepare the biscuit topping.
  • To prepare the biscuit topping:
  • Whisk together the flour, baking powder, granulated sugar, ½ teaspoon salt and 1 teaspoon black pepper in a medium bowl. Add the sliced butter. Using a pastry cutter blend the butter into the flour until it resembles coarse meal. Add 1 cup of milk, cheddar cheese and 2 teaspoons fresh thyme to the flour mixture. Gently stir with a spatula just until a sticky dough forms. Do not over-mix.
  • Carefully remove the skillet from the oven . Using an ice cream scoop, drop balls of dough on the vegetable filling (makes about 14-16 biscuits). Brush the doughy biscuits with milk return to the oven, uncovered, and bake until the biscuits are golden brown and the filling is bubbly - about 40-45 minutes.
  • Remove from the oven and sprinkle the biscuits with additional shredded cheddar cheese if desired. Allow the casserole to rest 10 minutes before serving.

Cobblers in Ireland are most often a savory main dish rather than a fruit dessert. This one is vegetarian. I have used parsnips in place of the carrots, also. I recently doubled the recipe for a potluck and started it in a very large Dutch oven and transferred it to a large deep baking dish and then topped it with the biscuits.

1 garlic clove, peeled and crushed
8 small onions, peeled and halved
2 stalks celery, sliced
2 carrots, peeled and sliced
1 3/4 cups rutabagas, peeled and chopped
1/2 head cauliflower, broken into florets
3 cups mushrooms, sliced
1 2/3 cups canned tomatoes, diced
1/4 cup red lentil
2 tablespoons cornstarch
1 -4 tablespoon water
1 1/4 cups vegetable broth
2 teaspoons Tabasco sauce
2 teaspoons fresh oregano, chopped
salt and pepper, to taste
1 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
4 tablespoons unsalted butter
1 cup sharp cheddar cheese, shredded
2 teaspoons fresh oregano, chopped
1 egg, lightly beaten
2/3 cup milk

Steps:

  • Preheat oven to 350°F.
  • Heat oil in a large flameproof casserole dish over medium heat. Add garlic and onions; cook 5 minutes, until softened. Add celery, carrots, rutabaga and cauliflower and cook another 2-3 minutes.
  • Add mushrooms, tomatoes and lentils.
  • Mix together the cornstarch and water and stir into the casserole with the broth, tabasco and oregano. Season with salt and pepper.
  • Cover the casserole and transfer to preheated oven. Bake 20 minutes.
  • To make the topping, sift flour, baking powder and salt into a bowl. With fingers or a pastry knife, rub in the butter until mixture is crumbly. Stir in most of the cheese and the oregano.
  • Beat the egg with the milk and add enough to the dry mixture to form a soft dough. (reserve a little to brush on topping later) Knead lightly, and roll out to 1/2-inch thickness. Cut into 2-inch circles.
  • Remove dish from oven and increase temperature to 400°F Arrange the dough circles around the edge of the dish. Brush with remaining egg mixture and sprinkle with remaining cheese.
  • Return to oven and bake 10-12 minutes, or until topping is golden brown.
  • Serve.

BISCUIT TOPPING:
1 cup all-purpose flour

Steps:

  • Preheat oven to 400°. In a large skillet, heat butter over medium-high heat. Add zucchini, red pepper and onion; cook and stir 10-12 minutes or until zucchini is crisp-tender. Add garlic; cook 1 minute longer., In a small bowl, whisk flour, milk, salt and pepper; stir into vegetables. Bring to a boil, stirring constantly; cook and stir 2-3 minutes or until sauce is thickened. Spoon into a greased 8-in. square baking dish., For topping, in a small bowl, whisk flour, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in cheese and basil. Add milk; stir just until moistened. Drop by rounded tablespoonfuls over filling. Bake 25-30 minutes or until filling is bubbly and biscuits are golden brown.

