Is there anything nicer than a silky smooth homemade custard? This one is flavoured with gorgeous fresh vanilla and couldn't be easier to make. Awesome with a classic crumble.

1 vanilla pod
600 ml whole milk
4 large free-range egg yolks
2 tablespoons caster sugar
1 tablespoon cornflour

Steps:

  • Halve the vanilla pod and scrape out the seeds. Add both the pod and seeds to a pan on a medium-low heat, pour in the milk and bring just to the boil.
  • Remove from the heat and leave to cool slightly, then pick out the vanilla pod.
  • In a large mixing bowl, whisk the egg yolks with the sugar and cornflour until pale.
  • Gradually add the warm milk, a ladle at a time, whisking well before each addition.
  • Pour the mixture back into the pan and cook gently on a low heat for about 20 minutes or until thickened, whisking continuously. Delicious served with all kinds of crumble.

BASIC VANILLA CUSTARD

My mother's recipe--eat on its own or pour over canned peaches or guavas or, my fave, bread pudding. If you are really grossed out by the possibility of flecks of egg white in your custard, you can either pass it through a fine-mesh sieve or substitute four yolks for the two whole eggs.

2 cups milk
2 tablespoons cornstarch
1/3 cup sugar
2 eggs, lightly beaten
1 teaspoon vanilla

Steps:

  • Have eggs ready in a bowl, and set aside where it will be within reach.
  • Using a whisk, combine milk, sugar and cornstarch in a medium saucepan over medium heat on stovetop. Allow milk to scald (heat to the point when tiny bubbles form around edges of pan). Whisk occasionally to prevent cornstarch from clumping on bottom edges of pan.
  • Remove milk mixture from heat, preferably to a burner that's turned off.
  • Mix about 2 tablespoons of scalded milk mixture into eggs using whisk, then introduce eggs into milk mixture in a slow stream, whisking milk mixture constantly.
  • Immediately return pan to heat and whisk gently until custard thickens, another two or three minutes. Do not allow to boil. (If you find that you have egg white strands in custard, feel free to pass it through a fine-mesh sieve into a different bowl now.)
  • Remove pan from heat and stir in vanilla.

VANILLA PASTRY CREAM

The classic version of vanilla pudding. Quick and easy. If you wish, substitute 1 teaspoon of vanilla extract for the vanilla bean, adding it after the pastry cream is removed from heat.

2 cups milk
½ cup white sugar
1 vanilla bean, halved lengthwise
6 egg yolks
4 tablespoons all-purpose flour
4 tablespoons unsalted butter
1 pinch salt

Steps:

  • Place the milk, half the sugar and the vanilla bean in a saucepan over medium heat.
  • Combine the egg yolks and the remaining sugar in a bowl and whisk until light in color. Add in the flour and the salt, mix to combine.
  • When the milk just begins to boil, remove from heat and remove vanilla bean. Very slowly dribble the hot milk into the yolk mixture, stirring all the time. When about half of the milk has been added, place all of the yolk mixture into the saucepan over medium heat. Using a spatula or a whisk, mix the pastry cream as it heats, making sure to reach all of the corners of the pan when you stir. Bring the mixture to a boil. Let boil for about 1 minute, stirring constantly. The mixture will be thick.
  • Remove from heat and add the butter. Strain if you wish for a smoother cream. Place into a bowl and cover directly with plastic wrap to stop a skin from forming on the cream. Chill and use within a few days.

1 1/4 cups heavy cream
1 1/4 cups milk
1 vanilla bean, split, or 2 teaspoons pure vanilla extract
6 large egg yolks
1/2 cup sugar

Steps:

  • Heat oven to 300 degrees. Place an oven rack one-third of the way up from the bottom. Choose a small roasting pan large enough to hold four 6-ounce custard cups, and fill it with enough water to go halfway up the sides of cups. Place pan without cups in the oven. Meanwhile, combine cream, milk, and vanilla bean in a medium saucepan; bring to boil.
  • Whisk together the yolks and sugar in a medium bowl until light and fluffy. Slowly whisk in the hot milk until completely combined, then pour into custard cups, and place them in the pan of hot water. Bake on the lower shelf until the custard has set and is no longer liquid when lightly touched in the center, 30 to 40 minutes. Remove pan from the oven, remove custard cups from the water, and place on a wire rack to cool. Serve at room temperature or chilled.

