Steps:
- Drizzle some olive oil in a pan set over medium heat. Dip the veal in some flour, then place in the hot oil. Sprinkle the veal with salt and pepper and cook until golden brown, about 2 minutes. Flip the veal and add the cooked sausage, onions, cherry peppers, sweet peppers, capers, garlic and olives. Add the chicken stock and butter, and cook until the sauce reduces, 4 to 5 minutes. Plate the veal with some sauce and serve.
HOMEMADE BRATWURST (GERMAN PORK & VEAL SAUSAGES)
This is how to make your own German sausages at home. This recipe is adapted from "Luchow's German Festival Cookbook." I have never personally made this recipe and I am posting this by request.

- You will need to have a meat grinder and butcher's twine to prepare this recipe.
- Make sure all visible fat and gristle has been trimmed from the meats.
- Cut meat into very small pieces, then place in a bowl with salt, nutmeg, and mace and mix to combine.
- Put the meat mixture through a very clean meat grinder three times.
- Mix the ground meat mixture with 1/2 cup water.
- Stuff casings, being careful not to tear, tying ends with butcher twine.
- The number and size of sausages you can make will depend on how small or large the casings you purchased are.
- To cook the bratwurst, set sausages into a pot and fill with enough cold water to cover.
- Bring to a boil, then immediately remove from the heat.
- Let stand 3-5 minutes, or until firm.
- Drain water.
- Pour some milk into a bowl and dip each bratwurst into the milk.
- Set dipped bratwurst onto a greased broiler pan and broil or grill until golden brown under low-medium (300-350°F if broiling) heat for about 15-20 minutes or until cooked through.
- Makes enough filling for 4-6 servings.
- They should be stuffed and cooked the same day.

VEAL SAUSAGE

- Heat the olive oil in a medium skillet over medium-low heat. Add the garlic and shallot and cook until translucent, about 2 minutes. Remove from the heat and let cool completely. Combine the veal and pork fatback with the shallot mixture, red pepper flakes, fennel seeds, coriander, sugar and 1 tablespoon salt in a large bowl. Transfer to a large plastic zip-top bag and refrigerate overnight. At least 30 minutes before grinding the meat, place all of your tools (including the meat grinder parts, stand mixer bowl, stand mixer paddle attachment and sausage stuffer parts) in the freezer to chill. Using your meat grinder, grind the marinated meat mixture twice through the small die plate into the chilled bowl of the stand mixer. Refrigerate at least 30 minutes, then return the mixture to the mixer and beat on medium speed using the chilled paddle attachment, 45 to 60 seconds. Refrigerate until ready to use. Stuff the sausages and, for best results, refrigerate overnight. Before cooking, pierce each sausage several times with a pin. Grill over medium heat until the center registers 150 degrees F, 10 to 12 minutes. (You can also pan-fry or broil the sausages.) Serve with cornichons, mustard and bread. If you don't have time to stuff sausage links, cook the sausage mixture loose in a skillet or form it into patties for grilling or pan-frying.

- Cut the meat into strips or cubes. You can vary the size depending on how big your meat grinder is.
- Add the spices and lemon peel to the meat and mix it well. The meat should be covered with spices everywhere.
- Put it into the freezer for 1-2 hours. This will help your grinding process later and make sure that the mixture does not get too warm.
- Now you can grind the meat. I used the smallest perforated disc (3 mm). You can also let the sausage go through twice if you want it finer or use a coarser disc.
- Now put the casing onto your sausage stuffer and fill the mass into the casings. Make sure that there is trapped as little air as possible.
- Now it’s time to link the sausages. You can decide for yourself how big your veal sausages should be. Put the sausage between your thumb and forefinger.
- Cut the individual links apart and your sausage is ready. Whether grilled or fried in a pan, enjoy.
