1/2 teaspoon salt
1 cup whole milk
1/2 cup vegetable oil
1 tablespoon vanilla extract
1 tablespoon white vinegar

Steps:

  • Preheat oven to 350°; spray an 8-inch square metal baking pan with nonstick cooking spray.
  • In a large bowl, whisk together flour, sugar, baking soda, and salt.
  • Add in milk, oil, and vanilla to the flour mixture and stir until just blended.
  • Whisk in vinegar until just blended.
  • Immediately pour batter into pan.
  • Bake for 25-30 minutes or until a pick comes out clean.
  • Let cool completely in pan on a wire rack.
  • Can eat as is, or dust with powdered sugar or top with frosting.

1 cup sugar (* See notes)
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon white vinegar
5 tablespoon canola oil (** See notes)
1 1/2 teaspoon vanilla extract
1 cup water

Steps:

  • Preheat the oven to 180C/350F. Line a square pan with parchment paper, leaving an inch over each side overhanging, for easy removal.
  • In a large mixing bowl, add your dry ingredients and mix well. Form three caves (depressions) in the dry mixture. In one, add the vinegar. In the second, add the vanilla extract, and in the final one, add the Oil. Pour the water over the top and using a whisk or wooden spoon, mix together, until fully combined.
  • Transfer your vanilla cake batter in the lined pan. Bake for 25-30 minutes, or until a skewer comes out just clean. Remove from the oven and let cool in the pan for 10 minutes, before transferring to a wire rack to cool completely. If desired, frost the cooled cake.

1 cup granulated sugar
½ teaspoon salt
1 teaspoon baking soda
⅓ cup vegetable oil
1 cup cold water
1 tablespoon apple cider vinegar
2 teaspoons vanilla
Powdered sugar or Chocolate Frosting (see below for topping**)

Steps:

  • Heat your oven to 350°F/175°C. Spray a round cake pan with vegetable spray. You can also place a piece of parchment paper at the bottom of the pan and spray the sides with vegetable oil.
  • Combine in a large mixing bowl the flour, sugar, salt, and baking soda. Stir to combine.
  • In a smaller bowl, combine the vegetable oil, water, vinegar, and vanilla. Stir to combine.
  • Pour the water mixture into the flour mixture. Stir until combined.
  • Pour the batter into your prepared pan. Bake for 30 to 35 minutes until a toothpick inserted in the middle comes out clean.
  • Allow the cake to cool for about 10 minutes before inverting onto a serving plate. Sprinkle the top with powdered sugar or top with Chocolate Frosting**

1 1/2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking soda
1 teaspoon fine sea salt
3 tablespoons rainbow sprinkles
1 cup ice water
1 tablespoon vanilla extract
1 tablespoon white vinegar
6 tablespoons vegetable oil
For the Frosting:
3/4 cup unsalted butter (at room temperature)
3 cups confectioners' sugar (sifted)
1/2 teaspoon fine sea salt
3/4 cup heavy cream (at room temperature)
1 tablespoon vanilla extract
Rainbow sprinkles for decorating

Steps:

  • Gather the ingredients and preheat oven to 350 F.
  • In a medium-sized bowl, whisk together the flour, sugar, baking soda, salt and sprinkles.
  • Add the water, vanilla, vinegar, and oil and whisk until fully incorporated and smooth.
  • Transfer to a 9-inch pie plate and bake for 25 to 35 minutes, until a toothpick inserted into the center of the cake comes out with a moist crumb or two.
  • Make the frosting while the cake bakes and cools. Place the butter in the bowl of a stand mixer fitted with the paddle attachment and beat the butter on medium speed until soft and smooth.
  • Add the sugar 1 cup at a time to the butter, mixing to combine on low, and alternating with the cream.
  • Add the salt and vanilla and mix for about 5 minutes on medium until smooth, fluffy, and spreadable.
  • Generously frost the cake, decorate with rainbow sprinkles, and serve.

1 Tablespoon distilled white vinegar
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven to 350° F. Grease a 9-inch round cake pan.
  • Place dry ingredients into a bowl and combine well, stirring or whisking until thoroughly blended.
  • In a small bowl, combine water, oil, vinegar, and vanilla.
  • Add liquids to flour mixture & gently stir until there are no lumps (about 30 seconds).
