Number Of Ingredients 29

6 tablespoons olive oil, divided
1 large onion, chopped, about 2 1/2 cups
2 small (or 1 large) carrots, cut into 1/4-inch dice
1 stalk celery, cut into 1/4-inch dice
1 medium red bell pepper, seeds removed and cut into 1/4-inch dice
1 small yellow zucchini, cut into 1/4-inch dice
1 small zucchini, cut into 1/4-inch dice
3 cloves garlic, minced
3 tablespoons kosher salt, divided, plus more as needed
1/4 cup tomato paste
3 tablespoons chili powder
1 tablespoon ground cumin
1 (14.5 - 15 oz) can crushed tomatoes
1 (32 oz) can vegetable stock
1 bay leaf
2 (14.5 oz) can black beans, drained and rinsed
1 tablespoon maple syrup
Cilantro, for garnish
non-stick cooking spray
1 cup all-purpose flour
3/4 cup yellow cornmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
6 tablespoons unsalted butter
6 tablespoons sugar
1 cup buttermilk
2 eggs
4 slices Arla Cheddar Cheese slices

Steps:

  • Heat 4 tablespoons oil in a large soup pot over medium heat. Add the onion, carrot, celery and sauté until start starting to soften (but not browning), about 12-15 minutes. Add bell pepper, both zucchinis, garlic, 2 teaspoons salt and additional 2 tablespoons olive oil and continue to cook until bright in color and starting to soften, about 10 minutes. Increase heat to medium-high and add tomato paste, chili powder and cumin and cook, stir constantly, (this with toast the spices and tomato paste), 1 minute. Add remaining teaspoon salt, crushed tomatoes, stock, bay leaf and beans and bring to a simmer. Reduce heat to low and continue to cook for 25 minutes. Stir in maple syrup, check seasoning and add more salt if mixture tastes bland (this will depend on the type of stock that you use). Ladle into bowls and garnish with cilantro.
  • Preheat oven to 400 degrees. Spray an 8x8-inch square baking pan with non-stick spray. Whisk flour, cornmeal, baking powder, baking soda and salt until combined. Melt butter in a glass bowl in 15-second increments in the microwave. Whisk in sugar and buttermilk until smooth and then add eggs and mix. Add mixture to dry ingredients and combine until incorporated. Add half of the batter to the prepared pan and spread into an even layer that meets the sides of the pan. Top with cheese slices in a single layer. Top with the remaining batter, again spreading into an even layer. Bake, rotating half way through for even heat distribution, about 25-28 minutes. Serve cornbread with chili.

VEGETARIAN SKILLET CHILI TOPPED WITH CORNBREAD

Vegetarian Skillet Chili Topped with Cornbread image

A hearty chili made with butternut squash and fluffy cornbread come together in this single-skillet meal. Serve with extra sour cream and pickled jalapenos on the side for topping.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h40m

Yield 4 to 6 servings

Number Of Ingredients 23

2 tablespoons vegetable oil
1 pound (about 4 cups) store-bought diced butternut squash, cut into 1/2-inch cubes
Kosher salt and freshly ground black pepper
3 cloves garlic, thinly sliced
1 medium onion, finely chopped
4 tablespoons chili powder, or to taste
2 teaspoons ground cumin
3 cups low-sodium vegetable stock
Two 14.5-ounce cans diced tomatoes with chiles, drained
One 14.5-ounce can kidney beans, drained and rinsed
1 tablespoons sugar
5 ounces (about 6 cups lightly packed) baby spinach
3/4 cup fine cornmeal
3/4 cup all-purpose flour
3/4 teaspoon baking soda
3 tablespoons sugar
Kosher salt
1/2 cup whole milk
1/4 cup sour cream, plus more for serving
1 large egg
3 tablespoons unsalted butter, melted
3/4 cup shredded Cheddar (about 3 ounces)
Pickled jalapenos, for serving

Steps:

  • For the chili: Heat the oil in a 12-inch cast-iron skillet over medium-high heat. Add the squash and a pinch of salt and black pepper and cook, stirring occasionally, until the squash is tender and browned in spots, about 8 minutes. Remove the squash from the pan and set aside.
  • Reduce the heat to medium. Add the garlic and onion and cook, stirring often, until the onion is soft, about 8 minutes. Add the chili powder (use less if you like milder chili) and cumin and cook until fragrant, about 1 minute. Add the vegetable stock, tomatoes, beans, sugar and cooked squash and bring to a simmer. Cook until all of the vegetables are tender and the sauce has thickened, about 30 minutes. (If the liquid reduces to less than three-quarters of the way up the sides of the squash, stir in a little water.) Stir in the baby spinach by the handful until all is incorporated and wilted.
  • For the cornbread topping: Meanwhile, position a rack in the center of the oven and preheat to 400 degrees F. Whisk the cornmeal, flour, baking soda, sugar and 1 teaspoon salt together in a medium bowl. Whisk the milk, sour cream and egg together in another bowl. Add the wet ingredients to the dry ingredients, whisking until well combined. Stir in the melted butter and Cheddar. Drop spoonfuls of the batter on top of the chili, leaving space in between. (The batter will not completely cover the chili.)
  • Bake until the cornbread is golden brown and springs back when touched and the chili is hot and bubbly, about 18 minutes. Serve with more sour cream and pickled jalapenos.

