CARAMEL VANILLA LATTE CAKE RECIPE

Caramel Vanilla Latte Cake Recipe image

This Caramel Vanilla Latte Cake recipe has the perfect balance of caramel, vanilla, and espresso!

Number Of Ingredients 19

1 small jar Caramel Sauce (*This isn't used until assembly of cake)
1 1/2 sticks (169g) unsalted butter, softened slightly
1 cup (200g) sugar
1/2 cup (108g) brown sugar (firmly pack the brown sugar into the cup)
4 large eggs, room temperature ( if cold, the eggs can be placed in a bowl with warm water for a few minutes)
2 3/4 cups (312g) cake flour **(if you do not have cake flour see substitution below)
1 teaspoon (6g) salt
2 1/2 teaspoons (12g) baking powder
1 cup (242g) milk
1 Tablespoon (4g) instant espresso powder (or instant coffee granules) dissolved in 1 Tablespoon hot water
2 teaspoons (8g) vanilla extract
1/4 cup (53g) vegetable oil
2 sticks (226g) unsalted butter, slightly softened
6 cups (690g) powdered sugar
2 teaspoons ( 4g ) instant espresso powder (or coffee granules) dissolved in 2 teaspoons hot water
2 teaspoons (8g) vanilla extract
1/4 cup + 2 tablespoons (80g) heavy cream, more if needed to reach desired spreading consistency
1/2 teaspoon (3g) salt to cut sweetness (optional) popcorn salt will dissolve more easily because of its fine grain
Cinnamon (optional) Add a sprinkle of cinnamon over the top of cake if desired.

Steps:

  • Preheat the oven to 350 degrees. Grease and flour three 8 inch round cake pans. Place a circle of parchment paper or wax paper in the bottom of each pan.
  • In a medium bowl, add the milk, coffee, vanilla, and vegetable oil. Set aside.
  • In the bowl of your mixer, cream the softened butter. Slowly add the sugar and beat at medium speed for 5 minutes until lightened in color and fluffy.
  • Add the eggs one at a time, mixing after each until the yellow streaks are blended in.
  • Add the dry ingredients alternately with the wet ingredients, beginning and ending with dry ingredients (3 additions of dry and 2 of wet). Do not over mix.
  • Bake at 350 degrees for 20 to 25 minutes. Check at 20 minutes. It is done when a toothpick inserted in the center comes out clean or with just a few crumbs attached. Let cool in pans 5 to 10 minutes then turn out.
  • The recipe makes 6 1/2 cups of batter
  • Works well for cupcakes, the cupcakes will have a very slight dome
  • In the bowl of your mixer, mix the softened butter until smooth. Slowly add the powdered sugar along with the cream, vanilla, salt and espresso.
  • Mix on medium speed for 3 minutes (longer if using a hand mixer) adding more liquid if needed to reach desired spreading consistency.
  • Reduce speed of mixer to low and mix 3 minutes or more until the buttercream is creamy and smooth.
  • Place the first cake layer onto your pedestal or cake base. Pipe a dam of buttercream around the layer. Spread a thin layer of caramel. Follow with the Vanilla Latte Buttercream filling. Add another cake layer & repeat.
  • Frost the cake as desired with Vanilla Latte Buttercream. Drizzle caramel around edges and top. (I used a piping bag with the end snipped away for the caramel drizzle.)
  • If you wish, you can apply Vanilla Buttercream stars around the top edge. (I did so with an Ateco 863)

VANILLA CARAMEL ESPRESSO FRAPPE CAKE

Vanilla Caramel Espresso Frappe Cake image

Very rich, very moist cake that tastes like a frozen vanilla caramel coffee drink in a cake. Made it for my mum's birthday picnic and it was a big hit (if a bit of a struggle to transport)!

Provided by Marya "Marta" Krause

Categories     Desserts     Cakes

Time 2h32m

Yield 16

Number Of Ingredients 16

4 teaspoons instant espresso powder (such as Starbucks® Via® Instant)
1 ¼ cups white sugar
½ cup unsalted butter, at room temperature
½ cup packed light brown sugar
3 large eggs
2 cups all-purpose flour
1 cup buttermilk
1 teaspoon baking soda
1 tablespoon white vinegar
1 ½ cups unsalted butter, at room temperature
2 tablespoons unsalted butter, at room temperature
3 cups confectioners' sugar, sifted
1 pinch salt
2 tablespoons heavy whipping cream
2 teaspoons vanilla extract
1 (12 ounce) jar caramel ice cream topping, divided

Steps:

