Ingredients

1x 400g tin chickpeas, drained
1 tbsp vegetable oil
1 red onion, peeled and finely chopped
1 clove garlic, peeled and crushed
2 tsp mild curry powder
40g (¼ cup) sultanas, soaked in hot water for 10 minutes and drained
½ cup vegan mayonnaise
1 tbsp mango chutney
Sea salt and black pepper, to taste
8-12 slices fresh, crusty bread
Lettuce leaves
Sliced red onion

Steps:

Heat the oil in a frying pan and add the chickpeas, onions and garlic with some seasoning. Gently cook for a few minutes until the onions begin to soften, before adding the sultanas and curry powder. Continue to cook, stirring, until the spices are fragrant. Leave to cool.
Once cooled, lightly mash the chickpeas so that some still remain whole. Stir in the mango chutney, mayonnaise and season to taste.
Spread the mixture liberally over the bread, adding lettuce and onion. Serve immediately.

When I first went vegetarian, I really missed coronation chicken sandwiches and decided to experiment with different ideas. This is really yummy, and I prefer it to the original! Great as a sandwich filler, on jacket potatoes, with salad or whatever you want. Can also add 1/2 cup grated carrot for texture and more nutrition, or add more apricots.

Ingredients

400 g chickpeas, drained
1/2 cup soy yogurt (more if you want it creamier- it's personal choice!)
1/4 cup mango chutney
1 teaspoon curry powder
1/8 teaspoon pepper
1/4 teaspoon salt
1/4 cup chopped dried apricots (I sometimes soak these first) or 1/4 cup sultana (or both!)
1/2 cup chopped celery (optional) or 1/2 cup chopped apple (optional)

Steps:

Mix all ingredients together and refrigerate before serving. Keeps in fridge 3-4 days.
