1 (8 ounce) package flaked coconut
1 cup ground pecans
¾ cup butter
1 ½ cups white sugar
6 eggs
1 (12 ounce) package vanilla wafers, crushed very fine
½ cup milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch fluted tube pan such as a Bundt®. Mix together the coconut and ground pecans; set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the crushed wafers alternately with the milk. Mix in the coconut and ground pecans. Pour batter into prepared pan.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Steps:

  • Preheat oven to 300 degrees F (175 degrees C). Grease and flour a bundt pan.
  • Cream butter or margarine; add sugar, and beat until smooth. Add eggs, one at a time, beating well after each addition. Stir in crushed vanilla wafers alternately with milk. Add coconut and pecans, and mix until blended. Pour batter into prepared pan.
  • Bake for 1 1/2 hours. Cool.

1 box/12 ounces vanilla wafers
1 cup pecans (chopped)
2 sticks/8 ounces butter ( softened )
2 cups sugar
6 large eggs (or 5 extra-large eggs)
1 bag/7 ounces coconut (sweetened flaked)
1/2 cup milk (whole)
For the Butter-Pecan Glaze:
1/2 cup butter
2 tablespoons evaporated milk (or milk)
1/2 cup brown sugar (packed, light or dark)
1/2 cup pecans (chopped)

Steps:

  • Heat the oven to 325 F.
  • Generously grease and flour a tube cake pan .
  • Process the vanilla wafers in the food processor until the crumbs are fine or put them in a plastic food storage bag and use a rolling pin to crush them. Chop the pecans finely by hand or throw them into the food processor with the crumbs and pulse a few more times.
  • In a large mixing bowl with an electric mixer, cream ​the butter and sugar until light and fluffy, about 4 to 5 minutes. Add the eggs, one at a time, and blend well after each addition.
  • Add half of the finely crushed vanilla wafers and blend well. Add the nuts, coconut, milk, and remaining vanilla wafer crumbs. Beat until blended.
  • Spoon the batter into a greased and floured tube cake pan.
  • Bake the cake in the preheated oven for 1 hour.
  • Leave the cake in pan on a rack for 10 minutes to cool slightly; invert onto a cake plate.
  • In a saucepan over medium heat, melt the butter. Add the milk and brown sugar. Bring to a boil. Reduce the heat to low and simmer the glaze mixture for 5 minutes. Stir the 1/2 cup of chopped pecans into the glaze mixture and then remove it from the heat.
  • Let the glaze cool slightly and then spoon it over the cooled cake.
  • Store the cake, covered, in the refrigerator or freeze slices for later.

One 12-ounce box vanilla wafers, crushed
1 cup sweetened flaked coconut
1 cup chopped pecans, or your favorite nut
1/2 cup milk
Butter, optional
Whipped cream, optional
Berries, optional
Caramel sauce, optional

Steps:

  • Preheat the oven to 350 degrees F and grease and flour a tube or Bundt pan.
  • In a large bowl, beat the eggs well. Mix the sugar, vanilla wafers, coconut, pecans and milk into the eggs.
  • Pour the mixture into the tube or Bundt pan. Bake until a toothpick inserted in the center comes out clean, about 1 hour. Let sit in the pan for 10 minutes, and then turn out onto a plate. Allow to cool completely.
  • If desired, heat 1 tablespoon butter in a small saute pan. Cut a 1-inch slice of cake, butter both sides and toast in the butter. Add a dollop of whipped cream and serve with berries. Drizzle with caramel sauce. Repeat with remaining cake slices.

