Very moist, super easy vegan cookies - all from ingredients you have in your cupboard! For moister cookies, add a box of pudding mix. Use any flavor cake mix and pudding mix.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Combine cake mix, pudding mix, and cornstarch in a large bowl. Mix in oil and 1/4 cup water. Add additional water until batter is moist. Mix in chocolate chips.
- Roll batter into balls and arrange on baking sheets.
- Bake in the preheated oven until tops split, about 10 minutes. Cool on the baking sheets for 5 minutes before transferring to a cooling rack.

VEGAN CHOCOLATE CAKE RECIPE

- Preheat the oven to 350 F. Grease two 8-inch pans. Set aside. Stir together the flour, cocoa powder, baking soda, salt, optional chips, and sweetener in a bowl. If using almond butter, gently warm it until soft and easily stir-able. In a new bowl, whisk the oil or nut butter, applesauce or yogurt, water, and vanilla. Pour wet into dry and stir until just combined (don't over-mix). Pour into the pans.Bake on the center rack for 25 minutes or until batter has risen and a toothpick inserted into the center of the cakes comes out mostly clean. (I like to take them out when still a little undercooked, let cool, then set in the fridge overnight. This prevents overcooking, and the cakes firm up nicely as they sit.) If you can wait, I highly recommend not tasting until the next day... this cake is so much richer and sweeter after sitting for a day! When ready to frost, go around the sides with a knife, then invert each cake onto a large plate. Frost separately, then place one cake on top of the other if a double-layer cake is desired. - First, make the flax egg by adding your ground flax and water to a small bowl and setting aside for 5 minutes until thick and gelatinous.
- Add your sugar and cold butter to a mixer and cream together until light and fluffy, about 1 minute. Then, add in the flax egg and vanilla extract. Beat all the wet ingredients together for around 10 seconds to mix.
- Add in sifted flour and the baking powder to the mixing bowl containing your wet ingredients. Mix until a thick cookie batter has just formed. Do not overmix or else you will form too much gluten and cookies won't spread as much. Then, use a spatula or fork to gently mix in the rainbow sprinkles. Add the bowl of dough to the fridge, cover, and let chill for 30 minutes. Cover a baking sheet in parchment paper and preheat the oven to 350F. Next, remove the dough from the fridge and use a 1.5 Tbsp cookie scoop to form your cookie dough and drop onto the baking sheet. Make sure that each cookie is kept about 2 inches apart since they will spread while baking.
- Slightly press each cookie down with your palm before baking (do not flatten all the way). Bake for 12-15 minutes until light brown with soft centers. Once you remove the tray of cookies, lightly tap it on the counter to produce a more "wrinkly" cookie. Then, let cool on the baking sheet for 5 minutes as the cookies will still be soft right out of the oven. Finally, transfer to a wire rack to continue cooling. Once the cookies have cooled, serve and enjoy!
