AIR FRYER BEIGNETS



Air Fryer Beignets image

These beignets take on a wholesome aspect as they're cooked in an air fryer. You will need a silicone egg-bite mold, available through retailers like Amazon®.

½ cup all-purpose flour
¼ cup white sugar
⅛ cup water
1 large egg, separated
1 ½ teaspoons melted butter
½ teaspoon baking powder
½ teaspoon vanilla extract
1 pinch salt
2 tablespoons confectioners' sugar, or to taste

Steps:

  • Preheat air fryer to 370 degrees F (185 degrees C). Spray a silicone egg-bite mold with nonstick cooking spray.
  • Whisk flour, sugar, water, egg yolk, butter, baking powder, vanilla extract, and salt together in a large bowl. Stir to combine.
  • Beat egg white in a small bowl using an electric hand mixer on medium speed until soft peaks form. Fold into batter. Add batter to the prepared mold using a small hinged ice cream scoop.
  • Place filled silicone mold into the basket of the air fryer.
  • Fry in the preheated air fryer for 10 minutes. Remove mold from the basket carefully; pop beignets out and flip over onto a parchment paper round.
  • Place parchment round with beignets back into the air fryer basket. Cook for an additional 4 minutes. Remove beignets from the air fryer basket and dust with confectioners' sugar.

1 1/2 cups soy milk, rice milk, or other non-dairy milk of choice
1 T. maple syrup
1 1/2 t. dry active yeast
2 cups unbleached flour
1 cup whole wheat flour
2 T. safflower oil
1 t. vanilla
1 t. lemon zest
1/2 t. salt
1/3 cup unbleached cane sugar
1 t. cinnamon
safflower oil, for frying
Veganized Powdered Sugar, for dusting

Steps:

  • In a small saucepan, place the soy milk, and bring to a simmer over low heat. Remove the saucepan from the heat. Add the maple syrup and yeast, stir well to combine, and set aside for 5 minutes to dissolve the yeast. Add both types of flour, oil, vanilla, lemon zest, and salt, and stir well to form a smooth batter. Cover the bowl with a towel, place it in a warm place, and set aside for 25 minutes to rise. In a small bowl, place the sugar and cinnamon, stir well to combine, and set aside. Meanwhile, in a large saucepan or wok, place enough safflower oil to fill to a depth of 1-2 inches and heat to 360 degrees. Drop the batter by tablespoonfuls into the hot oil, a few at a time (do not overcrowd the pan as they will puff when cooking), and fry until golden brown. Carefully flip the beignets over with a slotted spoon, continue to cook until golden brown on all sides, and then carefully remove them from the oil with the slotted spoon. Drain the beignets on a clean, lint-free towel, or natural unbleached paper towels. Roll the warm beignets in the reserved cinnamon-sugar mixture and transfer to a large platter. Repeat the frying and rolling in the cinnamon-sugar mixture procedure for the remaining beignet batter. Sprinkle the platter of beignets with a little Veganized Powdered Sugar before serving, if desired.

  • Stir together the milk mixture and aquafaba into the yeast mixture until blended. Make a well in the flour mixture and pour in the yeast mixture, mix until combined and soft dough forms. On a lightly floured surface knead dough until it becomes smooth, cover with plastic wrap or with a towel and let stand for a hour.
  • Preheat oven to 375 degrees and line a baking sheet with parchment paper. Transfer dough to a floured surface and roll dough as best you can into a square or rectangle about half an inch thick. Cut dough into squares and place on the baking sheet and bake for 10 to 12 minutes or until golden brown.

Pour the mixture into the bowl of a stand-mixer, or if doing by hand, into a large bowl. Add in the yeast and let proof for 10 minutes.
  • Add in 2 cups of the flour, mixing well. Add in the oil and salt, and then the remaining 1 1/4 cups flour, adding more only as necessary. The dough should be very soft and a bit sticky. Resist the urge to add more flour at this point, less is more. Knead for 2 minutes, using a bit of oil on your hands and work surface if things are sticking, not flour.
  • Spray the bowl with oil, add the dough and then spray the top of the dough so it doesn't dry out. Cover with a light towel. Let rise for 1.5 hours. Punch down and then return the dough to the bowl, cover the bowl with cling wrap and place in the fridge overnight.
