VEGAN COLESLAW
A simple vegan coleslaw without any mayo. I add caraway seeds to my coleslaw as it helps with digestion. It tastes best after it has marinated for a few hours.

- Soak cashews. Then drain thoroughly and add to a high-speed blender along with water, maple syrup, mustard, white vinegar, apple cider vinegar, onion, and celery salt (or seeds).
- Blend on high until creamy and smooth, scraping down sides as needed. If too thick, add more water to thin. If too thin, you can compensate by adding more (raw) cashews (they don't need to be soaked).
- Taste and adjust flavor as needed, adding salt and pepper to taste, more celery salt or seeds for more pronounced celery flavor, onion for bite, maple syrup for sweetness, mustard for tanginess, or vinegar for acidity.
- Add carrot and cabbage to a mixing bowl and top with dressing. Toss to combine. Enjoy immediately or store covered in the refrigerator to chill - about 4 hours.

- Add all the ingredients for the dressing into a measuring jug and use a hand whisk to whisk everything together.
- Place the salad bowl into the fridge (covered) and let it sit for at least 1 hour so that the flavors can blend and the vinegar can draw excess water from the cabbage. The salad will be smaller in size when it comes out the fridge than when it went in, this is perfect!

- Add all dressing ingredients to a high-speed blender (discard cashew soaking water). Blend on high until creamy and smooth. Taste and adjust flavors if needed. * Keep in mind, that the flavors will be concentrated, but it will be covering a lot of vegetables.
- To a large mixing bowl, add the cabbage, carrots, and parsley. Toss to combine. Now pour on 1 cup of dressing and toss to coat. Check for desired consistency and add more dressing if needed (I usually add the whole batch). You can always add more after the coleslaw has chilled too.

- Put the aquafaba in a tall measuring cup and blend with an immersion blender for about 10 seconds. With the blender still running, slowly (seriously slowly) drizzle in the oil, moving the bender around as necessary to emulsify the oil and thicken the mayo.
- When the mayo is made, stop the blender and add the remaining dressing ingredients. Blend it all together (it will be liquid enough to pour).
- Pour the dressing over the veggies and toss to combine. This makes quite a “saucy” coleslaw so if you prefer a drier coleslaw, add half the dressing and toss then add more until you’re happy with it.

- In a medium bowl, whisk the ¾ cup vegan mayonnaise, 2 tbsp plus 1 tsp white wine vinegar, 1 tbsp Dijon mustard, 1 tsp celery seed, ½ tsp sugar, and salt and pepper to taste until completely combined. We don’t like to taste the sugar in our slaw, so we only add enough to cut the acidity of the vinegar and mustard. If it tastes too tangy, add another ½ tsp of sugar.
- In a large bowl, add the dressing to the 3 cups of shredded green cabbage, 2 cups red cabbage, 1 ½ cups grated carrot, and most (save a bit for garnishing) of the ¼ cup of chopped parsley and toss to completely combine.

- In the bowl of a salad spinner or other large bowl, toss the cabbage and carrots with sugar and salt.
- Let sit for 5-10 minutes, then rinse under cold water and drain. The salad spinner basket is the perfect tool for this, but a large bowl and colander will work just fine.
- Spin the cabbage/carrot mixture dry using a salad spinner, or spread out over a sheet pan lined with kitchen towels and pat dry.
