VANILLA BEAN-WHIPPED SWEET POTATOES
New York chef Gerry Hayden, contributed this side dish to a holiday meal. Everybody fell for the combination of creamy pureed potato and fragrant vanilla.

Steps:
- Preheat the oven to 400°.
- Poke the sweet potatoes several times with a fork and bake for about 35 minutes, or until tender.
- Let cool slightly, then peel and transfer them to a food processor.
- Puree until fairly smooth.
- In a small saucepan, combine the cream with the butter and the vanilla bean and seeds. Bring to a simmer.
- Remove the vanilla bean.
- With the processor on, carefully pour the vanilla cream into the sweet potatoes and process until smooth.
- Season the sweet potato puree as desired with salt and pepper or sugar, transfer to a bowl and serve.

- Preheat oven to 350°F Put potatoes on baking sheet and bake until fork tender, approximately 1 hour.
- Remove from oven and let cool until just cool enough to handle. Peel and discard skins. Set aside in a covered bowl.
- Pour half and half into a 2 quart pot. Add vanilla and orange zest. Bring to a simmer and cook for 5 minutes.
- Mash sweet potatoes and butter with a potato masher or mixer on low. Slowly add vanilla milk mixture until potatoes reach desired consistency.
- Season with kosher salt and white pepper to taste.
- Serve warm.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil; spray with nonstick spray.
- Split vanilla bean lengthwise with the tip of a sharp knife. Holding the pod open, scrape seeds from each half using the flat side of your knife.
- Combine vanilla bean, scraped seeds, and olive oil in a small saucepan over very low heat. Warm the oil until fragrant, about 5 minutes. Remove from heat and let cool, about 5 minutes.
- Cut sweet potato and apple into noodles using a spiralizer. Place in a large bowl.
- Whisk 2 tablespoons olive oil, brown sugar, cinnamon, salt, nutmeg, and ginger together in a small bowl. Drizzle over sweet potato and apple; toss well to coat.
- Spread sweet potato and apple in an even layer on the prepared baking sheet.
- Bake in the preheated oven, turning once, until golden, about 10 minutes. Increase oven temperature to 425 degrees F (218 degrees C). Roast until ends of sweet potato start to brown and toast, 5 to 10 minutes more.

- Preheat oven to 300 degrees F (150 degrees C).
- Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain. Peel sweet potatoes once they are cool enough to handle. Slice sweet potatoes into 1-inch thick rounds; arrange in a 9x13-inch casserole dish.
- Mix brown sugar, butter, maple syrup, vanilla extract, and salt together in a saucepan; bring to a boil, stirring often, until sugar has dissolved and butter has melted, 5 to 10 minutes. Pour sauce over sliced sweet potatoes.
