Unsalted butter, for baking dish
1/4 cup all-purpose flour, plus more for dusting
1/2 cup dried cherries
1 large Anjou pear, peeled, halved lengthwise, and cored
3/4 cup whole milk
3/4 cup heavy cream
2 large eggs
1 teaspoon pure vanilla extract
1/4 cup sugar
Pinch of salt

Steps:

  • Preheat oven to 400 degrees. Butter a 10-inch ceramic tart dish or 9 1/2-inch pie plate. Dust with flour, and tap out excess; set aside. Put cherries in a medium bowl, and cover with boiling water by 1 inch. Let stand until plump, about 10 minutes.
  • Cut pear lengthwise into 1/8-inch-thick slices; fan over bottom of prepared dish. Blend milk, cream, eggs, vanilla, sugar, flour, and salt in a blender until smooth, about 1 minute. Pour batter over pear.
  • Drain cherries; sprinkle over batter. Bake until golden and set, about 25 minutes. Let stand 15 minutes. Cut into wedges.

If you don't want to make a crust but want something tartlike for your Thanksgiving dessert, a clafoutis, which is something like a cross between a flan and a pancake, is a great choice. It's a very easy dessert, yet it's always impressive.

2 tablespoons pear eau-de-vie or liqueur (optional)
2 tablespoons mild-flavored honey, like clover
2 pounds ripe but firm pears, like Bartlett or Comice
3 large eggs
1 vanilla bean, scraped
1/3 cup sugar
2/3 cup sifted unbleached white flour
1/2 cup plain yogurt
1/2 cup milk
Pinch of salt

Steps:

  • Combine the pear eau-de-vie and the honey in a bowl. Peel, core and slice the pears and toss with the mixture. Let sit for 30 minutes.
  • Preheat the oven to 375 degrees. Butter a 10-inch ceramic tart pan or baking dish.
  • In the bowl of an electric mixer or with a whisk, beat together the eggs, the seeds from the vanilla bean and the sugar. Pour off the marinade from the pears and add to the egg mixture. Gradually beat in the flour, then beat in the yogurt, milk and salt.
  • Arrange the pears in the baking dish. Pour on the batter. Place in the oven and bake 40 to 50 minutes, until the top is beginning to brown. Serve hot or warm.

½ cup white sugar
2 teaspoons vanilla extract
⅛ teaspoon salt
1 cup whipping cream
½ cup flour
2 pears - peeled, cored, and chopped
2 tablespoons coarse sugar, such as turbinado

Steps:

  • Preheat oven to 325 degrees F. Generously grease six 3/4-cup souffle dishes or six 6-ounce custard cups.
  • Beat together eggs, white sugar, vanilla, and salt in a large bowl with an electric mixer on medium speed until light and frothy, about 5 minutes. Add whipping cream, then flour; beat until mixture is smooth.
  • Divide half of batter among prepared dishes, then spread two-thirds of pears over batter. Pour in remaining batter and top with remaining pears.
  • Bake 30 minutes, then rotate pan and sprinkle each clafouti with 1 teaspoon coarse sugar. Continue baking until puffy and lightly browned and a knife inserted off-center comes out clean, about 10 minutes more. Cool on a wire rack 10 minutes. (Clafoutis will fall as they cool.)

It sounds odd to say that a recipe's biggest problem is that it looks too good, but that's sort of the case with this pear clafoutis, a crustless custard fruit tart that often looks a lot sweeter and richer that it actually is. Usually made with cherries, this rustic French dessert adapts easily to any kind of seasonal fruit. If desired, brush top with warmed fruit preserves and honey and garnish with whipped cream, creme fraiche, or ice cream.

45g blanched hazelnuts , toasted
30g plain flour
4 medium eggs , plus 2 egg yolks
150g caster sugar
200ml milk
300ml double cream
2 tsp vanilla extract
2-3 perfectly ripe pears
25g blanched hazelnuts
icing sugar , to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put the hazelnuts in a food processor and whizz until finely ground. Add the flour, eggs, extra yolks, sugar, milk, cream and vanilla and whizz until you have a smooth batter.
  • Halve, core and slice the pears (you can peel them first if you like, but I usually don't). Arrange the pear slices in a 26 x 33cm ceramic, cast iron or copper gratin dish, then pour in the batter. Bake for 30-35 mins, or until the batter is set in the centre, golden and slightly souffléd.
  • For the topping, toast the hazelnuts in a dry frying pan (keep a close eye on them - they can go from toasted to burnt very quickly), then roughly chop them so you're left with a mixture of halved and more finely chopped nuts. Scatter over the clafoutis, then sieve a little icing sugar over the top. Leave to sit for 10-15 mins (the clafoutis will deflate a little). Serve warm with crème fraîche or pouring cream.

