Vegan Coconut Caramel image

I use this caramel for making diary-free Twix® bars! It has a delicious caramel flavor, and is just as yummy as all those non-vegan alternatives out there. In fact, I'm not vegan, and I prefer it! You could make it a little harder to make caramel candies, or a little runnier for dipping caramel apples.

1 cup coconut milk
⅓ cup brown sugar
2 tablespoons vegan margarine (such as Earth Balance®)
2 teaspoons vegan margarine (such as Earth Balance®)
1 teaspoon vanilla extract

Steps:

  • Combine coconut milk, brown sugar, 2 tablespoons plus 2 teaspoons margarine, and vanilla extract in a saucepan. Heat on low, watching carefully and stirring occasionally, until mixture registers 236 degrees F (113 degrees C) on an instant-read or candy thermometer. Remove from heat. Mix in any grease that separated from the mixture, or carefully pour it off.

  • Once it boils, reduce the heat to medium-low to simmer for around 35 minutes, stirring occasionally. During this time, the sauce will thicken slightly - it's ready when it begins to cling to the back of a spoon (see step-by-step photos in the post).
  • Add the salt and vanilla extract. Stir again and allow the sauce to cool at room temperature for about 15 minutes before using it as-is. Or transfer it to a clean glass jar (preferable with a lid). Place the jar in the fridge where the sauce will thicken up further.
  • Drizzle over pancakes, waffles, ice cream, cakes, etc. Enjoy! Stir in the refrigerator for up to 2 weeks.

  • To a small blender or food processor (I used the smallest container of a Magic Bullet), add the arrowroot starch, dates, and 3/4 cup (180 ml // as recipe is written // adjust if altering batch size // it will be about 2/3 the total amount) coconut cream or milk. Blend on high until creamy and smooth. If it has trouble blending, add more coconut milk or cream. If you don't have a blender small enough, simply whisk coconut cream and arrowroot starch together, and finely chop/smash your dates and add them in.
  • To a small saucepan, add coconut sugar. Then pour the coconut milk mixture on top. Heat over medium heat and whisk or stir as it comes to a low simmer. As soon as the caramel is glossy and deep golden brown, it's ready. It shouldn't boil and only needs to cook for 2-4 minutes total.
  • Remove saucepan from heat and add remaining 1/2 cup (120 ml // as recipe is written // adjust if altering batch size) coconut milk or cream as well as salt and (optional) vanilla. Stir to combine.
  • Taste and adjust flavor as needed, adding more salt for saltiness, vanilla for vanilla flavor, or coconut cream for a lighter color and more coconut flavor.

  • Combine coconut milk, ginger, and Thai chile in a small saucepan. Cook over low, stirring occasionally, until bubbling around edges, 10 to 15 minutes. Remove from heat. Let stand at room temperature, uncovered, 2 to 6 hours, or let come to room temperature, cover, and refrigerate overnight. Reheat coconut milk mixture over low, stirring occasionally, until thin and pourable, 3 to 5 minutes. Pour through fine wire-mesh strainer into a bowl; discard solids.
  • Lightly grease an 8-inch square baking dish with coconut oil. Line with parchment paper, allowing at least 2 inches of overhang on all sides. Lightly grease parchment paper; set baking dish aside.
  • Return infused coconut milk to saucepan. Add coconut oil, salt, and vanilla. Keep warm over low until ready to use, stirring occasionally to incorporate melted oil.
  • Cook sugar and corn syrup in a large high-sided saucepan over medium, swirling pan often, until mixture is dark amber in color, 16 to 20 minutes. Remove from heat. Carefully add coconut milk mixture, whisking constantly. (Syrup will bubble up vigorously.) Return mixture to heat over medium; cook, whisking constantly, until a candy thermometer registers 248°F (firm-ball stage), 4 to 8 minutes. (Syrup temperature will drop when coconut milk mixture is added but will climb when returned to heat.) Immediately pour mixture into prepared baking dish. Let cool, uncovered, at room temperature, at least 8 hours or up to overnight.

  • 1. Throw all the ingredients into a small saucepan (except for the vanilla, lemon juice and salt) and melt on medium heat. Stir continuously. Once mixture begins to boil, add candy thermometer. Leave alone without stirring until it reaches between the soft and hard ball stages (250-275* F). Please note that it will take awhile for your caramels to get up to 250*. You can always remove them from the heat anywhere after 240* if you don't want to wait--they will be softer and melt a little quicker once it hits room temp but still taste just as good. Know that if you want to wait for 250+* it will spike quickly once it does go past 250* so don't go anywhere! You don't want it to burn.
  • 3. Pour onto parchment paper-lined 8×8 pan (or your choice, depending how thick you want your caramels to be).
