One 8-ounce block sharp Cheddar, shredded
One 8-ounce package cream cheese, cubed
1/4 cup mayonnaise
1/4 cup heavy cream
1/4 cup pimiento peppers, chopped
2 tablespoons pickle relish
1 teaspoon onion powder
1/2 teaspoon garlic salt
A few dashes hot sauce, optional
Freshly ground black pepper
Crackers, vegetables and toast, for serving

Steps:

  • Combine Cheddar, cream cheese, mayonnaise and heavy cream in a medium saucepan over medium-low heat. Stir until melted, about 4 minutes. Stir in pimientos, pickle relish, onion powder, garlic salt, hot sauce, if using, and some black pepper. Transfer to a serving dish and serve with crackers or favorite dippers.

1 can (15 ounces, or 420 g) white beans, drained and rinsed, or 1 1/2 cups (340 g) homemade
3/4 cup (180 ml) water
2 tablespoons (12 g) vegan chicken-flavored bouillon
1 jar (2 ounces, or 56 g) diced pimentos, drained
2 cups (225 g) shredded Daiya vegan cheddar cheese
2 tablespoons (28 g) vegan mayonnaise or olive oil
1/2 teaspoon stone-ground mustard
Salt and pepper, to taste

Steps:

  • Add the beans and the water to a food processor or blender and purée until smooth. Slow Cooker Method: Oil the crock of a 1 1/2 to 2 quart slow cooker. Add the purée and the remaining ingredients and cook on low for 1 to 1 1/2 hours, or until the cheese is fully melted. You will need to stir it a few times (about every 20 minutes) during cooking to fully incorporate the cheese as it melts. If you prefer a thinner fondue, just add more water until it is the consistency that you desire. Stove-Top Method Add the purée and the remaining ingredients to a saucepan and cook on low until the cheese is fully melted. You need to stir the whole time to make sure it doesn't burn on the bottom.

  • If you need to cook the potato, you can microwave it or put it in a pot over the stove and cook covered for about 20 – 25 minutes. If you do this it will have more moisture and the sauce will be a touch thinner but you can cook it down at the end to get it thicker if you prefer. You can also put the cashews in to boil instead of soaking them overnight if you don't have a high speed blender.
  • Sauté the chopped onion and garlic with a drizzle of oil or broth until browned. About 5 minutes.
  • Add the white wine and cook until slightly reduced. You still want liquid, just want it to reduce a touch, about 1/4 max. Should take 3-5 minutes.
  • Put the onion/garlic/wine mix along with the rest of the ingredients (make sure to measure out the potato) into a blender and blend on high until creamy and smooth.

Add a little salt and bring the water to a boil, then simmer over low-medium heat, covered, for around 15 minutes. Meanwhile, chop the bread and prep the other ingredients (steamed veggies, etc.). After 15 minutes drain the water and transfer the potatoes and chickpeas to a blender.
  • Pour the sauce into the pan (you can use the same one as before) and cook the sauce over medium heat for a couple of minutes or until it's a little stretchy and elastic. Taste it and add more seasonings if needed.