2/3 cup milk
1/3 cup all-purpose flour (45g)
1 tsp pure vanilla extract
1/2 tsp lemon zest
1 pinch salt
2 small-medium pears (Bartlett or D'Anjou), just ripe
1/2 Tbsp unsalted butter (to grease the skillet)

Steps:

  • Preheat oven to 375F. Lightly grease an 8 inch, cast iron skillet or similar sized baking dish with some butter.
  • Put the eggs and sugar in a bowl or mixer and whisk well until well broken up and combined. Add the milk, flour, vanilla, lemon zest and salt and mix/whisk until smooth.
  • Peel the pears, cut in half and remove the core. Cut into slices and arrange in the bottom of the skillet/baking dish - you can fan them out slightly as I did or arrange any other way you choose.
  • Carefully pour the batter into the skillet/baking dish over the pears.
  • Bake in the oven for roughly 35 minutes, until lightly browned around the edges and set.
  • Remove from the oven and allow to cool for a couple of minutes before serving. It will probably be puffed up when you take it out the oven and collapse slightly after a minute.
  • Sprinkle with a little confectioner's sugar to serve, if desired.

It's a simple yet elegant dessert that's loaded with fresh fruit and bakes up with a delicious custard center and golden souffle top. Perfect for date night or sharing with friends. Just be sure to give the pears time to marinate.

1 TB salted butter (room temp)
3 cups cored/peeled/thinly sliced large ripe pears
1/4 cup sweet white wine (or kirsch or cognac)
1/3 cup granulated sugar
1 1/4 cups whole milk
2/3 cups granulated sugar (divided)
3 large eggs
1 TB pure vanilla extract
1/8 tsp table salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 cup all purpose flour (scooped and leveled for correct measuring)
1 TB fresh lemon zest (from 2 lemons)

Steps:

  • Preheat oven to 350F, with rack on lower middle position. Grease a ceramic tart pan or cast iron pan (needs to be stovetop-safe) with the butter. Set aside.
  • In a bowl, combine pears with sweet wine and 1/3 cup sugar. Let stand 1 hour. Drain and set aside.
  • Place ingredients for the Batter, using only 1/3 cup of sugar, in a blender in the order of ingredients listed. Cover and blend at top speed 1 min.
  • Pour 1/4 inch layer of the batter at bottom of prepared baking pan. Place over moderate heat on stovetop and heat just until a film of batter has visibly set on the bottom of the dish; this keeps fruit from sinking to the bottom. Remove from heat and pour in the remaining batter. Spread pears in a fan-like pattern or however you wish. Sprinkle on the remainin 1/3 cup sugar. Smooth surface with back of a spoon.
  • Bake 50-60 min. or until puffed up and golden brown; a knife inserted into center should come out clean. Let cool a bit. Serve warm with powdered sugar, whipped cream, or vanilla ice cream.

Poire William, a pear eau de vie, is an excellent flavoring for this clafoutis.

2 medium pears (about 12 oz. total)
2 Tbs. pear eau de vie, such as Poire William
3 large eggs
1/3 cup sugar
1/3 cup all-purpose flour
Pinch freshly grated nutmeg
1 tsp. vanilla extract, or better yet the seeds from 1/2 split vanilla bean
1/4 cup heavy or whipping cream
1/2 cup whole milk
3 Tbs. unsalted butter
1/4 cup sliced almonds

Steps:

  • Heat the oven to 350°F. Butter a 9-inch cake or pie pan.
  • Peel the pears and cut them in half. Remove the core and any fibers and cut the halves into 1/4-inch slices. Put the slices in the prepared cake pan. Sprinkle them with the eau de vie and toss to coat; spread them in a fairly even layer. No need to be neat. Just toss in the fruit and spread it into an even layer.
  • In a large bowl, whisk the eggs and sugar until lightly frothy and the sugar is dissolved. Sprinkle or sift in the flour and nutmeg and add the vanilla. Whisk until smooth. Gradually add the cream and milk, whisking just until smooth. Melt 2 Tbs. of the butter and stir it into the batter. Pour the batter over the fruit, sprinkle the almonds on top, and dot the surface with bits of the remaining 1 Tbs. butter. The batter is thin, like crêpe batter, so it's easy to pour.
  • Bake until evenly puffed and brown and a skewer comes out clean, about 40 minutes. Serve warm.

I decided to make pear clafouti yesterday for two reasons: 1. I had pears.

2 whole Pears
2 tsp. Minced Or Grated Ginger
2 tbsp. Sugar
2 tsp. Brandy (optional)
3/4 c. All-purpose Flour
1/2 tsp. Salt
1/2 c. Sugar
3 whole Eggs, Beaten With A Fork
2 c. Whole Milk (substitute Half With Cream If You Desire)
1 tsp. Vanilla

Steps:

  • Preheat oven to 375 degrees. Peel pears and slice in half. Core each half, then slice pears thinly. Arrange in a pinwheel design in a pie dish. Sprinkle 2 tablespoons of sugar and minced ginger over the top. Sprinkle brandy over the top if using.Whisk together flour, salt, eggs, sugar, milk, and vanilla until smooth. Pour over the top of the pears. Bake for 45 minutes or until poufy and no longer overly jiggly. Remove from oven and allow to cool for at least 10 minutes. Serve with freshly whipped cream flavored with sugar and cinnamon. VERSION 2: Substitute 1 1/2 cups of heavy cream for 1 1/2 cups of milk.
