3 tablespoons all-purpose flour
3 tablespoons vegan chocolate chips
2 tablespoons white sugar
2 tablespoons vegetable oil
1 tablespoon unsweetened cocoa powder
1 tablespoon almond milk
½ teaspoon vanilla extract
½ teaspoon baking powder

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix flour, chocolate chips, sugar, oil, cocoa powder, almond milk, vanilla extract, and baking powder together in a bowl. Place dough on a flat work surface and split into 4 pieces. Flatten and mold cookies into the desired shape. Arrange cookies on a small baking sheet.
  • Bake in the preheated oven until edges are set, about 5 minutes. Cool until firm, 2 to 3 minutes.

1 1/4 cups (160 g) organic flour or gluten free 1-to-1 flour
1/2 cup (50 g) natural cocoa powder
1/2 tsp baking soda
1/2 tsp sea salt
1/2 tsp espresso powder (optional, but highly recommended)
1/2 cup (115 g) vegan butter or coconut oil, room temperature*
1/3 cup (83 g) unsweetened applesauce, room temperature
1/2 cup (100 g) granulated sugar
1/2 cup (100 g) brown sugar
1-2 tbsp dairy free milk, if needed for mixing batter
3/4 cup vegan chocolate chips

Steps:

  • Preheat the oven to 350F and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, sea salt, and optional espresso powder.
  • In a large bowl, use a hand mixer to cream together the vegan butter, granulated sugar, and brown sugar until fluffy, about 2-3 minutes. Then add in the applesauce, and mix again until incorporated. Add in the flour mixture, and use a rubber spatula to gently fold the dry into the wet, being careful to stop mixing just before the dry is completely mixed. in
  • Fold in chocolate chips and/or chocolate chunks, and use a tablespoon or two of dairy free milk here as needed to fold in the chips until they're evenly distributed in the dough.
  • if your dough is too sticky or it's a super hot day, you can chill the dough in the refrigerator for 10 minutes.
  • Scoop about 1 1/2 tbsp of dough and roll it into a ball. Place it onto the baking sheet and repeat for the remaining dough, spacing the cookies about 2 inches apart. Bake the cookies for 11-13 minutes (I bake mine for exactly 12 minutes), then remove from the oven.
  • Once the cookies have fully baked, remove the pan from the oven and tap the pan onto the countertop a few times (I do about 2-3 times) to create a brownie crinkle.
  • Let the cookies cool on the baking sheet for 10 minutes. You can add additional chocolate chips if you'd like on top.
  • store any leftover cookies in an airtight container and in the fridge for up to 5 days or in the freezer for up to 3 months.

1/2 cup coconut oil, solid but scoop-able
1 and 1/4 cups light brown sugar, packed
2 teaspoons vanilla extract
1/4 cup coconut milk (I like to use the thicker Thai variety, but any coconut milk will work)
1/4 cup unsweetened applesauce
2 and 1/3 cups all-purpose flour (be sure not to pack your flour)
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips (use vegan chocolate chips if vegan), divided
Flaky sea salt, optional

Steps:

  • Preheat oven to 375 degrees (F). Line a large baking sheet with parchment paper; set aside.
  • In a large bowl whisk together the coconut oil, brown sugar, and vanilla, beating until well combined. Add in the coconut milk and applesauce and whisk until well combined; set aside. In a separate bowl combine the flour, baking soda, and salt; whisk well to combine.
  • Add the dry ingredients into the wet mixture and, using a wooden spoon or very sturdy spatula, stir until ingredients are combined. The batter will be very thick! Fold in 1 and 3/4 cups of the chocolate chips.
  • Scoop three tablespoon sized mounds of dough onto the prepared cookie sheet, leaving a few inches between each cookies for spreading. Bake for 9 to 10 minutes, or until the edges are golden and the centers have set. Press remaining chocolate chips on top of warm cookies, and sprinkle with sea salt, if using. Cool cookies on the baking sheet for 15 minutes before transferring them to a cooling rack.

1 1/2 tbsp ground chia seeds (+ 1/4 cup (60 g) water)
1 scant cup ground sunflower seeds (or almond flour)
3/8 cups date sugar (or organic cane sugar)
5 tbsp cocoa powder
1 tsp baking powder
1/4 tsp salt
1/4 tsp espresso powder ((optional, but recommended))
3 1/2 tbsp nut/seed butter (of choice)
1 1/2 tbsp coconut oil (melted)
1 tsp vanilla extract
1/3 cup dairy-free chocolate chips (or chocolate chunks (or both))

Steps:

  • Please measure all ingredients in grams (use my written measurements) on a kitchen scale, if possible. Also, watch the video in the post for easy visual instructions.To a small bowl add ground chia seeds (or ground flax seeds) and 1/4 cup water. Stir to combine and set aside. Also, preheat the oven to 350 °F (175 °C) and line a baking sheet with parchment paper.
  • To a medium-sized bowl (or food processor) add ground sunflower seeds (or almond flour), cane sugar (or granulated sugar of choice), cocoa powder, baking powder, salt, and espresso powder. Mix until there are no lumps.
  • Add nut/seed butter of choice, coconut oil, vanilla extract, and the chia seed mixture. Stir (or blend, if using a food processor) until combined.
  • Finally, add the dairy-free chocolate chips (or chopped chocolate) and mix with your hands until you have a smooth dough.
  • Divide the dough into 8 pieces (each weighing about 50 grams / or make 10 smaller ones) and roll each piece with your hands into a ball. You can also use an ice cream scoop.
  • Place the cookie dough balls on the prepared parchment paper and flatten them with your hand. Bake in the oven for 14-16 minutes. They will be still soft when you take them out but firm up once cooled. Enjoy!

1/2 cup Vegan Butter ((112g) )
1/2 cup White Granulated Sugar ((100g) )
1/2 cup Light Brown Sugar ((100g) )
1 tsp Vanilla Extract
1 cup All Purpose Flour ((125g) )
2/3 cup Cocoa Powder ((56g) Unsweetened)
1 tsp Baking Soda
1/4 tsp Salt
1 Tbsp Soy Milk (or other non-dairy milk)
1 cup Vegan Chocolate Chips ((175g) + more for pressing into the tops of the warm cookies after baking)

Steps:

  • Preheat the oven to 350°F (180°C).
  • Add the vegan butter and brown and white sugar to an electric mixing bowl and cream together. Add the vanilla and mix in.
  • Sift the flour and cocoa powder into a mixing bowl and mix in the baking soda and salt.
  • Add the dry ingredients to the wet, mixing in by hand until crumbly.
  • Add the 1 Tbsp soy milk or other non-dairy milk and mix into a thick cookie dough.
  • Add the chocolate chips and mix in. Your cookie dough will be very thick, but sticky enough to easily roll into balls.
  • Roll into balls and space them evenly on a parchment lined baking tray. Aim to get 20 cookies from the batch.
  • Bake for 10 minutes. The edges will be firm but the cookies will still be soft in the middle. This is fine, they will firm up as they cool.
  • Press in a few more chocolate chips to the top of the cookies as they come out of the oven.