¼ teaspoon cinnamon
4 cloves garlic, minced
salt, to taste
pepper, to taste
28 oz diced tomato, 1 can with juices

QUICK AND EASY VEGETARIAN TAMALE PIE WITH BROWN BUTTER CORNBREAD CRUST RECIPE

Quick and Easy Vegetarian Tamale Pie With Brown Butter Cornbread Crust Recipe image

I've been on a tamale pie kick ever since updating my mom's classic recipe a couple months ago by adding a brown butter cornbread crust. Essentially an olive-packed chili baked underneath a sweet cornbread crust, it's one of the all-in-one comfort classics that never fails to bring big smiles and full bellies in its wake. This 100% vegetarian version is no different.

Categories     Entree     Dinner     Lunch     Cornbread     Mains     Soups and Stews

Time 1h

Yield 6

Number Of Ingredients 33

1/4 cup extra-virgin olive oil
1 cup fresh corn kernels from 1 to 2 ears of corn
1 medium onion, diced
1 red bell pepper, diced
1 poblano pepper, diced
Kosher salt and freshly ground black pepper
4 medium cloves garlic, thinly sliced
1 Serrano pepper, minced
1 tablespoon ground cumin (preferably from whole seeds)
1 teaspoon ground coriander (preferably from whole seeds)
1 teaspoon dried oregano
3 tablespoons ancho chili powder
1 cup pitted green olives, sliced
1 tablespoon soy sauce
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can red kidney beans, drained and rinsed
1 (28-ounce) can whole peeled tomatoes, drained and coaresly crushed with your hand
4 ounces grated sharp cheddar cheese (about 1 cup)
3 scallions, thinly sliced
1/2 cup fresh cilantro leaves and fine stems, minced
For the Brown Butter Cornbread Crust:
6 talespoons unsalted butter
1 cup (about 5 ounces) fine yellow cornmeal
1 cup (about 5 ounces) all-purpose flour
4 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
2 eggs
6 ounces (about 3/4 cup) sour cream
4 ounces (about 1/4 cup) cultured buttermilk
1/2 cup thinly sliced scallions
1 red jalapeño pepper, finely minced
Sour cream, for serving

Steps:

  • Adjust oven rack to center position and preheat oven to 425°F. Heat oil in a large Dutch oven, or saucepan over high heat until lightly smoking. Add corn and cook, stirring occasionally, until corn is well charred in spots, about 4 minutes. Add onion, bell pepper, and poblano pepper, season with salt and pepper, and cook, stirring, until softened but not browned, about 3 minutes.
  • Add garlic, Serrano pepper, cumin, coriander, oregano, and chili powder and cook, stirring, until fragrant, about 30 seconds. Add olives, soy sauce, tomatoes, black beans, and kidney beans. Bring to a simmer and adjust heat to maintain. Cook, stirring occasionally, until thick and fragrant, about 20 minutes. Stir in grated cheese, scallions, and cilantro and season to taste with salt and pepper. Set aside.
  • For the Brown Butter Cornbread Crust: Heat butter in a 12-inch cast iron or stainless steel skillet over medium heat until melted. Continue to cook, swirling pan gently until butter is nutty-smelling and solids are a toasty brown. Transfer to a heatproof cup or bowl and let rest until slightly cooler, about five minutes.
  • Combine cornmeal, flour, sugar, 1 teaspoon kosher salt, baking powder, and baking soda in a large bowl. Combine eggs, sour cream, and buttermilk in a second bowl and whisk until homogenous. Whisking constantly, slowly drizzle in reserved browned butter. Whisk wet ingredients into dry ingredients until homogenous. Fold in scallions and jalapeño pepper.
  • Transfer bean mixture to a large cast iron skillet. Using a large spoon, place small dollops of the cornbread batter mixture on top of the bean filling, then use the back of the spoon to spread it into an even layer. Transfer the skillet to the oven and bake until pale golden brown and a skewer inserted into the cornbread comes out clean, about 20 minutes.
  • Let cool 15 minutes, then serve with sour cream.

  • Pick through the beans picking out any shriveled beans or small stones. Rinse the dry beans and place them in the cook-pot of a slow cooker. If using dry kidney beans, soak/boil them according to FDA's guidelines below in the notes (and make sure they're fully cooked) before adding them to the soup or use one can (drained) of already cooked kidney beans. Add them to the crock during the last 30 minutes of cooking. To the beans add the onion, bell pepper, cumin, oregano, chili powder, black pepper, salt, bayleaf, garlic, jalapeno, chipotle pepper (if using), tomatoes, tomato paste and water. Stir thoroughly and lid.
  • Cook Beans (soaked or unsoaked):Be sure to check your crock pot manufactures owners manual regarding cook time for beans. Use these times as a guide. On High: 6 - 7 hoursOn Low: 7 - 8 hours
  • About 15 minutes before serving, mix the masa harina with hot water until smooth and pour it into the chili. Stir. The chili will begin to thicken during the last minutes of cooking. The chili is done when the beans are tender, flavors are concentrated and the chili has thickened. Time to cook this crock pot vegetarian chili varies depending on bean age, the older the bean the longer the cook. It’s possible that a bean can be so old and dry it won’t cook through. I do not recommend eating under-cooked beans. Temperature variations range among slow cookers - check your manufactures owners manual. Use the cook times as a guide.Give it a good squeeze of lime juice, about 1/2 a lime, and taste for salt adjustment. If a thinner chili is desired, simply thin with water.
  • Ladle into soup bowls and garnish with any toppings you like: avocado, jalapeño, cilantro, sour cream, scallions, diced onions, lime wedges, sour cream or shredded cheddar.
