VEAL STEW MARENGO

Steps:
- Dry veal pieces with paper towel, then sprinkle lightly on all sides with salt and pepper.
- Heat olive oil in heavy Dutch oven or casserole. When it begins to smoke add layer of veal. Pieces should not touch each other. Brown over moderate heat, turning pieces so they brown evenly. When first batch is brown, remove and reserve. Add second batch and continue until brown. Add more oil if needed.
- Add mushrooms to pan and brown quickly. When juice subsides, remove mushrooms. Add onions to pan and stir in hot fat until golden brown on all sides. Remove from pan.
- Pour oil from pot leaving about 2 tablespoons. Return veal to pan and add butter. Stir over low heat until butter melts. Sprinkle veal with flour. Saute over moderate heat and stir with wooden spoon until flour is absorbed.
- Add garlic, shallots, wine, stock or water, parsley, bay leaf, thyme and tomatoes. Bring to boil. Cover pan, reduce heat and simmer gently but steadily for about 45 minutes or until meat is almost entirely tender. Add more wine and stock if needed.
- Return mushrooms and onions to pan and cook for 30 minutes or until meat and onion are tender. Adjust seasonings, remove bay leaf and parsley, and skim fat from surface of sauce. If sauce seems thin, or if color needs brightening, stir in tomato puree and simmer for 5 minutes.
- Turn into serving dish and top with minced parsley and toasted French bread. Boiled potatoes, green noodles or rice are optional garnishes.

- Put oven rack in middle position and preheat oven to 350°F.
- Pat chicken dry, then combine flour, salt, and pepper in a large sealable plastic bag and add chicken. Seal bag and shake to coat, then remove chicken, knocking off excess flour. Arrange in 1 layer on a plate.
- Heat oil in a 12-inch heavy ovenproof skillet over moderately high heat until hot but not smoking, then sauté chicken, smooth sides down, until golden, about 2 minutes. Turn over and sauté 1 minute more. Scatter mushrooms around chicken and transfer skillet to oven, then bake, uncovered, until chicken is just cooked through, 5 to 10 minutes.
- Transfer chicken to a plate, then add shallot, garlic, and thyme to skillet (handle will be hot) and sauté over moderately high heat, stirring, 1 minute. Add wine and boil, stirring and scraping up brown bits, until reduced by half, about 1 minute. Add tomatoes, demi-glace, and water and simmer until mushrooms are tender and sauce is reduced by half, about 4 minutes. Season with pepper.
- Return chicken to skillet and simmer, turning, about 1 minute.

4-STEP CHICKEN MARENGO

- Season the chicken with salt and pepper, to taste, and lightly dredge in flour. In a large saute pan, heat the oil over medium-high heat and add the chicken. Brown on both sides, until nicely golden, about 3 minutes per side. Remove from the pan and set aside on a plate. In the same pan, add more oil, if needed, along with the onion, mushrooms and peppers and saute until softened and fragrant, but not limp, about 5 minutes. Season with salt and pepper, to taste. Stir in the tomato paste and cook a few minutes to cook out the raw flavor. Turn up the heat, and add the wine/wine to deglaze the pan and let it reduce for 2 or 3 minutes. Add the beef broth and tomatoes. Once the mixture begins to bubble, add the browned paillards and any juices from the chicken and reduce the heat to a simmer. Cook until the chicken is warmed through, about 3 minutes. Turn the heat off and stir in the butter. Transfer to a serving platter and serve immediately.

- Coat veal shoulder with flour mixed with salt and pepper.
- Brown in hot oil in a large skillet. Remove veal to casserole pot or dish.
- Saute onion and garlic in the same skillet until it's golden. Deglaxe the pan with white wine and Brandy.
- Stir in chopped tomatoes and add to casserole with bay leaf, 2 sprigs parsley and thyme.
- Cover casserole.
- Bake in moderate oven at 350 degrees for 45 minutes, or until veal is almost tender.
- Add mushroom caps and bake 10 minutes longer, or until the veal is tender.
- Garnish with chopped truffles and chopped parsley.
CHICKEN MARENGO
Chicken Marengo is a dish my grandfather used to make. It's a hearty and bright one-pot dish, full of mushrooms, tomatoes, garlic & white wine. It's sure to be a comfort favorite!

- Heat a large skillet or dutch oven over medium-high heat. Pat chicken thighs dry with a paper towel and sprinkle with 1 teaspoon of kosher salt. Once the pan is hot, add the oil. Place the chicken in the pan, skin side down and cook until the fat has rendered and the skin is golden, about six or so minutes. Flip the chicken over and cook for about 6 minutes on the other side. Remove the partially cooked chicken to a plate while you build your sauce.
- Toss the onions and mushrooms into the hot pan and cook until browned, about 8-10 minutes, stirring occasionally. Add the wine and chicken broth and use a wooden spoon to scrap up any brown bits on the bottom of the pan. Add the tomatoes and their juices, breaking them up roughly with a wooden spoon. Toss in the garlic cloves and black pepper. Bring the mixture to a boil and then reduce to a simmer. Nestle the chicken thighs (skin-up) in the sauce. Cook on a simmer until the thighs are done and tender (internal temperature of 175 degrees Fahrenheit).
- Sprinkle a little parsley over the top and serve with the grain of your choice. I prefer white rice because it soaks up all the yummy juices!

- Heat ½ tbsp olive oil in a large pot over medium heat. Dry veal thoroughly and season with salt and pepper. Place in hot oil and brown veal on all sides. Use a slotted spoon to remove veal and set aside on a plate.
- Add the other ½ tbsp olive oil (if necessary) to the same pot over medium heat. Add onions and mushrooms to the pot. Cook for 5-7 minutes, stirring occasionally, until tender.
- Add the butter and garlic to the pot and cook for another minute. Meanwhile, toss veal in flour so that all pieces are well coated, then add veal to the pot as well.
- Add wine, tomatoes, tomato puree, orange rind, bay leaf, and thyme to the pot. Turn heat to low and simmer everything for 30 minutes.

- Preheat the oven to warm l60°C (315°F/ Gas 2–3). Pat the veal dry with paper towels. Heat half the oil in a 2.5 litre flameproof casserole. Brown half the veal over high heat, then repeat with the remaining oil and veal.
- Heat the butter in the casserole and cook the onion and garlic for 2–3 minutes. Stir in the flour. Cook for 1 minute. Add the wine, and stir to lift the sediment from the base of the casserole. - Return the veal to the casserole, then cook, covered, in the oven for 1½ hours. Heat the extra butter in a frying pan, cook the mushrooms and add to the casserole. Cook for 15 minutes, or until the veal is tender. Remove the orange rind.
- Return the casserole to the stove top and stir in the combined cornflour and wine until thickened. Garnish with the fresh thyme sprigs.