  • Dissolve espresso powder in a bowl with 2 tablespoons hot water.
  • Preheat oven to 350 degrees F (175 degrees C). Grease two 8-inch cake pans.
  • Beat white sugar, 1/2 cup butter, and brown sugar together in a bowl using an electric mixer until light and fluffy, about 3 minutes. Add eggs 1 at a time, blending well after each. Reduce mixer speed to low. Beginning and ending with flour, alternate adding flour and buttermilk in 5 rounds. Blend 2 teaspoons dissolved espresso into the batter.
  • Dissolve baking soda in the vinegar in a bowl; add to the batter. Mix until incorporated. Divide the batter equally between the prepared pans.
  • Bake in the preheated oven until golden brown, 32 to 35 minutes. Cool in the pans on a wire rack for at least 20 minutes before removing from pans and cooling completely, about 40 minutes more.
  • Place 1 1/2 plus 2 tablespoons butter in the bowl of an stand mixer with a whisk attachment. Whip on medium-high speed until smooth. Add confectioners' sugar and mix on medium-low until combined. Add salt, whipping on medium-high until smooth. Mix in heavy cream and vanilla extract on low until incorporated. Whip on high until frosting is light and fluffy, scraping down the bowl as needed.
  • Divide frosting into 5 equal portions. Leave 2/5 (2 portions) plain. Add remaining 2 teaspoons espresso mixture to another 2/5 (2 portions); stir until well blended. Add 2 tablespoons of caramel topping to the remaining 1/5 (1 portion); stir until well blended.
  • Level both cakes and place 1 on a platter. Spread 3 tablespoons of the remaining caramel sauce over it and top with a layer of espresso frosting. Place other cake on top. Spread a thin layer of vanilla frosting on the cake to seal in any crumbs; chill for 30 minutes.
  • Frost cake again with a thin layer of espresso frosting. Pipe vanilla frosting around the top edge. Fill the center with caramel frosting. Drizzle generously with the remaining caramel sauce.

  • Add 1 heaping cup of crushed ice into a blender along with 1 1/2 cups of vanilla ice cream. You can use cubed ice if you don’t have crushed ice. But it will take longer to blend.
  • Then add 1 tablespoon granulated sugar and 1 tablespoon Ghirardelli white chocolate powder into a mug.
  • Then pour a double shot of fresh espresso right over the sugars and mix it well. You should get about 2 fluid oz of espresso from a double shot. If you don’t have an espresso machine at home, mix 2 teaspoons of espresso powder with 2 oz of boiling water instead.
  • Now pour the sweet espresso into the blender, then place the lid on and blend at high speed for about 20-30 seconds. Or until the ice is finely blended.

  • Starbucks Flat White Coffee. There’s nothing light about Starbucks Flat White Coffee except the color. The coffee used to make this delicious and energizing drink is ristretto, which is an espresso that has less water in it.
  • Starbucks Salted Caramel Mocha. If perfection is what you seek, don’t look any further because mocha combined with salted caramel is the real deal. This Starbucks drink is so easy to make and you will want to be brewing it up every single day.
  • Starbucks Peppermint Hot Chocolate. For some families, heading to Starbucks to enjoy Peppermint Hot Chocolate during the holiday season is a family tradition.
  • Starbucks Mocha Frappuccino. Who was the genius who decided to put chocolate and coffee together in a food or beverage? There’s no way to know because mocha has been around for a long time.
  • Starbucks Pink Drink. The legendary Starbucks Pink Drink is creamy, rich, and full of delicious berry flavor. It’s also beautiful, and yes, that does matter.
  • Starbucks Very Berry Hibiscus. This refreshing beverage from Starbucks is chock-full of real blackberries, so it is definitely “very berry.” Very Berry Hibiscus is made using fruit juice, coffee extract, and wonderful blackberries.
  • Starbucks Egg Bites. Eggs are a lot of things, but most people don’t usually describe them as cute. However, if anyone could make eggs cute, it was Starbucks.
  • Starbucks Lemon Loaf. If you’re a fan of anything lemon-flavored, you probably love this delicious lemon loaf from Starbucks. This cake is moist, buttery, and positively bursting with divine lemon flavor.
  • Starbucks Double Chocolate Brownies. Brownies are practically an American institution. Therefore, it stands to reason that another American institution (Starbucks) would create a brownie that is unlike any other brownie in the history of brownies.
  • Starbucks Vanilla Latte. The vanilla latte is one of the most popular drinks at Starbucks. However, for a drink that’s just coffee with some vanilla flavoring, it sure is pricey.

CARAMEL ESPRESSO FRAPPé RECIPE | VITAMIX
2020-08-26 This recipe is delicious. Instead of 1 cup whole milk and half a cup espresso, I used 1.5 cups oat milk and added three teaspoons of espresso powder - that seemed to increase the coffee flavor much more. But the flavor is still subtle! I also cut the caramel sauce in half and used chocolate protein powder instead of chocolate milk powder. Yum!
