VEGAN YOGA ENERGY BITES

Steps:
- Mix peanut butter and agave syrup together in a bowl. Add protein powder and mix well.
- Grind graham cracker crumbs, flax seeds, and cocoa nibs in a food processor to a coarse, sand-like consistency. Add to the bowl with the peanut butter mixture.
- Grind sesame seeds, sunflower seeds, and pumpkin seeds in the food processor to a coarse consistency. Add to the bowl with the peanut-flax seed mixture. Add puffed quinoa and walnuts. Add figs. Stir to combine. Form tablespoonfuls of the mixture into 1-inch balls.
- Place coconut in a bowl. Roll balls in coconut and place on a baking sheet or plate. Freeze until firm, about 15 minutes. Store in the freezer.

Still working on the ultimate after-workout snack and I'm gettin' close! Each of the versions I've made have been delicious but variety is the spice of life so why stay snack stagnant?!

Steps:
- Heat a skillet over medium-low heat; cook and stir pecans until toasted and fragrant, about 5 minutes.
- Combine toasted pecans and canola oil in a mini food processor and pulse until smooth (a little graininess is fine).
- Mix pecan mixture, maple syrup, cocoa powder, and hemp protein powder together in a bowl. One by one, add apple slices, flax seeds, graham cracker crumbs, sunflower seeds, walnuts, and puffed quinoa.
- Whisk almond flour and cinnamon together in a small bowl.
- Form pecan mixture into 1-inch balls and roll in the cinnamon mixture until coated. Freeze energy bites until firm, at least 1 hour.

- Add dates and coconut oil. Process for 2-3 minutes or until mixture is well blended. Note: depending on how sharp your blade is, you may need to stop, stir, and blend again every 30 seconds or so, so everything gets mixed equally.
- The mixture should now be sticky enough to form into balls. You can test this by squeezing between your fingers. It should stay together, but not stick to your hands, or fall apart. If it's not staying together very well, add a little more coconut oil and process again. If it's too sticky, you can add a bit of oatmeal or even unsweetened coconut and re-blend. (**see tip in notes below). Once ready, form into 1 1/2 inch balls. Note: I've found that you can't really "roll" these between your hands to form the balls; you need to shape them, pressing with your hands until they are in ball form. As you form them together, place each ball onto a plate, or a baking sheet covered in parchment paper (or you can use a silicone baking mat). Any flat surface will do.
