Steps:
- Preheat the oven to 300 degrees F. Beat the egg white with the vanilla extract, add the almonds and stir to coat. Combine the sugar, salt, and cinnamon and combine with mixture. Place in a single layer on a greased baking sheet. Bake at 300 degrees F for 20 minutes. Remove and cool on wax paper and break into clusters.;

- Line a baking sheet with parchment paper.
- Melt butter on a non-stick frying pan over medium heat.
- When the butter is melted, add sugar and stir to combine.
- Add the slivered almonds and cook, stirring every 30 seconds, for 4 minutes, or until slightly browned.
- Remove the toasted sugared almonds from a frying pan onto the parchment paper and spread in a single layer.
- Let the almonds cool, then transfer to a serving dish.

- Combine the water, sugar, and cinnamon in a saucepan over medium heat; bring to a boil; add the almonds. Cook and stir the mixture until the liquid evaporates and leaves a syrup-like coating on the almonds. Pour the almonds onto a baking sheet lined with waxed paper. Separate almonds using forks. Allow to cool about 15 minutes.

Steps:
- Heat oven to 250°F and line a rimmed baking sheet.
- Whisk egg white and vanilla extract together in a large bowl, then add the almonds and toss to coat.
- Combine both sugars, cinnamon, cacao powder and salt in a small bowl. Sprinkle over the almonds and toss to coat.
- Spread almonds on prepared baking sheet and bake in the hot oven for 45 minutes, carefully stirring once every 10-15 minutes. Increase oven temperature to 360°F and finish baking the almonds for 10-15 minutes (watch them closely, do not overbake or they may burn!).
- Let almonds cool on the baking sheet. Store in an airtight container for up to 5 days.

- In a large bowl, beat egg whites till frothy. Mix in vanilla, then toss in almonds. Stir gently to coat.
- In another bowl, combine the sugars, salt, and cinnamon. Add to nuts and gently toss to cover almonds.
- Spread evenly into two foil-covered sheet pans.
- Bake for 25-30 minutes, stirring halfway through cooking time.
- Allow to cool, then store in an airtight container.

- Line a baking sheet with foil. Grease the foil with 1 tablespoon butter; set aside. In a large heavy skillet, combine the almonds, sugar and remaining butter.
