This homemade frozen yogurt requires no ice cream maker. It's truly easy to make, and it's so creamy and delicious.

2 cups Greek yogurt (plain, full fat)
1/4 cup honey
1 tablespoon pure vanilla extract

Steps:

  • Place the yogurt, honey and vanilla in your food processor's bowl.
  • Process to incorporate, stopping once to scrape the sides of the bowl, then process 1 more minute, until light and fluffy. You can also whisk by hand, but do so for several minutes until smooth and fluffy.
  • Using a spatula, transfer the mixture to a square 9-inch glass baking dish. Cover with cling wrap, and freeze for 45 minutes.
  • Remove the pan from the freezer. Use a rubber spatula to stir the already-frozen edges into the still-soft center, then spread evenly again.
  • Cover again, and place in the freezer for 2 more hours, repeating the process of stirring the yogurt every 30 minutes.
  • When the entire mixture is frozen, serve immediately as a soft-serve yogurt (use chilled bowls), or freeze 1-2 more hours for a firmer consistency that you can scoop out with an ice cream scoop.
  • If you end up storing the frozen yogurt for longer than that (say, overnight or a couple of days - I doubt it will last longer), remove it from the freezer 30 minutes before serving, to allow it to soften.

two 32-ounce containers whole-milk plain yogurt
1 vanilla bean
1 teaspoon finely grated fresh lime zest
6 tablespoons fresh lime juice
1/2 cup light corn syrup
3/4 cup superfine granulated sugar

Steps:

  • In a cheesecloth-lined large sieve or colander set over a bowl drain yogurt, covered and chilled, 12 hours. Discard liquid in bowl.
  • With a knife halve vanilla bean lengthwise and scrape out seeds. In a blender purée vanilla seeds, half of drained yogurt, and remaining ingredients. In a bowl stir together vanilla mixture and remaining yogurt.
  • Transfer mixture to ice-cream maker and freeze. Transfer frozen yogurt to an airtight container and put in freezer to harden. Frozen yogurt may be made 1 week ahead.

  • Line a strainer or colander with 4 layers of cheesecloth or 1 coffee filter; place over a bowl. Place yogurt in prepared strainer; cover yogurt with sides of cheesecloth. Refrigerate 2-4 hours., Remove yogurt from cheesecloth to a bowl; discard strained liquid. Add sugar and vanilla to yogurt, stirring until sugar is dissolved., In a small microwave-safe bowl, combine cold water and lemon juice; sprinkle with gelatin and let stand 1 minute. Microwave on high for 30 seconds. Stir and let mixture stand 1 minute or until gelatin is completely dissolved; cool slightly. Stir gelatin mixture into yogurt. 1 cup granulated sugar
1 tablespoon fresh lemon juice
3 tablespoons water
Pinch of coarse salt
1 vanilla bean, halved lengthwise
2 large egg yolks
1/4 cup light corn syrup
32 ounces plain whole-milk yogurt
1/4 cup heavy cream

Steps:

  • Fill a large bowl halfway with ice water, and set aside. Combine sugar, lemon juice, 3 tablespoons water, and salt in a saucepan. Using the tip of a paring knife, scrape seeds from vanilla bean into pan, and discard pod. Bring to a boil, and cook, stirring, until sugar has dissolved.
  • Whisk yolks in a large bowl. Pour in hot sugar syrup in a slow, steady stream, whisking until combined. Whisk in corn syrup, followed by the yogurt and then the cream. Pour through a fine sieve into a bowl, and place bowl in ice bath. Let stand, whisking occasionally, until thoroughly chilled, about 15 minutes.
  • Freeze mixture in an ice cream maker according to manufacturer's directions. Transfer to a container, and press plastic wrap on surface. Freeze for at least 30 minutes before serving. If freezing longer than 30 minutes, let stand at room temperature until slightly softened.

2 teaspoons unflavored gelatin (softened)
2/3 cup sugar
2 egg yolks, beaten
2 cups nonfat plain yogurt (use Greek if you can find it)
2 tablespoons vanilla extract
2 egg whites

Steps:

  • Don't add gelatin to hot liquid. Soften in 1/4 cup of the milk, then . . .Heat milk in a double boiler to a temperature just below boiling. Add the gelatin, sugar, and a pinch of salt, and stir until everything is dissolved.
  • Beat the egg yolks until they're frothy Blend a small amount of milk mixture into egg yolks (so they won't curdle). Gradually add the yolks to the milk mixture in the double boiler, stirring constantly. Continue cooking and stirring until custard begins to thicken.
  • Set aside and cool to room temperature. When cool, add yogurt and vanilla.
  • Refrigerate the mixture for a few hours or overnight.
  • When you're ready to freeze the yogurt, beat the egg whites until they form soft peaks. Gently fold them into the chilled yogurt mixture.
  • Add to your ice cream maker and freeze according to the manufacturer's directions.