1 turnip, peeled and cut into bite-size wedges
1 potato, peeled and diced (russet or baking)
1 celery root, peeled and diced (about 1 1/2 cups)
1 onion, coarsely chopped
3 carrots, peeled and sliced
1/2 cup chopped parsley
1 cup vegetable broth (or chicken broth if you are so inclined)
1 tablespoon cornstarch
1 teaspoon salt
fresh ground pepper
4 tablespoons butter
1 3/4 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
6 tablespoons butter, chilled and cut into pieces
3/4 cup heavy cream

Steps:

  • Preheat the oven to 325 degrees.
  • Put the turnip, potato, celery root, onion, carrots, and parsley in a 2 inch deep, 3 quart ovenproof baking dish (I use an approximately 13x9x2-inch Pyrex baking dish). You should have about 6 cups of vegetables.
  • In a small mixing bowl, blend the chicken broth with the cornstarch. Pour over the vegetables and mix well. Add the salt and pepper and mix to blend. Dot the top of the vegetables with the butter.
  • Mix the flour, baking powder, and salt in a large mixing bowl and stir with a fork to blend. Put the pieces of chilled butter into the flour mixture and rub quickly with your fingertips until the mixture resembles coarse crumbs. Using a fork, slowly stir in the cream, until roughly mixed. Gather the dough into a shaggy mass and knead 5 or 6 times. Roll out the dough on a lightly floured board until it is the size of the top of the baking dish. The dough should be about 1/4 inch thick.
  • Place the dough on top of the vegetables. Bake for 55 to 65 minutes, until the vegetables are cooked through and the crust is browned. Test vegetables for doneness with a knife tip or skewer. Remove from the oven and serve hot.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease an 8-inch pie plate.
  • Mix zucchini, carrots, and butternut squash together in a large bowl. Sprinkle cornstarch, salt, and pepper over the vegetable mixture and toss to coat.
  • Line pie plate with one of the pie pastries, trimming edges to fit the plate. Pour vegetable mixture over the pie pastry. Drizzle most of the melted butter over the vegetables. 2 red onions (peeled and cut into wedges)
1/2 butternut squash (peeled and diced)
10 1/2 oz Swede (peeled and diced)
10 1/2 oz carrots (peeled and thickly sliced)
2 medium-sized leeks (trimmed and sliced)
10 1/2 oz parsnips (peeled and thickly sliced)
7 oz long-life beetroot (quartered)
2 celery stalks (trimmed and sliced)
1 tsp caraway seeds
2 cloves garlic (peeled and crushed)
3 tbsp sun-dried tomato purée
10 floz vegetable stock (made from 1 cube)
10 floz can chopped tomatoes
1 tbsp vegetable gravy granules
6 oz self-raising flour
1/2 tsp cayenne pepper
1 tsp finely chopped dried rosemary
1 oz butter
2 oz Parmesan cheese (grated)
1 large egg
6 tbsp milk (plus a little extra for glazing)

Steps:

  • Preheat the oven to 200°C/400°F/Gas 6. Heat the oil in a flame-proof casserole dish and add the onions, butternut squash, Swede, carrots, leeks, parsnips, beetroot, celery, caraway seeds and garlic. Fry over a high heat, stirring, for 5 minutes, then add the purée, stock and chopped tomatoes. Bring to the boil, cover, and simmer for 30 minutes. Stir in the gravy granules and cook, stirring, until the liquid thickens a little.
  • Meanwhile, to make the cobblers, sift the flour into a mixing bowl with the pepper and stir in the rosemary. Rub in the butter with your fingertips, until the mixture resembles fine breadcrumbs, then stir in the Parmesan.
  • Beat together the egg and milk, then gradually add to the dry ingredients. mixing to make a soft dough. Roll out to 2 cm/3/4 in thick on a lightly floured surface and stamp out 8 to 9 rounds, using a 5 cm/2 in pastry cutter
  • Arrange the scones around the edge of the casserole, brush the tops with milk and bake for 20 to 25 minutes, or until the scones have risen and turned golden. Serve immediately.