VANILLA BEAN PASTRY CREAM

The key to a great pastry cream is using the minimum of starch. You need enough so the cream holds a shape, but not so much it interferes with the flavor. This version uses cornstarch; just be careful not to keep cooking it once it has thickened. This is perfect in Napoleons, pies, tarts, or cakes.

1 large whole egg
2 large egg yolks
½ cup white sugar
¼ cup cornstarch
1 teaspoon kosher salt
2 cups whole milk
1 vanilla bean
4 tablespoons cold butter, cubed

Steps:

  • Place whole egg and 2 egg yolks into a mixing bowl. Add sugar, corn starch, and salt. Whisk together completely until mixture turns from yellow to a very page creamy color and is slightly thickened, 5 to 8 minutes.
  • Place milk in a saucepan. Split vanilla bean lengthwise. Scrape the cut side with a paring knife to extract the seeds (paste). Add the seeds to the milk. Heat over medium-high heat, stirring occasionally, until milk just barely starts to simmer and a few small bubbles appear on the surface. Remove from heat. Whisk hot milk into egg mixture, starting with a small splash then incorporating the rest. Pour mixture back into saucepan.
  • Place pan over medium-low heat and continue to whisk until mixture begin to thicken, 3 to 5 minutes. Remove from heat and let it cool 5 minutes. Add chunks of butter and whisk until butter melts into the warm milk mixture. Pass mixture through a fine mesh strainer to remove and chunks of cooked egg or vanilla seeds. Cover surface with plastic to keep it from discoloring; refrigerate until thoroughly chilled 2 to 3 hours.

VANILLA BEAN FROZEN CUSTARD

If you don't have a vanilla bean on hand, don't let that deter you from making a batch of this frozen custard. You can omit the vanilla bean and still make delicious vanilla custard thanks to the vanilla extract. Sure, the resulting custard will be missing the pretty vanilla bean flecks and have a slightly less pronounced vanilla flavor, but it will still taste amazing. I like to use our duck's eggs in this recipe as they have enormous, rich yolks that impart a beautiful pale yellow color to the finished custard. A version made with fresh chicken eggs is equally delicious and no less beautiful. I reserve the whites and scramble them as a special treat for Penny Lane.

6 large egg yolks
1 ½ cups half and half
1 cup granulated sugar
1 vanilla bean (, split)
1 pinch salt
¾ cup heavy cream
¾ cup whipping cream
1 Tablespoon vanilla extract

Steps:

  • Separate the eggs, placing the yolks in a medium bowl. Whisk them briskly until they thicken slightly.
  • In a medium saucepan, heat the half and half, sugar, vanilla bean, and salt over medium-low heat, stirring frequently to encourage the sugar to fully dissolve into the liquid. Remove the pan from the heat once the liquid is nearly ready to come to a simmer.
  • Temper the egg yolks by slowly drizzling the warm half and half mixture into the yolks, whisking constantly to prevent the eggs from scrambling. Whisk briskly to combine before transferring the mixture back to the saucepan.
  • Place the saucepan over medium-low heat. Whisk as the mixture warms to keep the custard from scorching as it cooks. The custard will thicken as it warms, combing to a pudding like consistency when finished. The properly thickened custard will coat the back of a spoon.
  • Remove the pan from the heat. Place a fine mesh strainer or colander lined with cheesecloth over a large bowl. Transfer the warm custard to the strainer and allow it to pass through to the bowl beneath. This will ensure that the custard is completely smooth and does not contain any undissolved grains of sugar or cooked egg. Continue until all of the custard has been strained.
  • Add the heavy cream, whipping cream, and vanilla extract to the bowl. Whisk to combine all of the ingredients. Chill the custard base until it is completely cooled. Attempting to churn ice cream or custard before the mixture is completely chilled will result in a custard with a grainy texture. If you can, allow the custard to cool overnight in the refrigerator. You can also place the bowl of custard inside a larger bowl filled with ice water to hasten the cooling by several hours.
  • After the base has cooled completely, process it in your ice cream freezer according to the manufacturer's directions. Remove the frozen custard from the machine and place it in a freezer safe container. Freeze until firm and enjoy every single bite!

