- Peel and cut apples, into evenly sized cubes, or thin slices. The smaller you cut the apples, the juicier it will be. Also it will cook faster. Time saving tip: You can push a slicer through each apple to make 6 or so pieces, then cut each slice lengthwise in half. Option: leave the peels on. Note: It will take longer to cook this way.
- Process Dry Ingredients: In a food processor, on med-high speed, blend oats, sugar, pecans, cinnamon, and nutmeg just until mixed, the pecans should still be a bit chunky. About 15-20 seconds. You aren't trying to turn the nuts into flour.

- In a large bowl, mix together all of the ingredients for the apple filling except for the cornstarch. Once everything is uniform, sprinkle over the cornstarch and give it another good mix. Transfer all of the filling into the baking dish and spread it out as evenly as you can.
- In the same large bowl, add in all of the ingredients for the crumble topping and mix until well combined. It will be crumbly with a granola-like consistency. Evenly distribute the topping over the apples in the baking dish.
- Place the dish into the oven and bake on the middle rack for 45 minutes, or until the topping is golden and the filling has thickened.

- Core and thinly slice the apples. Place them in a large bowl and toss them with cinnamon, brown sugar, flour, salt, and lemon juice. Toss to coat so that all the apples are evenly covered in the flour/sugar mixture. Transfer the sliced apples to a 3-quart casserole dish and set aside.
- In a separate mixing bowl, combine flour, remaining 1/4 cup sugar, baking powder, baking soda, and salt. Add the butter in small cubes and mix it in with the dough using your fingers until small pea-sized pieces have formed. Add non-dairy milk and stir together until a stiff dough has formed. You may need to add a little more milk. If so, add it 1-2 teaspoons at a time.
- Drop pieces of dough onto the apple mixer so that it is mostly covered with a large piece of dough. Brush additional non-dairy milk over the drop biscuits and sprinkle with coarse sugar. Bake for 35-45 minutes until the top is lightly browned and the juices are bubbling over.

- Preheat oven to 180°C (350°F). Grease a 9-inch x 13-inch dish or two smaller baking dishes if needed. Set aside.
- Peel, core, and cut the apples into uniform slices, about 1/4 inch thickness. Cutting the slices thin and evenly ensure juicy, fast cooking crisp with soft apples. If you cut the apples too thick, the cooking will be longer and it will dry the crisp topping.
- In a large mixing bowl combine all the topping ingredients: rolled oats, chopped walnuts, almond flour, shredded coconut, maple syrup, avocado oil, and cinnamon.
- Sprinkle the topping evenly onto the apples until no more left. Don't spread or pack the topping using a spatula or it will be more like a cobbler recipe and the topping won't create crunchy cookie crumble pieces.
