Make Vanilla Bean Ice Cream from scratch using whole vanilla beans and real cream. Homemade Ice Cream in an ice cream maker for the win!

2 cups heavy whipping cream
2 cups half and half
3/4 cup sugar
1 vanilla bean *
1 teaspoon coarse kosher salt

Steps:

  • In a medium saucepan, combine the heavy whipping cream, half and half and sugar.
  • Cut the vanilla bean in half, scrape out caviar (the greasy flecks inside) and add both pod and caviar to saucepan. Bring to a low simmer, but do not boil.
  • Remove from heat, stir in salt if desired, and allow to cool fully before transferring to an airtight container and placing in the refrigerator to cool for a minimum of 4 hours, but up to 48 hours.
  • Prepare your ice cream maker as directed and add mixture. Prepare according to machine directions.
  • Transfer to an airtight container and freeze to finish.

¼ to ½ cup unsweetened plant-based milk

Steps:

  • Using a small sharp knife, scrape seeds from vanilla bean.
  • In a food processor combine vanilla seeds, frozen bananas, and ¼ cup of the milk. Cover and process until smooth, adding as much of the remaining milk as needed.
  • Serve immediately for a soft-serve ice cream or freeze at least 4 hours for a scoopable ice cream. Store in the freezer for up to 1 week.

2 Medjool dates, pitted
2 teaspoons vanilla extract
1 teaspoon soy milk, or more as needed

Steps:

  • Place cashews in a bowl and cover with water. Soak for 1 to 3 hours. Drain.
  • Combine soaked cashews, banana, ice cubes, tofu, dates, vanilla extract, and 1 teaspoon soy milk in a blender. Process until smooth. Add an additional teaspoon of soy milk only if needed, in order to keep the mixture as thick as possible.
  • Pour into a bowl to serve.
