1 and 1/2 cups all-purpose flour
2 and 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
zest of 1 orange
1 and 1/2 cups bran flakes cereal
1 and 1/4 cups almond milk, divided
1/2 cup freshly squeezed orange juice or unsweetened applesauce
1/4 cup melted coconut oil
3/4 cup coconut palm sugar
1/2 teaspoon apple cider vinegar
1 cup blueberries

Steps:

  • Preheat oven to 350F/180C for 15 minutes. In a small bowl stir together 1/2 cup of milk and vinegar; set aside to curdle. Line a 12 muffin tin with paper liners.
  • In a medium bowl, sift together the dry ingredients listed in Part 1.
  • In a large bowl, stir together the cereal, 3/4 cup of milk and orange juice. Add the curdled milk, brown sugar and melted coconut oil too.
  • Incorporate the dry flour mix into the wet ingredients, stirring until just combined. Add in the blueberries too. As always remember to toss the fruit with some flour before adding it to the batter. If the batter is too thick add a tablespoon or two of water/milk.
  • Spoon in the batter in the prepared muffin tin and bake for about 22-25 minutes or until a toothpick inserted in the middle of the muffin comes out clean.
  • Mine was done in 23 minutes. Cool the pan on a wire rack for 5 minutes before removing the muffins out of the tin. Serve it warm or once cooled.

Steps:

  • Mix 1 Tbsp ground flax seed with 3 Tbsp water. Set aside.
  • In one bowl combine all the dry ingredients and mix together.
  • In another bowl combine wet ingredients and stir around.
  • Add wet ingredients to dry ingredients together with 1 cup blueberries and mix until combined but not smooth. Do not over mix, few lumps are absolutely fine.
  • Spoon mixture into greased muffin pan filling each tin 3/4 full. Bake 20 min in the oven preheated to 375°F.

1 1/2 tsp vanilla extract

Steps:

  • Preheat oven to 350F degrees. Line muffin tins with liners.
  • In a stand mixer, combine the flour, wheat bran, brown sugar, baking soda, and salt.
  • Add the almond milk, applesauce, ground flaxseed, and vanilla extract.

1 teaspoon salt
4 teaspoons baking powder
1/4 cup ground flax seeds (optional)
2/3 cup canola oil
1 cup agave nectar or 1 cup honey
1 mashed banana (or 1/2 c. soymilk)
1 cup blueberries (fresh or frozen)
1/2 cup whole wheat flour
1/4 cup oat bran (or ground oats)
1/2 cup sugar (turbanado sugar works best)
1 tablespoon ground cinnamon
1/2 cup margarine (earth balance works well) or 1/2 cup coconut oil (earth balance works well)

Steps:

  • Combine all dry muffin ingrediends in a large bowl.
  • Add wet ingredients and stir just until mixed. If mixture seems too thick, add a couple tablespoons soymilk or water.
  • Add in blueberries.
  • Grease muffin tins and fill about 3/4 full.
  • Mix together crumb topping with your hands and sprinkle some onto each muffin - enough to cover the top.
  • Bake at 400 degrees for 15-20 minutes or until slightly golden on top and done.

Steps:

  • Preheat oven to 400°F and line muffin trays (I like to use silicone liners )
  • Add all of the dry ingredients to a large bowl (except blueberries)
  • Add all of the wet ingredients to another bowl or jug and stir them together well.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not over mix as this can affect the muffins finished texture.
  • Add the blueberries and stir until evenly distributed.
  • Spoon carefully into the muffin liners and bake for around 20 minutes or until a tooth pick / skewer can be inserted into the middle and come out almost clean.
  • Remove from the oven and cook on cooling trays .

1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon fine sea salt
1 cup mashed overripe banana (about 2 large bananas)
½ cup maple syrup
⅔ cup unsweetened non-dairy milk
1 tablespoon almond butter or other nut/seed butter
1 teaspoon apple cider vinegar
1 cup blueberries, fresh or frozen, plus extra for tops of muffins (See Notes for tips.)

Steps:

  • Locate a standard non-stick muffin pan. Arrange oven rack so that the muffins will be in the center of the oven. Preheat oven to 375 degrees F (190 C).
  • In a large mixing bowl whisk together the dry ingredients. In a smaller bowl mash the bananas and make sure you have 1 cup. Add the remaining wet ingredients to the bananas and mix very well.
  • Pour wet ingredients into dry, and stir until just combined, careful not overmix. The batter will be very thick. Fold in the blueberries.
  • Divide the batter evenly among the muffin cups, only filling them about 2/3 full. If desired, lightly press 2 or 3 extra blueberries onto the top of each muffin. Bake for 18 to 20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow muffins to cool in the pan for 10 minutes, then transfer to a cooling rack.
