I adapted this recipe for ZWT #9 and like it so much, I 'm entering my adaptation to make again. The original recipe #502895 is probably equally wonderful, but this worked so well I didn't miss the meat products. It has a nice tang from the lemon and was very filling.

7 cups chicken broth
1/2 cup fresh lemon juice
3/4 cup shredded carrot
3/4 cup chopped onion
3/4 cup chopped celery
6 tablespoons vegetable stock base (such as Better than Bouillon)
1/4 teaspoon pepper
1/4 cup canola oil
1/2 cup silken tofu
1/4 cup all-purpose flour
1 cup cooked brown rice
1 cup diced vegan chicken meat
16 slices lemons

Steps:

  • In a large pot, combine the vegetable broth, lemon juice, carrots, onions, celery, soup base, and pepper. Bring to a boil on high, then simmer for 20 minutes.
  • Blend the oil, tofu and the flour together in a food processor. Put the tofu mixture in a small bowl and ladle some soup broth into it. Stir mixture until blended, then gradually add it back to the soup mixture. Simmer for 10 minutes more, stirring frequently.
  • Add the cooked rice and vegan chicken cubes. Ladle hot soup into bowls and garnish with lemon slices.

This was given to me by the local Greek restaurant owner in my town. It is her own personal way of creating this light but filling soup.

1 (4 lb) package chicken wings
9 cups water
1 cup rice
2 eggs
2 lemons, juice of

Steps:

  • Boil the chicken until done, 15-20 minutes. Remove the chicken from the stock and debone. Hold chicken meat on the side.
  • Add the rice to the chicken stock and cook at a boil for ten to fifteen minutes, or until done.
  • Meanwhile, beat two eggs in a bowl and add the lemon juice. Measure one cup of hot stock. Add slowly to the bowl containing the eggs and lemon and continue to beat until combined.
  • Add egg mixture into stockpot. Add chicken meat, stir well and serve. Makes 6 servings.

1/2 white onion (diced)
2 large carrots (diced)
1 zucchini (chopped)
2 celery stalks (chopped)
4 cloves garlic (minced)
2 tbsp olive oil
2 cups cauliflower rice (OR 1 cup uncooked orzo)
1 15 oz can of chickpeas (drained and rinsed)
3 small Yukon golden potatoes (cubed)
5 cups veggie broth
2 tsp salt & pepper
1 tbsp fresh dill and parsley
3 egg yolks
3 lemons

Steps:

  • Sauté white onion, large carrots, zucchini, celery stalks and cloves garlic in olive oil over medium heat.
  • After about 5 minutes, add cauliflower rice OR uncooked orzo, a can of chickpeas and Yukon golden potatoes.
  • Add veggie broth, salt & pepper, and fresh dill and parsley.
  • Bring to a boil then reduce to a simmer and cook covered for 45-1 hour.
  • Set aside 1 cup of hot broth when the soup is cooked and slowly add it to the egg yolks (1 tbsp at a time) while whisking vigorously. This prevents the eggs from scrambling when you add it to the soup!
  • Add the egg mixture to the soup along with the lemon juice and combine. Taste it and add more salt and pepper as needed. Serve with fresh parsley and dill and drizzle with a little olive oil! YUM!

This vegan avgolemono soup is a plant-based version of traditional Greek Easter soup. It's made with lots of lemon, rice or orzo, and dill. It's bright and hearty, and it tastes even better after a day or two in the fridge!

2 tablespoons olive oil
1 onion, chopped
2 carrots, chopped
1 stalk celery, chopped
2 cloves garlic, minced
3/4 cup long-grain white or brown rice ((135g; substitute 2/3 cup/120g orzo))
7-8 cups vegan chicken-style broth ((1.65-1.9L; see recipe instructions))
1/4 teaspoon fine sea salt
1/4 cup freshly squeezed lemon juice (60mL)
1 1/2 tablespoons white miso ((22g))
2 tablespoons tahini ((30g))
3 tablespoons nutritional yeast powder ((24g))
1/3 cup packed, chopped fresh dill ((7g))
freshly ground black pepper, to taste

Steps:

  • Heat the olive oil in a large, heavy-bottomed pot over medium heat. Add the onion, carrots, and celery. Cook the vegetables for 8 minutes, or until the carrots are tender. Add the garlic and for one more minute, stirring constantly.
  • Add the rice to the pot. Swirl it around for a minute to toast it, then add 7 cups (1.65L) of the broth and the salt. Bring the mixture to a boil and turn the heat to low. Cover and simmer the soup for 25 minutes if using white rice or orzo. Simmer for 40 minutes if using brown rice, or until the rice is tender.
  • In a small mixing bowl, whisk together the lemon juice, miso, tahini, nutritional yeast, and 1/4 cup of hot broth from the soup. Add this slurry back to the soup. Stir well. Next, stir in the dill.
  • Simmer the soup, uncovered, for a few more minutes. If the soup is too thick for your liking, add the additional 1 cup/240mL broth. Taste the soup and adjust the salt and lemon as needed. Add freshly ground black pepper to taste. Serve

2 Tbs Olive Oil
1 large Onion, diced
1 tbsp. minced garlic
4 cups Chicken Broth
3 Bay Leafs
½ tsp Salt
½ tsp Black pepper
1 tsp. lemon pepper seasoning
6-8 chicken tender, boneless and skinless
½ cup Arborio Rice
Juice from 2 Lemon
3 Eggs
¼ cup chopped fresh Dill Weed

Steps:

  • In Dutch Oven add olive oil and diced onion. Saute the onions over med/high heat 5-6 min until Onions are translucent. Add minced garlic and saute' until fragrant.
  • Add Chicken Broth, Bay Leaf, lemon pepper, Salt, Pepper, and chicken. Bring to boil over med/high heat for 2 minutes. Reduce heat to low and simmer for 20 min.
  • Remove chicken tenders and shred using a fork. Add Chicken back to the dutch oven.
  • Add your un-cooked rice to the soup mixture. Cover and cook for 20 minutes. Remove the Bay Leafs.
  • In a small bowl add your eggs and lemon juice. Whisk to combine.
  • Carefully add in 1 ladle of the broth to the egg mixture, whisk to combine.
  • Add egg mixture to the soup mixture. Stir to combine. Add in minced dill. Stir to combine. Garnish with Lemon Slices.

  • HEAT. Add oil to a soup pot and heat over low heat. Add onions and a generous pinch of salt and cover to let sweat and to keep onions moist. Sweat until the onions are translucent and soft, but have not started to brown, about 5 minutes. Then up the heat to medium and sauté until just starting to turn lightly brown, about 3 minutes. The onions should taste sweet and this is important to off-set the tartness from the lemons.
  • COMBINE. Mix 1 teaspoon of no-chicken broth paste with 6 cups warm water and stir until well combined. Add in the six cups of no-chicken broth to the onions, and bring to a boil. Then turn the heat down and let it simmer for about 10 minutes.

  • Into a large stock pot add your olive oil, onions, carrots, celery and garlic. Cook on low heat for 10 minutes, make sure to stir occasionally to avoid any browning or burning. You don’t want the vegetables to develop any colour, just want them translucent and soft.
  • Once your veggies have cooked down for 10 minutes you can add your veg stock cubes, water, nutritional yeast and tamari or soy sauce.
