3 cloves garlic, chopped
2 (4 ounce) cans chopped green chile peppers, drained
2 (12 ounce) packages vegetarian burger crumbles
3 (28 ounce) cans whole peeled tomatoes, crushed
¼ cup chili powder
1 tablespoon ground black pepper
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn

Steps:

  • Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers. When vegetables are heated through, mix in the vegetarian burger crumbles. Reduce heat to low, cover pot, and simmer 5 minutes.
  • Mix the tomatoes into the pot. Season chili with chili powder and pepper. Stir in the kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes. Stir in the corn, and continue cooking 5 minutes before serving.

1 yellow onion, chopped
1 large carrot, diced
1 red bell pepper, diced
1 (4 ounce) can mild green chiles
1 medium to large sweet potato, peeled and cut into ½ inch cubes
2 1/2 tablespoons mild chili powder
1 tablespoon cumin
½ teaspoon dried oregano
¼ teaspoon garlic powder
¼ teaspoon paprika
¼ teaspoon cayenne pepper
¼ teaspoon salt
Freshly ground black pepper
1 (28 ounce) can crushed tomatoes (fire-roasted is great)
3/4 cup vegetarian broth (or water, plus more if it needs more liquid)
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained
1 heaping cup frozen sweet corn
To garnish:
Tortilla chips
Lime wedge
Cheese
Avocado
Cilantro
Sour cream/greek yogurt

Steps:

  • Place oil in a large pot and place over medium high heat. Add in garlic, onion, diced carrot, red bell pepper, cubed sweet potatoes and green chiles; saute for 5-7 minutes, stirring frequently.
  • Next add in chili powder, cumin, oregano, garlic powder, paprika, cayenne pepper, salt and black pepper; stir for about 30 seconds.
  • Finally add in crushed tomatoes, broth/water, black beans, kidney beans and corn. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens and flavors come together. Taste and adjust seasonings and salt as necessary.
  • Garnish with anything you'd like. Makes 6 servings, about 1 1/2 cups each.

1 tablespoon garlic powder
2 teaspoons ground paprika
1 teaspoon chile flakes
1 teaspoon coriander seeds, geound in a mortar and pestie
2 tablespoons vegetable oil, divided
2 1/2 pounds ground beef
1 (12-ounce) bottle dark beer, divided
1 sweet onion, diced
2 cloves garlic, chopped
1 red bell pepper, seeded and diced
1 1/2 cups fresh okra, cut into 1/2-inch thick slices
1 to 2 canned chipotle peppers in adobo sauce
1 (14.5-ounce) can diced tomatoes
2 cups low-sodium beef stock
1 (14-ounce) can red kidney beans, drained and rinsed
1/4 bunch fresh cilantro, stems chopped and leaves picked
Kosher salt and freshly ground black pepper

Steps:

  • For the spice mix: In a small bowl, mix to combine the ground cumin seeds, garlic powder, paprika, chile flakes, and ground coriander seeds.
  • For the chili: Heat 1 tablespoon of the vegetable oil in a cast-iron pan over medium-high heat. Add the ground beef to the pan and cook, stirring frequently, until the moisture has evaporated, and the beef is browned. Drain the beef of any fat that has rendered, and deglaze the pan with half of the beer.
  • In a separate pot, add the remaining tablespoon vegetable oil, and add the onion, garlic, peppers, and okra, and saute over medium-high heat. Sprinkle over the chili spice mix, and the chipotle pepper, stirring to combine. Deglaze the pot with the remaining beer, and add the browned beef.
  • Add the diced tomatoes, and stock, and then bring everything to a boil. Place the lid over the pot, and reduce the heat to a simmer. After 1 hour, add in the kidney beans, and cilantro stems. Keep cooking for another 30 minutes over low heat.
  • Adjust the chili's seasonings with salt, and black pepper, to taste. Switch off the heat and garnish with the cilantro leaves.

12 oz pkg Frozen okra
1 tbsp olive oil
1 Red onion
3 cloves ginger
1 inch piece of fresh garlic
4 tsp Coriander powder
1 tsp Turmeric powder
1 tsp Chili powder
2 tsp Smoked paprika
2 tbsp Tomato paste
1/2 cup Coconut milk (I used chaokoh)
1/4 cup Water
Salt and pepper to taste
OPTIONAL - cilantro / chili flakes to garnish

Steps:

  • First off, peel the red onion, garlic cloves, and fresh ginger.
  • Then, chop the onion, garlic, and ginger - but keep onion separated from ginger and garlic.
  • Add oil to a large saute pan and add in the onion. Cook onion on medium heat for 10 minutes, stirring often.
  • Then add in the chopped ginger and garlic and saute about 2 minutes.
  • Add in the coriander, turmeric, chili powder, smoked paprika, and saute about a minute - while mixing well so all ingredients incorporate.
  • Then add in the tomato paste, coconut milk, water, and frozen okra. Give this a good stir then cover and let simmer for about 4- 5 minutes over medium heat.
  • When done, uncover and remove from heat.
  • Season with salt and pepper to taste.
  • Serve garnished with cilantro and chili flakes. Enjoy with rice or roti.

4 pieces okra
2 cloves of crushed garlic
1 white onion, finely chopped
1 sweet pointed bell pepper
1 medium courgette
3 large tomatoes
2 teaspoons chili powder
1/4 cup brown rice
1 cup vegetable stock
1 tablespoon brown sugar
100 g haricot beans (can use black eyed beans or red beans for a more authentic gumbo)
1 large celery, roughly chopped
1 teaspoon dried thyme
1 teaspoon cayenne pepper
sea salt and cracked black pepper for seasoning

Steps:

  • Using a large saucepan, fry the white onion, celery and sweet pointed pepper on a low heat. Once the onion is translucent add one of the crushed garlic cloves.
  • Now add your cayenne and chili spices and your dried thyme, mix in with the fried vegetables and turn off the heat.
  • Add to the pan your cup of vegetable stock along with the chopped tomatoes, chopped courgette, brown sugar and chopped okra. You should wash and scrub your okra thoroughly before chopping and adding to the pan.
  • Wash and drain your haricot beans and your brown rice, add to the same pan as your vegetables and stock, bring the pan to the boil and then simmer gently for 30 minutes, checking frequently.
  • If your rice has absorbed the stock, add water.
  • After 30 minutes, check the rice is cooked through, your vegetables should have started to reduce down and the okra should have thickened the stock, add your second crushed garlic clove, stir your mixture and cook on a gentle heat for a further 4-5 minutes.
  • Season to taste with black pepper and sea salt, add more chili and cayenne spices if needed.
  • Ladle your chili/ gumbo mix into a bowl to serve. Serve whilst hot.