Steps:

  • With a knife halve vanilla beans lengthwise. Scrape seeds into a large heavy saucepan and stir in pods, cream, milk, and sugar. Bring mixture just to a boil, stirring occasionally, and remove pan from heat.
  • In a large bowl lightly beat eggs. Add hot cream mixture to eggs in a slow stream, whisking, and pour into pan. Cook custard over moderately low heat, stirring constantly, until a thermometer registers 170°F. (Do not let boil.) Pour custard through a sieve into a clean bowl and cool. Chill custard, its surface covered with wax paper, at least 3 hours, or until cold, and up to 1 day.
  • Freeze custard in an ice-cream maker, in 2 batches if necessary. Transfer ice cream to an airtight container and put in freezer to harden. Ice cream may be made 1 week ahead.

RASPBERRY & VANILLA BEAN CREAM TARTS

Delicious Raspberry & Vanilla Cream Tarts made with a shortbread crust, vanilla cream filling and fresh raspberries on top! Please note: It's best to make the tarts in this order: Crust first, then the cream.

1 1/4 cup flour
1/3 cup sugar
pinch of salt
1/2 cup butter (cut into chunks)
1 egg yolk
6 inch mini 3 tart pans (or 1 large tart pan)
1/3 cup sugar
2 tbsp cornstarch
4 egg yolks
1 1/3 cups whole milk
1/2 vanilla bean (split down the centre to expose the seeds)
1/4 - 1/2 tsp vanilla
raspberries
icing sugar

Steps:

  • Preheat your oven to 400 degrees.
  • In a food processor, process the flour, sugar and salt for about 10 seconds.
  • Then add the chunks of butter and process until the mixture looks like coarse crumbs.
  • Add the egg yolk and process again until the egg is thoroughly combined.
  • If you are making mini tarts (tartlets), separate the mixture into 6 - 3 inch tart pans, and press the dough into the molds, making the sides slightly higher than the centre. Bake for 12-15 minutes, making sure to prick them with a fork several times, as the dough tends to puff up. Watch them carefully, as they go from not done to overcooked very quickly!
  • If you are making one large tart, press the mixture into a 10 inch tart pan (making the sides slightly higher than the centre) and bake for about 15-18 minutes. Again make sure to prick the tart with a fork several times while baking, and watch it carefully.
  • Using a mixer, beat together the sugar, cornstarch and egg yolks until the mixture is thick and pale yellow.
  • In a small saucepan combine the milk and the vanilla bean, bring to a simmer. Then remove the vanilla bean.
  • Pour about half of the milk mixture into the egg mixture, and stir.
  • Then return this milk/egg mixture to the remaining milk mixture in the saucepan, and continue to cook, whisking constantly, until the custard is thick and slightly bubbly. Make sure to whisk constantly so that the mixture doesn't burn to the bottom of the pan.
  • Remove from heat and stir in the vanilla.
  • Cover the custard with a sheet of parchment paper to prevent a skin from forming, then it set aside to cool.
  • Once the tart shells and custard have cooled, add about a 1/4 cup of the custard to each shell.
  • Top with fresh raspberries, and a dusting of icing sugar.
  • Enjoy!

  • Combine most of the milk, butter, sugar and salt. Add 1¼ cups of the milk to a medium-sized sauce pot. Then add the butter, sugar and salt.
  • Prepare the vanilla. Remove the beans from the vanilla pod by first cutting the pod in half horizontally. Then use a paring knife to vertically slice down the center of each half, but not cutting all the way through. With the back of the knife, scrape the vanilla beans into the saucepan and add the emptied pod as well. Set aside.
  • Make a slurry. In a small bowl, add the egg to the remaining ¼ cup of milk and the cornstarch. Use a small whisk to blend it until it's smooth. (This is called a slurry.)
  • Cook and temper. Place the saucepan with the milk-butter mixture over medium heat until the butter has melted and the sugar has dissolved. Stir, reduce the heat to low and use a ladle to add about a cup or so of the hot milk mixture to the slurry and immediately blend with the whisk. (This is called tempering.) Now you can add this to the remaining milk mixture in the saucepan and whisking constantly, bring it to a strong simmer. Once you see bubbles and the mixture has slightly thickened, it's done. It should coat the back of a spoon. (It thickens even more as it's cooling.) Remove it from the stove.