1 stick (8 tablespoons) unsalted butter, at room temperature, plus more for the pans
2 3/4 cups all-purpose flour, spooned and leveled, plus more for the pans
1 teaspoon baking powder
1 teaspoon fine salt
2 cups granulated sugar
1/2 cup vegetable oil
5 large eggs, at room temperature
1 tablespoon pure vanilla extract
1 cup milk
3 sticks (1 1/2 cups) unsalted butter, at room temperature
Pinch fine salt
3 1/4 cups confectioners' sugar
2 teaspoons pure vanilla extract
1/4 cup milk

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Butter the bottoms and sides of two 9-inch round cake pans; dust with flour, and tap out the excess.
  • Whisk together the flour, baking powder and salt in a medium bowl; set aside.
  • Beat the butter, sugar and oil in a large bowl with an electric mixer on medium-high speed until light in color and fluffy, about 5 minutes. Beat in the eggs, one at a time, and then the vanilla until combined.
  • Alternate folding the flour mixture and the milk into the batter with a spatula, adding the flour in three additions and the milk in two, starting and ending with the flour, until just smooth. Divide the batter evenly between the prepared pans.
  • Bake the cakes on the same oven rack until golden on top and the centers spring back to the touch, 35 to 40 minutes. Rotate the pans about halfway through if they seem to be browning unevenly. Let cool in the pans about 10 minutes, then turn out onto cooling racks and let cool completely.
  • For the frosting: While the cakes cool, beat the butter and salt in a large bowl with an electric mixer on medium speed until smooth. Gradually beat in the confectioners' sugar. Once it's all been added, increase the speed to medium-high, and beat until white and fluffy. Add 2 tablespoons of the milk, and beat to incorporate. Beat in the remaining milk, one tablespoon at a time (the frosting will be spreadable but not runny).
  • To assemble: Place 1 cake layer right-side up on a cake plate or stand, and spread with 1 cup of the frosting. Top with the second cake layer. Frost the top and sides of the cake with the remaining frosting.

1/2 pound candied cherries
1/2 pound candied pineapple slices
1 pound walnuts, pecans or combination of both
1 pound vanilla wafers
1/4 pound raisins
2 large eggs
1/2 cup sugar
1/4 teaspoon salt
1 can (5 ounces) evaporated milk

Steps:

  • Set aside four whole cherries, two pineapple slices and 16 pecan or walnut halves. Chop remaining fruit and nuts. Crush vanilla wafers; combine the chopped fruit, nuts and raisins and set aside. , In a bowl, beat eggs well. Stir in sugar, salt and milk. Combine wafer/nut mixture with egg mixture. Pack into a waxed paper-lined 10-in. tube pan. Decorate top with reserved whole fruit and nuts. Bake at 325° for 45 minutes. Let stand 10 minutes. Run a sharp knife around edge; turn cake out of pan, then back over again so decorations are on top. Cake can be made ahead and frozen; taste improves with age.

  • Cream sugar and margarine.
  • Add eggs, one at a time, beating after each.
  • Stir in wafers, milk, and vanilla until blended.
  • Fold in coconut and pecans.
  • Bake in greased tube or bundt pan at 325 degrees for about 1 hour and 15 mins.

1 pound walnuts, pecans or combination of both, broken in half or coarsely chopped
1/4 pound golden or dark raisins*
2 eggs
1/2 cup granulated sugar
1 (5 ounce) can evaporated milk
1/8 teaspoon salt
Whole candied red cherries (garnish)
Candied pineapple wedges (garnish)
I mix and/or match using dates, dried apricots, dark raisins - whatever I have.

Steps:

  • 1.Preheat oven to 325 degrees F. 2.In a large bowl, crush vanilla wafers. Add cherries, pineapple, nuts, and raisins; mix well. 3.In another bowl, beat eggs; add sugar, evaporated milk, and salt. Add to fruit mixture and mix well. 4.Cup Cakes: Spoon batter loosely into cupcake pans using paper or foil liners which you have sprayed lightly with oil spray. Bake in center of oven for approximately 30 minutes. Remove from oven and let cool. 5.Cake: Pack into a waxed paper-lined 10-inch tube pan. Decorate top with reserved candied whole cherries and pineapple. Bake approximately 45 minutes. Remove from oven and let stand 10 minutes. Run a sharp knife around edge, turn cake out of pan, then back over again so decorations are on top. Note: Cake and/or cupcakes can be made ahead and frozen; taste improves with age.
