VANILLA CRUNCH SLICE
An easy slice to whip up to treat the kids. A great base recipe you can let your imagination play with.

Steps:
- Preheat oven 180 degrees C (360 degrees F). Line a 18cm x 28cm slice tin with baking paper.
- In a food processor place flour, sugar, vanilla paste, baking powder and cold butter. Blitz until the mixture resembles fine breadcrumbs.
- Place mixture in the lined slice tin, press the mixture down firmly with you fingers evenly into the tin. Place tin in the oven and bake for 30 minutes or until golden brown.
- Remove slice from the tin and cool on a cake rack. When slice is completely cold ice. Cut into desired size slices for serving. Store in an airtight container.
- Icing
- In a medium size mixing bowl cream butter and golden syrup. Then slowly mix in vanilla and icing sugar until completely combined. Ice your slice.

- Line an 8x8 pan with parchment paper & set aside.
- Combine the chocolate & coconut oil in a bowl & microwave on 30-second increments.
- Once it is completely melted & silky smooth, fold in your crisp cereal & stir until it is all coated.
- Spread it out in prepared pan & freeze for a couple of hours before cutting & serving.

- Heat the oven to 180C/160C fan/gas 4. Butter a 20cm square tin and line with baking parchment. Stir the melted butter and vanilla together in a bowl. Mix the caster sugar, flour and cocoa together in another bowl.
- Pour the bowl of wet ingredients into the dry and beat together, then add the egg and beat again until combined. Press into the prepared tin. Brush the top with water and sprinkle over the granulated sugar.
- Bake for 30-35 mins. Leave to cool slightly in the tin for 5 mins before slicing into squares and transferring to a wire rack to cool completely.

Steps:
- Beat first seven ingredients for 1 minute.
- Spread in greased 9x13 pan.
- Bake at 350° for 15 minutes or until spongy looking.
- Cover with miniature marshmallows.
- Return to oven for 3-5 minutes til marshmallows are melted.
- Cool.
- In microwaveable bowl, melt chocolate chips and peanut butter.
- Add rice krispies and spread on cooled bars.

- Preheat oven to 300°F (149°C). Line an 8 or 9-inch square baking pan with parchment paper with enough overhang on the sides to easily remove the bars from the pan. Set aside.
- Using a rubber spatula or wooden spoon, mix the honey, vanilla, almond meal, salt, and almond butter together until combined. Fold in the almonds, chopped dates, and sunflower seeds until combined.
- Transfer mixture to prepared baking pan and press very firmly into an even layer. You really want it packed in tight- as tight as possible. Bake for 20 minutes. Remove from the oven and allow to cool completely in the pan set on a wire rack for 1 hour, then transfer to the refrigerator to chill for 1 more hour. This helps firm up the bars which makes them stay compact. Remove bars from the pan using the overhang on the sides and cut into bars. Individually wrap each bar in plastic wrap or parchment. Store at room temperature for 1 week or in the refrigerator for up to 2 weeks. I find they get a little sticky at room temperature over a few days, so I prefer the refrigerator.
