Kiwi Sorbet is light, refreshing, and makes a great summer snack. This recipe is made with only two ingredients - kiwi and lime! This has to be one of the easiest kiwi recipes out there.

3 kiwis
½ tbsp lime juice

Steps:

  • Peel the kiwis and slice them into rounds. Place the slices on a lined baking sheet and pop them into the freezer until solid - approximately 1-2 hours.
  • Transfer the frozen kiwi slices to a food processor or high-speed blender and add the fresh lime juice. Pulse the fruit until it reaches the consistency of sorbet. You may have to scrape the sides down a few times to break up any chunks.
  • Serve immediately or freeze. If you are freezing it will need 15 - 20 minutes to thaw enough to eat.
  • This recipe can easily be doubled, tripled, or quadrupled!

1 Kiwi (peeled and quartered)
3 Tbsp. lemongrass mint white balsamic vinegar (or plain white balsamic vinegar)
1/4 to 1/2 tsp. Dijon mustard
1/2 Tbsp. thin sliced shallot (or red onion)
1/4 tsp. pepper
1/4 c. olive oil

Steps:

  • Place all ingredients in a small bowl and blend together with an immersion blender till smooth. Add more vinegar or oil if it seems too thick.
  • Serve immediately or refrigerate.

No Bake Kiwi Cheesecake (Vegan) image

This vegan no bake cake with kiwis is one of my favorite vegan cakes! It doesn't contain any refined sugars and it's super easy to make. Plus, this kiwi cake is awesome for hot summer days when you feel like eating cake but don't want to create additional heat by turning on the oven. This recipe requires a 7-inch spring form pan. (This equals a 18 cm spring form).

1 cup almonds
1 cup dates
2 cups cashews (soaked overnight or at least for 4-6 hours)
3/4 cup thick coconut milk (full fat)
2 tablespoons fresh lime juice
2 tablespoons rice syrup or agave
10 fresh mint leaves
1 green kiwi
1 green kiwi
2 SunGold kiwis
fresh mint
blueberries (optional)
raspberries (optional)

Steps:

  • Place the almonds into a food processor and blend until they're nicely crushed. Then add the date and blend again until a sticky mixture forms.
  • Press int the base of a spring form pan (7 inch) and put it in the freezer.
  • Then make the cheesecake layer: Drain the cashews and put them together with the coconut milk, the lime juice, and the agave in a food processor and blend until it becomes creamy and smooth.
  • Pour 3/4 of the cashew mixture evenly on the base layer and put it back in the freezer. Leave the rest in the blender and add one kiwi and about 10 leaves of fresh mint. Blend again until you get a light green and smooth mixture. Evenly pour on the first cheesecake layer and pt it back in the freezer for 2-3 hours.
  • After the time in the freezer, top the cheesecake with the kiwis and garnish with blueberries, raspberries, and fresh mint leaves. If you want you can also add a few drizzles of agave or rice syrup on top. The cake is best when you allow it to warm up for about 20-30 minutes before serving. Enjoy!

Pinch Black Pepper

Steps:

  • Add all the ingredients to a measuring jug and whisk together with a small whisk until well combined.
  • Taste test and adjust as needed with a little more salt and pepper for more flavor. If you use a different vinegar other than red wine vinegar, then you may want to add a teaspoon of maple syrup for flavor balance.
  • Pour over your salad and enjoy!

Steps:

  • Gather the ingredients.
  • In a small bowl, combine minced garlic, Dijon mustard, olive oil, and lemon juice.
  • Use a fork or small whisk to whisk everything together until fully incorporated and the olive oil won't separate. This will probably take a minute or two longer than you think.
  • Stir in finely chopped fresh basil and parsley and combine well.
  • Taste the dressing, and add a bit of salt and pepper to taste if you'd like. Stir or whisk together again to combine.
