You can turn baked potatoes into cheesy, delicious Air Fryer Potato Skins. Nobody can resist this air fryer version of a favorite bar appetizer, topped with cheese, bacon, sour cream, and chives.

Steps:
- Preheat the air fryer to 385F/196C.
- Cut the cooled baked potatoes in half lengthwise. Use a small spoon to carefully remove the potato from the inside, leaving a ¼-inch "rim" attached to the shell.
- Brush or spray potatoes with cooking oil. Generously season with salt and pepper.
- Place the potatoes into the air fryer basket, skin side up. Cook for 10 minutes, flipping halfway through cooking time.
- Sprinkle half of the cheese evenly inside each of the potato skins. Cook for 5 more minutes, or until potato skin is golden brown and cheese is melted.
- Remove to a plate and repeat with any remaining skins. Load up with sour cream, bacon, more cheese, and chives, and serve warm.

Steps:
- Clean and dry potatoes. Coat the skins with olive oil and sprinkle with salt. Pierce a few holes in the potatoes with a fork.
- Place potatoes in the air fryer basket. Cook at 390 degrees for 30 minutes.
- Let potatoes cool and then cut in half lengthwise. Scoop out inside of the potato leaving a little to hold the shape of the skin.
- Season the inside of the potatoes with salt and pepper. Add in shredded cheese and then place skins back in air fryer.
- Cook at 390 degrees for 5 minutes to melt the cheese.
- Top with your favorite toppings like sour cream, bacon and green onion.

- Dice your potatoes into 1/2 inch thick cubes. Try to make them similar in size so they all cook up evenly.
- In a large bowl, toss your potatoes with avocado oil, salt, pepper, garlic powder and paprika until evenly coated.
- Place in air fryer basket and set the timer to 20 minutes and the temperature to 400.
- Half way through the cooking cycle, toss potatoes and rotate so they cook even.
- Remove crispy roasted potatoes from the air fryer basket and serve.

- Wash potatoes and puncture holes in the skin with a fork.
- Cook potatoes in the microwave for 5 minutes on each side. Remove from microwave and cut in half lengthwise. Using a small spoon, scoop out the flesh, leaving 1/4 inch of potato flesh in the shell.
- Preheat the air fryer to 350 degrees F (175 degrees C). Spritz the inside of the potato shells with olive oil cooking spray. Set potatoes in the air fryer basket, hollowed-out side up.
- Air fry until edges start to crisp, about 5 minutes. Remove and fill each potato skin with about 1 tablespoon vegan cheese. Return to the air fryer basket and cook until cheese is melted, 5 to 7 minutes.

- First, choose 3 potatoes of the same variety and of roughly the same size and make sure they fit the size of your air fryer basket. Scroll up in this post for tips on how to choose potato varieties for air fryers.
- In a small mixing bowl, mix olive oil, salt, pepper, and garlic powder. Set aside.
- Scrub the potatoes under cold tap water to clean their skin and roughly pat dry the skin with a clean kitchen towel or absorbent paper. Use a fork or knife to pierce each potato skin several times on all their surface.
- Rub the skin with olive oil - you can use a pastry brush or massage potatoes with your hands.
- Place the oil potatoes in the air fryer basket, making sure they don't touch each other.
- Air fry at 390°F (200°C) for 40 minutes, flipping them halfway using tongs - this makes sure the potatoes air fry evenly on both sides. Keep air frying until soft in the center - you should be able to pierce the potato with a knife, and the skin is crispy and golden brown. Note that cooking time varies based on the potato size. The potatoes are ready when you can easily insert a knife in the center, and the skin is crispy/golden. If not, keep air frying by an extra 5 minutes burst, checking every 5 minutes.
- Remove the baked potatoes from the basket using tongs or oven mitten and transfer them to a chopping board. Cool for 10 minutes.

- Preheat the air fryer to 400°F.
- Take baked potatoes and cut them in half lengthwise. Scoop out some of the flesh into a bowl (I like to leave a lot of the potato still intact, but take out as much or as little as you like). Repeat for all of the potatoes. We won't be using the extra potato so you can put it away for use in another recipe.
- Brush olive oil onto the tops of the cut side of the potato. Sprinkle on salt and pepper. Carefully place the potato halves into the air fryer hollow side up (it's going to be hot)
- Cook for 5 minutes to crisp up the top of the potato.
- Open air fryer and spoon in the barbecue sauce to the divot you made in the potato. Sprinkle on cheese (a little more than a tablespoon per half) and bacon pieces. Air fry for an additional 2-3 minutes to melt the cheese.
- Top cooked skins with a little sour cream, chipotle sauce, and sprinkle on green onions.
