VANILLA BEAN LEMONADE
Sweet-tart lemonade pairs perfectly with lush, creamy notes of vanilla. Pinkie swear!

Steps:
- Add the sugar and 1 cup water to a medium saucepan over medium heat. Slice the vanilla bean open with a paring knife and scrape the "caviar" (seeds) from the bean and add to the saucepan along with the remaining whole bean. Heat, stirring occasionally, until the mixture begins to steam and the sugar has dissolved, about 3-4 minutes.
- Remove from heat and set aside for 15 minutes.
- Meanwhile, add remaining 3 cups water and lemon juice to a pitcher. Set a fine-mesh sieve over the pitcher and pour in the vanilla/sugar mixture. Discard solids.
- Stir with a spoon and chill.
- Fill individual glasses with ice and pour lemonade over the ice. Add a straw if desired and serve.

- To serve, add the sparkling water to the pitcher and stir to combine. Pour the lemonade into individual glasses of crushed ice. Garnish with a sprig of fresh basil or mint and a lemon slice.

- Slice the vanilla bean in half and with the back of your knife scrape out all the seeds.
- Bring sugar, water, vanilla bean and pod, lemon peel and salt to boil on your stove.
- After sugar dissolves I gently simmer mine 5-10 minutes to really get the lemon peel flavor in there.
- Remove from heat, strain through a few layers of cheesecloth set over a large measuring cup and cool. You can speed up the process by placing the measuring cup in a large bowl surrounded by ice.
- Once the syrup has cooled; add it to a large pitcher along with the 8-10 cups of water and strained lemon juice. Garnish with a few lemon slices.
- Pour in a tall glass over ice and sip.

- Cover rosemary in saucepan with water. Bring to a boil, turn down heat to low and cover. Simmer for 20 minutes. Strain and discard rosemary. Stir in the sugar and lemon juice. Stir until sugar is dissolved.
- Add just enough water to the lemonade to bring it up to 2 3/4 C (720g). Fill the popsicle molds leaving about 1/8" (3-4 mm) head space at the top. Wipe the top dry, place the lid on top and insert popsicle sticks. Freeze over night or for at least 8 hours.
- To release the pops, I turn the mold on its side and run water over the the mold on both sides. I usually have to pry the lid off, wedging a fork in between the lid and mold, especially if I forgot to dry the top of the mold off before freezing. Gently wiggle the popsicle stick to remove the popsicle... be careful here, I've broken the stick several times.
- Store popsicles in a plastic freezer bag or covered container with parchment layered between the popsicles for up to one week.
