A simple vegan coleslaw without any mayo. I add caraway seeds to my coleslaw as it helps with digestion. It tastes best after it has marinated for a few hours.

1 medium head cabbage, finely sliced
2 large carrots, peeled and shredded
1 teaspoon salt
6 tablespoons sunflower seed oil
4 tablespoons white vinegar
1 tablespoon confectioners' sugar
1 teaspoon caraway seeds
freshly ground black pepper to taste

Steps:

  • Combine cabbage and carrots in a large bowl, season with salt, and allow to sit for 30 to 45 minutes.
  • Squeeze out as much liquid as possible from cabbage and carrots with your hands; drain well.
  • Stir together oil, vinegar, confectioners' sugar, caraway seeds, and pepper and pour over the salad. Mix well. Allow to sit to intensify the flavor, about 4 hours.

Asian slaw, so refreshing, zesty, and flavorful. Perfect to eat as a nutritious summer side dish, it's super light and ready in 15 minutes!

2 tbsp vinegar, I used rice vinegar
2 tbsp oil, I used canola oil
2 tbsp soy sauce or tamari
1 tbsp maple or agave syrup
½ tsp sesame oil, optional
¼ tsp garlic powder
¼ tsp ginger powder
3 cups green cabbage (210 g), thinly sliced
1 cup red cabbage (70 g), thinly sliced
1 cup carrots (110 g), thinly sliced
1 cup red bell pepper, thinly sliced
3 green onions, thinly sliced
¼ cup fresh cilantro (4 g), chopped
1 tsp sesame seeds, for garnish, optional

Steps:

  • Add all the ingredients to a jar, top with the lid, and shake until the ingredients are completely mixed together. You can also add them to a small bowl and mix with a fork or a whisk until well combined. Set aside.
  • Combine all the slaw ingredients (except the sesame seeds) in a large bowl.
  • Toss the slaw with the dressing until well combined.
  • Garnish with the sesame seeds and serve immediately with baked tofu, fried tofu, tempeh, seitan, or even tempeh bacon.
  • Best when fresh, keep the leftovers in an airtight container in the fridge for up to 3 days (dressing separate from the slaw).

1 cup fresh pineapple chunk
green cabbage, 1/2 head, chopped or shredded
1 carrot, grated
1 green peppers or 1 red pepper, diced
1/2 onion, chopped
2 tablespoons rice vinegar
1/2 cup mayonnaise
1 tablespoon prepared mustard
salt and pepper, to taste

Steps:

  • Toss together the pineapple, cabbage, carrot, green or red pepper, and onion.
  • Stire the rice vinegar into the mayonnaise and mustard.
  • Pour the dressing over the slaw and toss well.
  • Season with salt and pepper.

1/2 cup green peas (fresh or frozen)
3 cups cabbage, shredded
1 cup carrot, julienned
3/4 cup fresh pineapple chunk
1/4 cup raisins
1/4 cup raw sunflower seeds
3 tablespoons unsweetened flaked coconut
1/2 cup raw cashew nuts
1/2 lime, juiced
1/2 teaspoon salt
pepper

Steps:

  • Cook green peas in boiling water until soft.
  • In a bowl, add green peas, cabbage, carrot, pineapple, raisins, sunflower seeds, and coconut flakes.
  • In a blender, add cashew nuts, lime juice from a half lime and 1/4 cup water and blend.
  • Turn off the blender, scrape the side, add more water if it's too thick, and blend until it is smooth and creamy.
  • Add the dressing to the vegetable bowl and mix well. Season with salt and pepper.
  • Infuse love, chill if desired, and serve!
